KEY LIME MARGARITA PIE

Nonstick canola oil cooking spray
9 whole graham crackers
2 tablespoons packed light brown sugar
1/4 teaspoon kosher salt
6 tablespoons refined coconut oil, melted and slightly cooled
4 large egg yolks
One 14-ounce can sweetened condensed milk
2/3 cup fresh or bottled key lime juice, such as Nellie & Joe's
3 tablespoons blanco or silver tequila
Flaky sea salt, for sprinkling
1 cup heavy cream
3 tablespoons confectioners' sugar
2 tablespoons orange liqueur or triple sec

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Spray a 9-inch pie pan with cooking spray.
  • Put the graham crackers, brown sugar and salt in the bowl of a food processor. Process until the graham crackers have broken down into fine crumbs. Add the coconut oil and process until combined; the mixture will resemble very wet sand. Press the mixture into the bottom of the prepared pan, using the back of a flat-bottomed glass or measuring cup to press the crust firmly into the bottom and up the sides of the pan.
  • Combine the egg yolks and condensed milk in a large bowl and whisk to combine. Add the lime juice and tequila and whisk until smooth.
  • Spread the filling evenly over the crust. Bake until the filling is just set and only slightly jiggles in the center, 20 to 25 minutes, rotating the pan once halfway through baking. Let cool slightly on a wire rack for 20 minutes, and then chill in the refrigerator until completely cooled, at least 4 hours and up to overnight.
  • Right before serving, whisk the heavy cream and confectioners' sugar in a large bowl on medium-high speed until soft peaks form, about 2 minutes. Add the orange liqueur and whisk until the cream reaches medium stiff peaks, 1 to 2 minutes, being careful not to overmix.
  • Remove from the refrigerator and sprinkle with flaky sea salt. Spread the whipped cream on top, then cut into 8 to 10 pieces and serve.

  • Prepare crust:.
  • Stir together coconut, gingersnaps and butter.
  • Press into bottom and up sides of a 9 inch pie plate.
  • Bake at 350 degrees for 8 minutes.

  • In a heavy saucepan, combine, eggs, lime juice, orange liqueur, tequila and condensed milk over medium heat, stirring often approxiately 20 minutes or until temperature reaches 165 degrees. Remove from heat, stir in lime rind; cool completely (approximately 2 hours).
  • Beat whipping cream at high speed with an electric mixer until soft peaks form.
  • Fold into egg mixture.
  • Spoon into Gingersnap crust.
  • Freeze 2 hours or until firm.
  • Let stand 20 minutes before cutting.
  • Garnish if desired.

Steps:

  • The combined recipe makes 2 crusts, so either use 2 graham cracker pie crusts, or if you’re ambitious, make 2 pretzel crusts (double the ingredients for the crust and pat into 2 pie pans).
  • Make the 2 Key Lime pies first- they’ll seem shallow, but remember you’re going to top them with Margarita topping.

1/2 cup graham crackers, finely crushed
1/4 cup sugar
1/3 cup butter, melted
1 (14-ounce) can sweetened condensed milk
1/3 cup frozen limeade concentrate, thawed
2 tablespoon tequila
1 tablespoon orange liqueur
Few drops green food coloring, optional
1 cup heavy cream
Lime slices

Steps:

  • Preheat oven to 375 degrees F.
  • To make the pretzel crust, combine the crushed pretzels, graham crackers, sugar, and melted butter. Once the mixture is combined, spread the mixture evenly into a 9-inch pie tin. Press the mixture in the tin onto the bottom and the sides to form a firm even crust. Bake for 5 minutes until the edges are lightly browned. Let shell cool until needed.
  • For the filling, use a large mixing bowl, and combine the sweetened condensed milk, limeade, tequila, orange liqueur, and food coloring if desired, until all ingredients are well mixed. In a medium size bowl, beat the heavy cream until soft peaks form. Fold the whipped cream into the lime and tequila mixture. Spoon the filling into the pie shell, cover and freeze for 4 hours or until firm.

3 tablespoons sugar
6 tablespoons unsalted butter, melted

One 14-ounce can sweetened condensed milk
1/2 cup defrosted limeade concentrate
1/4 cup tequila
2 tablespoons fresh lime juice
2 tablespoons orange-flavored liqueur, such as Triple Sec
1/4 teaspoon kosher salt, plus more for garnish
1 cup heavy cream
Eight 1/2-inch lime wedges (from 1 or 2 limes)

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Process the graham crackers and sugar in a food processor to a fine crumb. Add the melted butter and tequila, and pulse until moist. Press the crumbs into a 9-inch pie plate, and bake until firm, 12 to 15 minutes. Let the crust cool completely on a wire rack.
  • For the filling: Whisk together the condensed milk, limeade, tequila, lime juice, liqueur and salt in a large bowl until smooth and combined. Beat the cream with an electric mixer fitted with a whisk attachment on medium-high speed in another large bowl until stiff peaks form. Reduce the speed to low, and drizzle in the condensed milk mixture. Return the mixer to medium-high, and beat until the mixture is completely incorporated and fluffy, about 30 seconds, stopping to scrape down the side of the bowl if necessary. Transfer the filling to the cooled crust, cover loosely with plastic wrap and freeze until firm, at least 6 hours or overnight.
  • Transfer the pie to the refrigerator 30 minutes before serving. Garnish with lime wedges dipped in salt, and serve.

Key lime pie's boozier, saltier cousin, it comes together quickly and maintains its consistency when frozen, making it a great make-ahead treat for a barbecue or a trip to the beach. Any tequila will work, but blanco is preferred for its milder taste. Don't make the curd more than 10 minutes in advance, as the lime juice will start to thicken it, which could affect the bake.

1/2 cup/113 grams unsalted butter (1 stick), melted, plus more for greasing the pan
About 40 saltine crackers (from one 4-ounce/113-gram sleeve)
1 tablespoon granulated sugar
1 teaspoon kosher salt
2 teaspoons lime zest plus 1/2 cup juice (from about 4 limes)
1/4 cup tequila (preferably blanco)
2 tablespoons orange liqueur, such as Grand Marnier
Pinch of kosher salt
5 large egg yolks
1 (14-ounce) can sweetened condensed milk
Flaky salt, for finishing

Steps:

  • Heat the oven to 350 degrees. Lightly grease a 9-inch square baking pan with butter (or use the wrapper from your stick of butter). Line the buttered pan with parchment, leaving an overhang on two sides. (This will help you pull the bars out of the pan easily.)
  • Prepare the crust: In a food processor, pulse the saltines until ground like coarse sand. (Alternatively, place them in a zip-top bag and use a rolling pin to crush them.) It's OK if there are a few larger pieces. Add the melted butter, sugar and salt, and pulse a few more times until all the crumbs are evenly saturated (or mix to combine in a medium bowl). Pour the mixture into the lined pan, press into an even layer and freeze for about 15 minutes.
  • After the crust has chilled, bake it until fragrant and golden brown, about 15 to 18 minutes.
  • While the crust cools, make the filling: In a liquid measuring cup or small bowl, combine the lime zest, lime juice, tequila, orange liqueur and salt.
  • In a medium bowl, whisk together the yolks and sweetened condensed milk. Add the tequila-lime mixture to the yolk mixture, whisk to combine, then pour into the prepared crust. (It's OK if the crust is not yet completely cool.) You may be tempted to prepare the curd earlier, but don't do so more than 10 minutes before baking, as the lime juice will start to thicken it, which could affect the bake.
  • Bake 15 to 17 minutes until the curd is set around the edges and slightly jiggly in the center.
  • Transfer to a rack to cool slightly, then freeze for at least 2 hours.
  • After freezing, remove the bars from the pan using the parchment paper overhang and transfer to a cutting board. Sprinkle with flaky salt, cut into 16 bars and serve right away. Store leftovers in the freezer. Cheers!

  • 1. Preheat oven to 325 degrees. Use an electric mixer on medium speed to combine sweetened condensed milk, egg yolks, and lime juice. Mix just until ingredients are combined. Pour filling into graham cracker pie shell.
  • 2. Bake on middle rack for 20 minutes or until filling jiggles only slightly when shaken. Cool. Cover pie and chill in refrigerator for a couple hours before serving.
  • 3. Make mango sauce by bringing mango juice to a boil in a medium saucepan over medium heat. Reduce heat and simmer for 30 minutes or until sauce thickens. Cover and chill.
  • 4. Make raspberry sauce by combining water and raspberries in a medium saucepan over medium heat. Bring to a boil then reduce heat and simmer raspberries for 10 minutes. Use a potato masher or a large spoon to crush the raspberries as they boil. Strain raspberry seeds from water, then put the liquid back into the saucepan and add the sugar. Bring mixture back to a boil, reduce heat and simmer for 15 to 20 minutes or until the sauce thickens. Cover and cool sauce until you are ready to serve the pie.
  • 5. Prepare dessert by dribbling some mango sauce and some raspberry sauce onto a small plate (use spoons or squirt bottles). Place a slice of pie onto the sauce, add a dollop of whipped cream to the top of the pie slice with one half of a thin lime slice on top of the whipped cream.
