1 teaspoon vanilla
1 cup or (4-ounce) bag maple sugar coated pecans or walnuts, coarsely chopped (recommended: Mapled Nut Co. brand)
1 (9-inch) unbaked tart shell or pie shell

Steps:

  • Preheat oven to 350 degrees F.
  • Combine butter, egg, milk, maple syrup and vanilla. Add chopped nuts and gently pour into tart shell. Garnish with extra nuts if you like.
  • Bake for 25 to 30 minutes until top of tart is puffed and bubbly and crust is starting to brown. Cool for 20 minutes before removing from tart pan.
  • Can be served warm or at room temperature. Add a dollop of whipped cream for an extra special treat

1 recipe Our Favorite Pie Crust
2 large eggs
1/4 cup packed light-brown sugar
1/4 teaspoon salt
1 cup pure maple syrup
1 1/2 cups pecan pieces
1 1/2 cups walnut pieces

Steps:

  • Preheat oven to 350 degrees. On a lightly floured piece of waxed or parchment paper, roll dough into a 12-inch circle. Carefully fit into a 9-inch removable-bottom tart pan, gently lowering dough into bottom and sides of pan without stretching. Roll rolling pin over edge of tart pan to cut off excess dough (discard excess); set tart shell aside.
  • In a medium bowl, whisk together eggs, sugar, and salt; whisk in maple syrup. Add nuts, and mix filling to combine. Place tart pan on a rimmed baking sheet, and pour in filling. Bake tart until filling is set and crust is slightly golden, 55 to 60 minutes. Cool completely in pan. Remove tart from pan before serving.

1 cup almonds, divided
2 cups packed brown sugar
1 cup maple syrup
½ cup cold butter
1 cup chocolate chips

Steps:

  • Line a baking sheet with aluminum foil; spray lightly with cooking spray. Reserve 2 tablespoons of almonds and sprinkle the rest evenly over the foil.
  • Combine brown sugar and maple syrup in a 2-quart saucepan over medium heat. Cook and stir until sugar is dissolved and caramel mixture comes to a full boil, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn oven off once preheated; place prepared baking sheet in the oven to warm.
  • Attach a candy thermometer to the saucepan with the caramel mixture. Add butter. Cook, stirring occasionally, until the mixture reaches 300 degrees F (149 degrees C) or until a small amount dropped into ice water forms a hard, brittle strand, about 20 minutes.
  • Remove baking sheet from the oven and immediately pour the caramel mixture over the almonds. Spread evenly to about 1/4-inch thickness. Sprinkle remaining almonds and chocolate chips over open spaces. Spread chocolate evenly once melted. Let brittle cool completely, at least 30 minutes. Break into pieces.

2 cups mixed nuts, such as pecans, walnuts and almonds
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
Nonstick spray, for greasing
1 stick unsalted butter
1 1/2 cups pure maple syrup

Steps:

  • Combine the popcorn, mixed nuts, salt, paprika and cayenne pepper in large serving bowl.
  • Line a large baking sheet with aluminum foil and coat with nonstick spray.
  • Melt the butter in a heavy-bottomed saucepan over medium-high heat. Pour in the maple syrup and continue cooking until the mixture reads 275 degrees F on a candy thermometer, about 15 minutes.
  • Carefully pour the mixture over the popcorn and nuts. Toss, using a spoon that has been coated in nonstick spray, to coat the popcorn evenly with syrup. Allow the popcorn to cool before serving

1/2 cup walnuts, finely chopped
2 Tbsp. sugar
1 tsp. ground cinnamon
4 Tbsp. butter, melted
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1/2 cup pure maple syrup
1 tsp. vanilla
3 large eggs, lightly beaten
1/2 cup semi-sweet chocolate chips, melted
1/4 cup walnuts, chopped

Steps:

  • Preheat oven to 325°F.
  • Grease a 9" springform pan.
  • MAKE THE CRUST:
  • Mix graham cracker crumbs, walnuts, sugar, and cinnamon in a medium bowl. Add the melted butter and stir to combine until the mixture looks like sand. Use the back of a measuring cup to press the crust firmly into the bottom and up the side of the pan. Bake the crust for 10 min. and allow to cool.
  • FOR THE FILLING:
  • In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and sugar until smooth and creamy, about 2 to 3 min.
  • Add the maple syrup, vanilla, and eggs, and beat on low until just combined. Pour over the crust and smooth the top evenly.
  • Bake for 45 to 55 min. or until the center is set. (The center will still jiggle slightly when shaken.) Turn the oven off and open the door slightly. Leave the cheesecake inside to cool for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.
  • FOR THE TOPPING:
  • Before serving, drizzle melted chocolate over the top and side of cheesecake and top with chopped walnuts.

3 cups raw shelled walnuts ((12 oz))
1/4 teaspoon sea salt
2 tablespoons honey
2 tablespoons coconut oil

Steps:

  • If you'd like to toast the walnuts, preheat your oven to 350 degrees F. Spread the walnuts on a rimmed baking sheet. Toast until fragrant, 8-10 minutes. Allow to slightly cool.
  • Transfer the walnuts to your food processor. Process on high, stopping 3-4 times to scrape the sides with a spatula and allow the food processor to rest, until smooth and creamy, 10-15 minutes.
  • If using the optional additions, now is the time to add the sea salt, honey and coconut oil to the food processor. Process until smooth and fully incorporated, 1-2 more minutes.
  • Keep the walnut butter in an airtight container. I keep it on the kitchen counter, but I use a little every day so it only lasts about a week.   • Preheat the oven to 325 degrees F. Line an 8-inch square baking pan with parchment paper and spray with nonstick cooking spray.
  • In a large bowl, mix together the cocoa powder, baking soda, salt and cinnamon. In a separate bowl, mix together the almond butter, syrup, ghee, vanilla and eggs. Mix the wet into the dry and then fold in the walnuts.

I live in Quebec, Canada, and at the end of winter, when the syrup is harvested from the maple trees and is abundant, pure syrup is boiled and then whipped, which gives a true maple spread which is just divine. I love it on toast. You will never want an artificially-flavored maple spread again!

1 ½ cups pure maple syrup
2 tablespoons corn syrup

Steps:

  • Fill your sink with at least 6 inches of very cold water before starting to cook the spread.
  • In a large pot over medium-high heat, bring the maple syrup and corn syrup to a boil. Cook the syrup until a candy thermometer reads exactly 232 degrees F/112 degrees C., stirring occasionally. The correct temperature is very crucial in the process.
  • As soon as the syrup reaches the correct temperature, take the pan off the heat and carefully lower it into the cold water bath. Allow the syrup to rest and cool until it reaches 70 degrees F/20 degrees C, about 30 minutes.
  • When the syrup reaches 70 degrees F, remove the pot from the cold water bath and beat the cooled syrup with an electric mixer on high speed until the syrup forms a creamy, thick spread, about 3 minutes.
  • Pack the spread into a container, cover, and ripen in refrigerator for about 2 hours before serving. Maple butter will keep covered in refrigerator up to a month. If chilled maple butter is too hard to spread straight from the refrigerator, allow to come to room temperature.

  • Preheat oven to 350 degrees F. Evenly spread pecans on an ungreased baking sheet. Toast pecans in oven for 7-9 minutes, being careful not to burn nuts. Mine were perfectly toasted at 8 minutes. Remove from oven and allow nuts to cool for a few minutes.
