PENNE WITH ASPARAGUS AND CHERRY TOMATOES (SPRING)

8 ounces penne pasta
3 tablespoons olive oil
2 garlic cloves, minced
1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces
Salt and freshly ground black pepper
2 cups (about 9 ounces) cherry tomatoes
1 cup shelled fresh peas
1/2 cup low-sodium chicken stock
1 cup grated Parmesan
2 tablespoons chopped fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
  • In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.
  • Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

Also a delicious preparation for green beans in place of the asparagus.

1 pound thin asparagus spears, trimmed and cut in half
1 tablespoon extra-virgin olive oil
2 teaspoons minced garlic
1 large tomato, seeded and chopped
1 pinch salt and pepper to taste

Steps:

  • Place the asparagus in a large skillet and fill with about 1 inch of water. Cover the pan and set over high heat. When the water comes to a boil, cook for 2 minutes or until the asparagus is bright green and almost tender.
  • In a separate skillet, heat the oil over medium heat. Add the garlic; cook and stir for 1 minute. Add the tomato to the skillet and cook for about 1 minute or until heated through. Season with salt and pepper. Add asparagus to the pan and cook for about 2 minutes, until hot.

2 tablespoons fresh basil, chopped
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
1 lb fresh asparagus
1/3 cup chopped tomato

Steps:

  • Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.
  • Cut ends off asparagus.
  • Cook asparagus in a large pot of simmering water for 4 minutes.
  • Drain and put in an ice bath.
  • Remove asparagus to a platter and top with chopped tomato.
  • Pour vinaigrette on asparagus.
  • Chill until ready to serve.

2 pounds fresh asparagus, trimmed and cut into 2 1/2 inch pieces
1 ½ cups balsamic vinaigrette salad dressing
2 teaspoons grated lemon zest
¼ cup chopped fresh parsley
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Blanch asparagus just until tender, about 1 minute. Plunge into a bowl of cold water to cool. Drain asparagus and place in a large resealable plastic bag. Pour in vinaigrette and seal bag. Refrigerate at least 3 hours, turning bag occasionally.
  • Just before serving, drain asparagus, reserving vinaigrette. Arrange on a serving platter and sprinkle with lemon zest, parsley, salt, and pepper. Serve reserved vinaigrette in a small dish on the side.

1 pound large asparagus spears, trimmed
1/4 cup plus 2 tablespoons olive oil
1/4 cup red wine vinegar
1 small tomato, finely chopped
1/4 green bell pepper, finely chopped
1 green onion, finely chopped
1 tablespoon chopped parsley
1 hard-boiled egg, finely chopped

Steps:

  • Cook asparagus in large pot of boiling salted water until just tender, about 5 minutes. Drain. Refresh under cold running water and drain thoroughly. Arrange asparagus on large platter. Cover and refrigerate until cold.
  • Whisk oil and vinegar to blend in small bowl. Add tomato, bell pepper, green onion and parsley. Season with salt and pepper. (Can be prepared 3 hours ahead. Let stand at room temperature.)
  • Spoon half of vinaigrette over asparagus. Garnish with egg. Pass remaining dressing separately.

3 1/2 pounds asparagus, trimmed
1 1/2 teaspoons dry mustard
Freshly ground pepper to taste
2 tablespoons tarragon red-wine vinegar
2/3 cup olive oil
1 tablespoon chopped fresh tarragon
1 head purple flowering kale
1/2 pint yellow pear tomatoes

Steps:

  • In each of two skillets, bring one and one-half inches of salted water to a boil. Add the asparagus and cook, covered, for three to five minutes, according to doneness desired.
  • Drain the asparagus and refresh it in ice water to stop the cooking. Drain well and place it on a flat dish.
  • Combine the mustard, salt, pepper and vinegar in a small mixing bowl. Whisk in the olive oil until well combined. Stir in the tarragon.
  • Pour the mixture over the asparagus, toss to coat and marinate for one-half hour or until ready to serve.
  • Arrange the flowering kale leaves on a serving platter. Place the asparagus on top and garnish with the tomatoes. Pour any remaining marinade over it.

1/2 cup olive oil
1 pound medium pasta shells
1/2 pound shelled fresh or frozen peas (about 1 1/2 cups), boiled until tender and drained
2 pints red or yellow pear tomatoes or cherry tomatoes or a combination, halved
1/2 cup shredded fresh basil leaves

Steps:

  • In a large bowl whisk together the vinegar, the water, the salt, the sugar, the tarragon, the garlic paste, and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. In a kettle of salted boiling water cook the pasta until it is tender, in a colander rinse it well, and drain it. In the bowl toss the pasta with the dressing, add the peas, the tomatoes, and the basil, and toss the salad well.

Steps:

  • In a large 12" skillet, bring water to boil.

A lovely way to use up those tomatoes! From the Ball Blue Book of Canning! Prep time includes marinating time.

Number Of Ingredients 6

1 1/2 quarts green tomatoes or 1 1/2 quarts tomatoes (about 2 pounds)
1 tablespoon mixed pickling spices
1/2 inch gingerroot
4 cups sugar
1 cup thinly sliced lemon (about 2 medium)
3/4 cup water

Steps:

  • Wash and drain tomatoes.
  • Do not core tomatoes.
  • Tie spices and gingerroot in a spice bag.
  • Combine spice bag, sugar, lemon and water in a large saucepot.
  • Simmer 15 minutes.
  • Add tomatoes; cook gently until tomatoes become transparent, stirring frequently to prevent sticking.
  • Remove from heat.
  • Cover and let stand 12 to 18 hours in a cool place.
  • Remove spice bag.
  • Remove tomatoes and lemon from syrup.
  • Boil syrup 2 to 3 minutes or longer to thicken.
  • Return tomatoes and lemon to syrup; boil 1 minute.
  • Remove from heat.
  • Skim foam if necessary.
  • Ladle hot preserves into hot jars, leaving 1/4 inch headspace.
  • Adjust two-piece caps.
  • Process 20 minutes in a boiling-water canner.
  • Yield: about 6 half-pints.
