BLACKBERRY AND ONION RELISH ( USED WITH TRI-TIP RECIPE #RZ.16463

Blackberry and Onion Relish ( Used With Tri-Tip Recipe #rz.16463 image

This is good with pork and beef. For very tart berries use less vinegar and/or more sugar. If you make relish ahead of time and chill, do not reheat or the texture of the berries will be lost

Provided by hiwayman

Categories     Berries

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 pint fresh blackberries
1 tablespoon oil
1/2 medium yellow onion, chopped
1/2 teaspoon minced garlic
1 tablespoon champagne vinegar (to taste)
1 tablespoon red wine
1/2 cup beef broth
kosher salt
1 pinch fresh ground black pepper (generous pinch)
1 pinch brown sugar (generous pinch)
1 pinch of chopped thyme (to taste)

Steps:

  • Cut the berries in half, reserving a few whole ones for garnish. Heat the oil ina saucepan; add the onion and saute over medium to medium-low heat for 7 minutes, or until soft and slightly browned. Add the garlic and cook briefly.
  • Add the vinegar and wine, simmering until almost dry. Add the beef broth, and simmer until almost dry. Stir in the halved beries, then remove from the heat.
  • Season to taste with salt, pepper, brown sugar and thyme. You want just enough sugar to balance the tartness of the berries. The residual heat from the pan and onions will soften the berries.
  • Garnish with the whole berries. Serve warm or at room temperature or refrigerate if not suing soon. Let come to room temperature before serving.

SANTA MARIA GRILLED TRI-TIP BEEF

Santa Maria Grilled Tri-Tip Beef image

The town of Santa Maria, California, is home to one of America's most delicious barbecue specialties: black-on-the-outside, pink-on-the-inside, grilled beef tri-tip steak. The tri-tip is cut from the bottom sirloin, and if cooked properly produces a very flavorful, extremely juicy piece of beef.

Provided by Chef John

Categories     Main Dish Recipes

Time 5h15m

Yield 6

Number Of Ingredients 12

2 teaspoons salt
2 teaspoons freshly ground black pepper
2 teaspoons garlic powder
1 ½ teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried rosemary
¼ teaspoon cayenne pepper
1 (2 1/2 pound) beef tri-tip roast
⅓ cup red wine vinegar
⅓ cup vegetable oil
4 cloves crushed garlic
½ teaspoon Dijon mustard

Steps:

  • Stir salt, black pepper, garlic powder, paprika, onion powder, rosemary, and cayenne pepper together in a bowl. Place beef in a glass baking dish and coat beef on all sides with spice mixture. Cover the dish with plastic wrap and refrigerate for 4 hours.
  • Combine vinegar, vegetable oil, crushed garlic, and Dijon mustard together in a sealable container. Cover the container and shake to blend ingredients.
  • Remove beef from refrigerator, uncover, and let sit at room temperature for 30 minutes.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Place meat on preheated grill and brush with garlic-vinegar mixture. Cook meat for 4 minutes, flip, and baste. Repeat the flip and baste process every 4 minutes until beef starts to firm and is reddish-pink and juicy in the center, 25 to 30 minutes total. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Let rest for at least 10 minutes before slicing.

EASY GRILLED TRI-TIP

Easy Grilled Tri-Tip image

This is a quick and easy way to marinate tri-tip. This really brings out the flavor of the beef. The cooking time I noted is passive cooking time and includes the time it takes to marinate the meat.

Provided by Busy Lindsay

Categories     Meat

Time 4h28m

Yield 4-6 serving(s)

Number Of Ingredients 6

3 1/2-4 lbs tri-tip roast
1/4 cup low sodium soy sauce
2 tablespoons light olive oil
2 tablespoons water
1 -2 tablespoon McCormick's Montreal Brand steak seasoning (I use the Low Sodium kind)
1/2 teaspoon garlic powder (optional)

Steps:

  • Mix all ingredients (except meat) to a small bowl and stir.
  • Transfer all ingredients (including meat) to large plastic bag.
  • Seal bag, making sure to get most of the air out.
  • Massage marinade into meat through the bag. Let marinate in the refrigerator for 4 - 8 hours, don't marinate overnight as it makes the meat too salty.
  • Grill tri tip for about 15 - 20 minutes on each side or until desired doneness.

BBQ TRI-TIP ROAST WITH BLACKBERRY WINE MARINADE AND VEGGIES

BBQ Tri-Tip Roast With Blackberry Wine Marinade and Veggies image

Great for a summer BBQ with the sweet warm hints of summer blackberries this is one of my family's favorites.

Provided by Leahferne

Categories     One Dish Meal

Time 6h

Yield 10 serving(s)

Number Of Ingredients 14

2 lbs tri-tip roast
2 cups beef broth
2 tablespoons olive oil
1/2 cup blackberry wine
3 tablespoons garlic salt
3 tablespoons pepper
3 tablespoons beef roast seasoning
1 tablespoon rosemary
1 onion, wedges
7 carrots, whole
3 potatoes, large and sliced
1 red bell pepper
6 mushrooms, quartered
5 garlic cloves, crushed

Steps:

  • With a fork scrape the surface of the meat on all sides.
  • Work 1 tbsp of olive oil into the meat on each side then sprinkle generously the garlic salt, pepper and roast seasoning over the roast. Set a side.
  • In a large casserole dish or oven/marinating bad combine the beef broth, blackberry wine, rosemary and all the veggies.
  • Place the roast into the marinade and veggies and allow to sit at least 4 hours. You can prepare this a day before and allow the roast to marinate in the fridge over night.
  • Get your coals ready and I like them to be gray before I put the meat on.
  • On a large sheet of aluminum place all the veggies in the center. Fold up the edges of the aluminum to create a pocket. Make sure your creases are folded tightly so none of the juices can leek out.
  • Put the veggies on the grill and flip every 15 minutes.
  • After you have flipped the veggies twice it is time to put the meat on. Grill the meat till the all the sides are dappled with charring.
  • Continue to cook the veggies for another 15-30 minutes while the roast is cooking. All should be done around the same time.
  • Once removed allow the roast to sit for 10 minutes. Carve and serve hot with the unwrapped veggies. Enjoy!

THE BEST BEEF TRI-TIP

The Best Beef Tri-Tip image

I received a food wish for roast beef recently, which can be done with many different cuts. I ended up deciding on beef tri-tip, since it's affordable, flavorful, great for parties, and, using this low-temp roasting technique, nearly fool-proof. No marinating, no searing, no nothing; just rub on some salt and spices and pop it into the oven until it reaches the doneness you want. Plate it up with a Romano bean salad or enjoy as a roast beef sandwich!

Time 2h

Yield 8

Number Of Ingredients 9

2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
1 teaspoon dried rosemary
1 tablespoon chopped fresh rosemary leaves
1 (2 1/2 pound) beef tri-tip roast
½ cup beef broth

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C).
  • Mix salt, pepper, paprika, garlic powder, cayenne, dried rosemary, and fresh rosemary together in a small bowl.
  • Place tri-tip in a baking pan. Season generously with the spice rub until both sides are completely covered.
  • Bake in the preheated oven until an instant-read thermometer inserted into the thickest part reads 130 degrees F (54 degrees C) for medium-rare, or until desired doneness, 1 1/2 to 2 hours. Flip meat over halfway.
  • Cover pan with aluminum foil and let meat rest for 20 minutes. Remove tri-tip to a cutting board and cut into 2 pieces along where the grain changes direction. Slice meat across the grain and transfer to serving plates.
  • Mix beef broth in with the pan drippings and drizzle over the slices.
