Napa Cabbage Salad With a Crunch image

A nice refreshing salad for the summer. I do not care for coleslaw but this salad is wonderful. It does not have the heavy mayo base. The dressing also works wonderfully on a tossed green salad or steamed veggies.

2 heads napa cabbage, thinly sliced
2 tablespoons canola oil
2 (3 ounce) packages ramen noodles, crunched
1 tablespoon sesame seeds
3 -4 garlic cloves, crushed
1/2 cup sunkist almond accents sliced almonds (flavor of your choice)
2 tablespoons soy sauce
1/4 cup cider vinegar
1/2 cup sugar
1/4 cup canola oil
1/4 teaspoon pepper
1/8 teaspoon ground ginger

Steps:

  • In a small saucepan, combine the soy sauce, cider vinegar, sugar, canola oil, pepper and ground ginger and simmer for 1 minute.
  • Remove from heat and refrigerate.
  • In a small saute pan, heat oil over low heat and add noodles, sesame seeds and garlic; stirring frequently, cook until golden brown.
  • In a large salad bowl, toss the noodle mixture and sliced cabbage together.
  • Add dressing and sprinkle with the Almond Accents.

Napa cabbage, with its long crinkled leaves, is more delicate in flavor than green or red cabbage.

1 small clove garlic, minced
Zest and juice of 1 lime
2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup hot chili oil
Salt
3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
1/3 cup peeled, very thinly sliced, 1/2-by-2-inch-pieces daikon (about 2 ounces)
1/4 cup trimmed, very thinly sliced snow peas (about 3 ounces)
1/4 bunch chives, snipped into 2-inch lengths
juice of 1 lime

Steps:

  • In a small bowl, whisk together the garlic, zest and juice of the lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.
  • In a medium bowl, toss together the cabbage, pepper slices, scallions, daikon, snow peas, and chives. Pour the dressing over the slaw, toss to combine, and serve.

1 medium daikon radish, about 4 oz. peeled and thinly sliced lengthtwise into 18 pieces
3 scallions, white part only, halved lenghtwise, bottom left intact
3 tablespoons mirin
2 tablespoons rice wine vinegar
2 tablespoons saffower oil
1/4 teaspoon sesame oil
coarse salt
1 small head napa cabbage, cored and finely shredded, about 6 cups
1 fresh lotus root, rinsed, and thinly sliced crosswise into about 18 pieces
8 ounces silken tofu, drained and cut into six 2-inch cubes

Steps:

  • Place daikon and scallions in a large bowl filled with ice and water.
  • Whisk together mirin, vinegar, oils, and a generous pinch of salt.
  • Place cabbage in a large bowl, and toss with half of the dressing. Divide among 6 plates. Top with 3 slices each daikon and lotus root, a tofu cube, and a fanned out scallion half.
  • Drizzle the remaining dressing.

1 lime, juiced
3 tablespoons rice vinegar
2 tablespoons Asian chili oil
1 tablespoon mayonnaise
1 tablespoon soy sauce
3 cups finely shredded napa cabbage
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1/2 cup thinly sliced snow peas
3 scallions, thinly sliced
Salt and freshly ground black pepper

Steps:

  • Whisk together the lime juice, vinegar, chili oil, mayonnaise and soy sauce in a large bowl. Add the cabbage, peppers, snow peas and scallions and toss to combine. Season with salt and pepper, to taste. Refrigerate for at least 30 minutes to allow flavors to meld.

This is a yummy, crunchy cabbage salad with toasted ramen noodles and almond slivers. The bowl is always licked clean at potlucks!

1 head napa cabbage
1 bunch minced green onions
⅓ cup butter
1 (3 ounce) package ramen noodles, broken
2 tablespoons sesame seeds
1 cup slivered almonds
¼ cup cider vinegar
¾ cup vegetable oil
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
  • Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
  • Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.

1/3 cup white wine vinegar
2 teaspoons minced fresh rosemary leaves
1 1/2 teaspoons fresh lemon juice (about 1/2 a large lemon)
3 large cloves garlic, smashed, peeled and minced
Zest of 1 large lemon
1 cup extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
12 ounces green beans, trimmed and halved crosswise
6 medium carrots, peeled and sliced diagonally into 1/3-inch-thick ovals
One 1 3/4-pound cauliflower, cut into florets (about 4 cups)
1/2 cup dry white wine
1 1/4 pounds cod fillets, cut into 1 1/2-inch cubes
1 1/4 pounds small clams, such as Manilla, scrubbed
1 1/4 pounds extra-large shrimp, peeled and deveined
Twelve 1/3-inch-thick slices country-style bread (such as Pan Rustique), toasted
3 cooked beets, cut into 6 to 8 wedges
Lemon wedges

Steps:

  • For the dressing: Whisk the vinegar, rosemary, lemon juice, garlic and lemon zest in a medium bowl until blended. Gradually whisk in the oil, salt and pepper.
  • For the vegetables: Add enough cold water to a heavy large pot to reach a depth of 2 inches. Bring the water to a boil over medium-high heat and add the salt. Add the green beans, carrots and cauliflower. Cook until crisp-tender, 5 minutes. Using a slotted spoon, remove the vegetables and place in a bowl to cool.
  • For the seafood: Add the wine to the vegetable cooking water. Adjust the heat so the liquid is barely simmering. Add the cod and simmer until cooked through, about 5 minutes. Using a slotted spoon, remove the cod and set aside. Add the clams and shrimp to the pot. Cover and cook until all the clams have opened and the shrimp are cooked through and opaque in the center, 4 to 5 minutes. Discard any unopened clams. Remove the pot from the heat.
  • To assemble the salad: Arrange the carrots, green beans and cauliflower on a large platter. Arrange the shrimp, clams and cod on top. Drizzle with half of the dressing. Arrange the lemon wedges and beets around the edge of the platter
  • Serve the cappon magro with toasted bread and the remaining dressing alongside.

Another family favorite. (Hey, this family LOVES to eat) I keep the "toppings" in a ziplock. Keep the "dry" stuff seperate.

1 package ramen noodles, sauteed in butter
1/2 cup sunflower seeds
1/2 cup almonds, slivered
1/2 cup white wine vinegar
2 tablespoons soy sauce
1/2 cup sugar
1 cup oil

Steps:

  • Prepare cabbage as you would lettuce for salad.
  • In small bowl, mix noodles, nuts and seeds.
  • Set aside.
  • In quart jar add vinegar and sugar, shake to dissolve sugar.
  • Add soy sauce and oil.
  • Put cabbage in bowl.
  • top with nut mixture and pour dressing on top.
  • Best when nut mixture stays.
  • separate until ready to eat so noodles don't get soggy.

3 to 4 cloves garlic, peeled, crushed and chopped (2 teaspoons)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon-style mustard
1 tablespoon red-wine vinegar
1 tablespoon soy sauce
3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.
