THE BEST CHICKEN PARMESAN

The Best Chicken Parmesan image

Chicken Parmesan should have, well, Parmesan. So we not only topped ours with it, we added it to the crust for even more flavor and texture. For the coating, we prefer to start with plain breadcrumbs and enhance them with our favorite flavors. And our very simple, classic Italian-American tomato sauce has a bright and tomato-y flavor that cuts through the richness of the chicken and pasta.

Time 1h

Yield 4 servings

Number Of Ingredients 15

2 large boneless skinless chicken breasts (about 8 ounces each)
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1 cup plain breadcrumbs
1/2 cup grated Parmesan, plus more for serving
1/2 cup milk
1 large egg
1/2 cup plus 1/3 cup olive oil
3 cloves garlic, finely grated
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Two 28-ounce cans diced tomatoes
3 sprigs basil, plus torn leaves for serving
8 ounces whole milk mozzarella, shredded
12 ounces spaghetti

Steps:

  • Set a wire rack inside a rimmed baking sheet. Line another rimmed baking sheet with foil. Cut two 12-inch sheets of plastic wrap.
  • Cut the chicken breasts in half lengthwise, making 4 roughly equal pieces; they should look like large chicken tenders. Place one sheet of plastic on a clean cutting board. Put one chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick. Transfer to the wire rack. Repeat with the remaining chicken, one piece at a time. Liberally sprinkle with salt and pepper.
  • Put the flour in a pie plate and dredge the chicken 1 piece at a time, turning to coat and packing the flour into the crevices. Shake to remove any excess and return to the rack. Repeat with the remaining chicken.
  • Whisk the breadcrumbs, 1/4 cup of the Parmesan, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a medium bowl until combined. Whisk the milk and egg in a medium bowl until combined. Dip the dredged chicken into the milk mixture, allowing any excess to drip off. Then pack the seasoned breadcrumbs firmly onto the chicken. Very gently
  • shake off any excess and return to the rack. Refrigerate uncovered at least 30 minutes and up to 12 hours.
  • Meanwhile, make the sauce. Heat 1/3 cup of the oil in a large pot over medium-high heat. Add the garlic, oregano and red pepper flakes and cook until very fragrant but not brown, about 1 minute. Add the tomatoes, basil and 1 teaspoon salt. Bring to a boil and then reduce to a simmer and cook, uncovered, until the tomatoes are very tender and the liquid has reduced by half, about 30 minutes. Smash the tomatoes with a potato masher until almost smooth; it's ok if it's a little chunky. Season with salt.
  • Heat the remaining 1/2 cup oil in a large skillet over medium-high heat. Add 2 cutlets and cook until the coating is golden brown, about 1 minute per side; the chicken will not be cooked through. Transfer to the foil-lined baking sheet in a single layer 3 inches apart. Repeat with the remaining cutlets.
  • Arrange an oven rack directly under the broiler and preheat to high. Arrange the chicken in a single layer on the prepared baking sheet, spaced 3 inches apart. Top each cutlet with 2/3 cup of the sauce and spread evenly to coat. Sprinkle each cutlet with 1 tablespoon of the Parmesan and 1/2 cup mozzarella. Broil until the cheese melts and starts to brown in spots, 2 to 3 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Cook the spaghetti, stirring occasionally, until al dente. Drain and transfer to the remaining sauce. Gently stir until the sauce coats the pasta. Transfer the spaghetti to a serving dish and top with the chicken. Sprinkle with more Parmesan and serve with torn basil.

Number Of Ingredients 20

2 Tbsp olive oil, (divided)
1 lb. boneless, skinless chicken breast
3/4 tsp salt, (divided)
3/4 tsp pepper, (divided)
1 14.5 oz. can diced tomatoes in juice
3 cups unsalted or reduced salt chicken broth
1 cup diced onion ((from 1 small onion))
1 Tbsp minced garlic ((from about 3 cloves))
1 cup arborio rice
1/4 tsp dried basil
1 cup sliced cherry tomatoes
3/4 cup mozzarella pearls
1/3 cup grated parmesan, (plus more for topping)
2 Tbsp chopped fresh basil
1 Tbsp unsalted butter
1 Tbsp unsalted butter
1 cup panko
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder

Steps:

  • Add 1 Tbsp olive oil to a large saucepan over medium heat (to cut down on dishes, use the same saucepan you're going to cook the risotto in). Sprinkle both sides of chicken breasts with 1/2 tsp salt and 1/2 tsp pepper and place in saucepan. Cook for 5-7 minutes on each side until golden and cooked through.
  • Remove chicken to cutting board and once cool enough to touch, slice chicken into bite-sized pieces.
  • While chicken is cooking, in a small saucepan over medium heat, bring diced tomatoes in juice and chicken broth to a simmer. Lower heat and keep mixture warm.
  • In the same saucepan you cooked the chicken in, add remaining 1 Tbsp olive oil. Add diced onion and cook for about 5 minutes until soft. Add garlic and cook for another minute.
  • Add arborio rice to the saucepan and cook for about 2 minutes, stirring a bit, until it's translucent around the edges.
  • Stir in about 1 1/2 cups of the tomato broth and stir occasionally until it has absorbed into rice completely, 3-4 minutes. Continue adding the mixture 3/4 cup at a time, stirring after each addition, and waiting to add more until liquid is all absorbed. Stir occasionally. Rice should be creamy and al dente when done.
  • Add diced chicken, 1/4 tsp salt, 1/4 tsp pepper, dried basil, cherry tomatoes, mozzarella pearls, grated parmesan, fresh basil, and butter to rice and stir until well-combined and warmed through. Taste and add more salt if desired.
  • Serve risotto on plates or in bowls and top each serving with crispy panko topping and more parmesan cheese, if desired.

MARCELLA HAZAN'S ROAST CHICKEN WITH LEMONS

Marcella Hazan's Roast Chicken With Lemons image

When Marcella Hazan died in 2013, The New York Times invited readers to share their favorite recipes from her books. While her tomato sauce with butter and onion was the clear favorite, this astonishingly simple roast chicken and her Bolognese sauce were close runners-up.

Provided by The New York Times

Categories     dinner, roasts, main course

Time 2h

Yield 4 servings

Number Of Ingredients 4

3- to 4-pound chicken
Salt
Black pepper, ground fresh from the mill
2 rather small lemons

Steps:

  • Preheat oven to 350 degrees.
  • Wash the chicken thoroughly in cold water, both inside and out. Remove all the bits of fat hanging loose. Let the bird sit for about 10 minutes on a slightly tilted plate to let all the water drain out of it. Pat it thoroughly dry all over with cloth or paper towels.
  • Sprinkle a generous amount of salt and black pepper on the chicken, rubbing it with your fingers over all its body and into its cavity.
  • Wash the lemons in cold water and dry them with a towel. Soften each lemon by placing it on a counter and rolling it back and forth as you put firm downward pressure on it with the palm of your hand. Puncture the lemons in at least 20 places each, using a sturdy round toothpick, a trussing needle, a sharp-pointed fork, or similar implement.
  • Place both lemons in the bird's cavity. Close up the opening with toothpicks or with trussing needle and string. Close it well, but don't make an absolutely airtight job of it because the chicken may burst. Run kitchen string from one leg to the other, tying it at both knuckle ends. Leave the legs in their natural position without pulling them tight. If the skin is unbroken, the chicken will puff up as it cooks, and the string serves only to keep the thighs from spreading apart and splitting the skin.
  • Put the chicken into a roasting pan, breast facing down. Do not add cooking fat of any kind. This bird is self-basting, so you need not fear it will stick to the pan. Place it in the upper third of the preheated oven. After 30 minutes, turn the chicken over to have the breast face up. When turning it, try not to puncture the skin. If kept intact, the chicken will swell like a balloon, which makes for an arresting presentation at the table later. Do not worry too much about it, however, because even if it fails to swell, the flavor will not be affected.
  • Cook for another 30 to 35 minutes, then turn the oven thermostat up to 400 degrees, and cook for an additional 20 minutes. Calculate between 20 and 25 minutes total cooking time for each pound. There is no need to turn the chicken again.
  • Whether your bird has puffed up or not, bring it to the table whole and leave the lemons inside until it is carved and opened. The juices that run out are perfectly delicious. Be sure to spoon them over the chicken slices. The lemons will have shriveled up, but they still contain some juice; do not squeeze them, they may squirt.
