CHICKEN CAESAR PASTA SALAD



Chicken Caesar Pasta Salad image

Toss grilled chicken, romaine and fresh tomatoes with pasta in a creamy Caesar dressing.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup Parmesan
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces penne pasta
One 8-ounce boneless, skinless chicken breast
1 1/2 teaspoons olive oil, plus more for oiling the grill grates
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
  • Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

7 ounces uncooked dry penne pasta (2 cups)
2 cups chopped cooked chicken
3/4 cup creamy caesar salad dressing
1/2 cup reduced-sodium chicken broth
1/3 cup chopped green onion
1/4 cup finely chopped red pepper
6 ounces mozzarella cheese, shredded (1 1/2 cups)
1 1/2 cups caesar-flavor croutons
1/4 cup grated parmesan cheese

Steps:

  • Heat oven to 350°F.
  • Cook pasta according to package directions.
  • Drain.
  • Meanwhile, combine all remaining ingredients except croutons and Parmesan cheese in large bowl.
  • Add cooked pasta; stir to combine.
  • Spoon pasta mixture into ungreased 2-quart round casserole.
  • Top with croutons and Parmesan cheese.
  • Bake for 20 to 25 minutes or until heated through and croutons are golden brown.

1 cup caesar salad dressing
8 ounces sliced fresh mushrooms
1 cup finely shredded parmesan cheese
1/2 cup sliced red bell pepper
1/2 cup sliced pitted black olives
1/2 cup sliced green onion

Steps:

  • Cook pasta according to package directions and drain.
  • Place pasta in a large bowl and pour salad dressing over warm pasta and toss to coat.
  • Add mushrooms, 3/4 cup of the Parmesan cheese, bell pepper, olives and green onion; toss to combine.
  • Serve immediately, topping with remaining 1/4 cup cheese or cover and refrigerate for several hours.

I use the dressing from my recipe#116849 but you may of coarse your own favorite dressing, fresh grated parmesan may be substituted for the feta if desired, the croutons are optional you may add in or omit --- the amounts listed are really only a guideline I don't even bother to measure when I prepare this salad so adjust all amounts to suit taste --- if you are not serving immediately then add in the lettuce just before serving :)

2 -3 cups cooked chicken, finely diced (use white, dark or mixed)
2 cups small cooked rotini (rinsed under cold water and drained well, can use small penne pasta or similar)
1 large romaine lettuce hearts, torn (use the inside heart of the lettuce)
1 cup small ripe cherry tomatoes
1/2 small red onion, sliced (optional)
1/2-1 teaspoon fresh ground black pepper
salt (to taste) (optional)
1/3-1/2 cup caesar salad dressing (see Kittencal's Famous Caesar Salad)
1/2 cup crumbled feta cheese (or to taste, or use 1/4 cup freshly grated Parmesan cheese)
crouton (to taste) (optional)

Steps:

  • In a large bowl place cooked chicken, pasta, lettuce, cherry tomatoes and sliced onion; mix to combine.
  • Pour the dressing over and toss to combine.
  • Season with black pepper.
  • Sprinkle the feta cheese or Parmesan cheese on top of the salad (or you may mix into the salad).
  • Serve immediately.

I love Caesar Salads and combined with the chicken and pasta it makes for a great dish to take to a potluck or just whenever you want something light. *You could substitute 1 (8 ounce) package of imitation crabmeat for the chicken to make it a Seafood version of the salad. Serve on a bed of romaine lettuce if desired.

10 ounces uncooked penne pasta
2 cups chopped cooked chicken
1/2 cup diced green bell pepper
2 hard-boiled eggs, chopped
1/4 cup diced red onion

1 (8 ounce) bottle creamy reduced-fat caesar salad dressing (of your choice)

Steps:

  • Cook pasta following directions on package, drain then rinse with cold water to make sure pasta doesn't stick together.
