10 cups diced cooked chicken
10 cups chopped celery
2 cups slivered almonds
2 bunches green onions with tops, sliced
2 cans (4 ounces each) chopped green chilies
2 cans (2-1/4 ounces each) sliced ripe olives, drained
5 cups shredded cheddar cheese, divided
2 cups mayonnaise
2 cups sour cream
5 cups crushed potato chips

Steps:

  • Preheat oven to 350°. In a very large bowl, combine the first six ingredients; add 2 cups cheese. In a small bowl, combine mayonnaise and sour cream; add to chicken mixture and toss to coat. , Transfer to two greased 3-qt. baking dishes. Sprinkle with chips and remaining cheese. Bake, uncovered, 20-25 minutes or until heated through.

Optional ingredients listed under recipe instructions (peas, mushrooms, carrots). If adding optional vegetables, you may need to increase the amount of soup and sour cream. 8 cups cooked chicken, cubed
2 (10 3/4 ounce) cans cream of chicken soup
8 ounces sour cream
1 cup butter-flavored cracker crumbs (about 25 crackers)
2 tablespoons butter, melted
1 teaspoon celery seed

Steps:

  • Combine chicken, soup, and sour cream.
  • Spread into greased 13 x 9 inch baking dish.
  • Combine butter, crumbs, and celery seeds, then sprinkle over chicken mixture.
  • Bake at 350 degrees for 30 to 35 minutes or until bubbly.
  • OPTIONAL STEP: Add frozen peas, diced cooked carrots, and mushrooms (cooked or canned) to chicken mixture before baking.
  • If adding extras, you may need to increase the amount of soup by 1/2 to 1 can; mix vegetables in, and if it looks dry, add 1/2 can of soup-mix well, and if it still looks dry, add some sour cream or the rest of the soup.

3 cups celery, chopped
1 bunch green onion, with tops, sliced
4 ounces chopped green chilies
5 3/4 ounces pitted ripe olives, drained and sliced
1 cup slivered almonds
2 1/2 cups cheddar cheese, shredded
1 cup mayonnaise
1 cup sour cream
2 1/2 cups crushed potato chips

Steps:

  • Combine the first six ingredients.
  • Add 2 cups of the cheese.
  • Mix mayonnaise and sour cream; add to chicken mixture and toss.
  • Spoon into greased 9x13 inch baking dish.Sprinkle with chips and top with remaining cheese.
  • Bake uncovered at 350 degrees for 20 to 25 minutes or until hot.

1 pound spaghetti, broken into pieces
3 (10.75 ounce) cans condensed cream of mushroom soup
12 ounces shredded Cheddar cheese
6 cups shredded boiled chicken breast meat
1 pound sauteed mushrooms
1 (4 ounce) jar sliced pimento peppers, drained
2 cups reserved chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of salted water to a boil. Add uncooked spaghetti (broken into thirds) to the pot and cook for 8 to 10 minutes or until al dente. Drain and set aside.
  • In a large saucepan, heat soup over low heat. Add shredded cheese (reserve some for topping) and stir together. Then add the cooked shredded chicken, mushrooms, pimento peppers and cooked spaghetti and stir all together. Add enough of the reserved broth to make it 'sloppy' and mix all together.
  • Pour mixture into a 9x13 inch baking dish. Sprinkle reserved shredded cheese on top and bake in the preheated oven for 25 to 35 minutes or until bubbly.

1 (14 ounce) can chow mein-style vegetables
1 (16 ounce) can french-style green beans
1 (16 ounce) can peas
1 (14 1/2 ounce) can cut asparagus
1 (2 ounce) jar pimentos
1 (8 ounce) jar sliced water chestnuts
1 (2 ounce) package sliced almonds
3 hard-boiled eggs
2 -3 cloves fresh minced garlic
8 ounces cheddar cheese, grated (or more if desired)
2 (10 1/2 ounce) cans cream of mushroom soup, undiluted
1 1/2 cups crushed saltine crackers (or 1 stack crushed)
1/2 cup butter or 1/2 cup margarine, melted
1 (3 -6 ounce) can French fried onion rings

Steps:

  • Set oven to 350 degrees.
  • Grease a 9" x 13" baking pan.
  • Drain veggies well.
  • In a bowl, lightly mix the veggies with almonds, eggs, seasonings, cheese and soup.
  • Transfer the mixture to prepared baking pan.
  • Combine the crushed crackers with melted butter; sprinkle over the vegetable/casserole mixture.
  • Bake for 25-30 minutes, or until bubbly.
  • Top with onion rings the last 20 minutes of baking time.
