1 3/4 cups all-purpose flour
1/3 cup sugar
1/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 cup mashed ripe banana (about 2-3 med.)
3 tablespoons butter, melted
2 tablespoons nonfat milk
1/4 teaspoon maple flavoring
1/4 cup chopped walnuts

Steps:

  • Mix together the first six ingredients.
  • In another bowl, throughly stir together the eggs, bananas, melted butter, milk and flavoring.
  • Stir wet ingredients into dry until just moistened.
  • Pour into greased loaf pan or 9x9 pan.
  • Sprinkle top with walnuts.
  • Bake at 350, if using loaf pan will take longer, around 40-55 minutes. 9x9 will take about 25-35 minutes. Keep a eye on it and check with a knife to see if done.
  • If top starts browning too early, cover with foil.
  • Sometimes we stirred extra walnuts into the batter.

Ok, this is a specific recipe ... but is also a method. The flour beer and sugar are consistent ... everything else is extra. Here are some of my favorites and you can really do what you like. Dried vs fresh herbs are best, not too many "wet" ingredients; such as olives, onions, sundried tomatoes, etc., and if you add cheese, no more than 1 cup. - Chile beer at any specialty liquor store, monterey jack cheese and cilantro - Pumpkin beer, yes in the fall, pecans, rosemary, and swiss cheese - Any good dark like Amberbock, apples, dried cranberries and gruyere - Honey wheat, caramelized onion, cheddar, and thyme - Light beer, green chilies, jalapeno jack and cilantro - Red berry or any berry beer, walnuts and provolone with cinnimon - Any dark beer, raisins, cranberries, cinnimon and brown sugar vs white - Bock beer, sundried tomatoes, olives and oregano - Maple or pumpkin beer, cinnimon, raisins, pecans and dried apples I have used bacon bits and cheddar; all herbs; or just cheese. Endless combinations. But this is a favorite for breakfast or even a late night snack with cream cheese. Many of these are available year round at most larger liquor stores any many of the beers are available during seasons, like the Pumpkin and Maple available during the Fall and Winter months. A hearth Bock for some brewers is available in winter and it is good with Mediterranean flavors. Now this is the basic recipe ... 12 oz beer (I use a standard bottle with is 12 oz) 3 cups flour self rising, sifted (sifted is important), if not using self rising, use all purpose, but add 1 tablespoon baking powder and 1 teaspoon salt 1/4 cup sugar (flavorings) However below is my updated recipe for the maple walnut.

12 ounces beer (maple flavored)
3 cups flour, sifted (self rising)
1/4 cup brown sugar
1/2 cup walnuts, toasted
1/4 teaspoon allspice

  • The batter -- Sift the flour and add to a large bowl. Add the sugar, beer and seasoning and mix. I do like the beer to set for a few minutes so it isn't ice cold. Pour all in a loaf pan and cook for 50-60 minutes at 375. Half way through brush the melted butter on the top of the loaf for a golden color. For the sweater breads I usually top it with melted butter.
  • Have fun with it and try a variety of flavors. Just stick to the basic recipe and it is virtually full proof. I have probably made 50+ varieties by now.

  • Combine buttermilk, syrup, oil, and egg in a bowl; add to flour mixture, stirring just until moist. Stir in vanilla.
  • Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray. Sprinkle with walnuts.

1 3/4 cups (10 1/2 ounces) dried figs, diced
1/2 cup (4 ounces) warm water (85 degrees to 90 degrees F)
2 2/3 cups (12 ounces) unbleached all-purpose flour
1 2/3 cups (6 1/2 ounces) cake flour
1 3/4 cups (5 1/4 ounces) old-fashioned rolled oats
2 tablespoons baking powder
1/2 teaspoon kosher salt
1 1/3 cups (11 ounces) maple syrup
1 1/3 cups (11 ounces) milk
4 large eggs, lightly beaten
2 large egg yolks
3/4 cup (6 ounces) canola oil
2 cups (8 ounces) walnut pieces, toasted
Additional maple syrup for glazing

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Put the diced figs in a medium bowl and add the warm water. Let soak until softened.
  • Whisk the unbleached flour, cake flour, oats, baking powder, and salt together in a large bowl. Set aside.
  • Put the maple syrup, milk, eggs, egg yolks, and canola oil in a medium bowl and stir with the whisk to combine. Add the mixture to the dry ingredients, stirring with a spoon just until all the flour is moistened. This should be a wet batter, because the oats absorb a lot of the liquid during baking.
  • Fold the walnuts and figs into the batter (the figs do not need to be drained). Divide the batter evenly between two oiled 9- by 5-inch loaf pans. Bake for about 1 hour, until a toothpick inserted in the center comes out clean. (If your oven bakes unevenly, rotate the pans from left to right and front to back about halfway through the baking time.)
  • Remove the pans from the oven and use a pastry brush to glaze the tops of the loaves with maple syrup. Set them on a rack to cool for about 10 minutes. Turn the loaves out of the pans and set them on the rack to cool completely before serving. Wrap any leftovers tightly in plastic wrap and store at room temperature. They may also be frozen, wrapped first in aluminum foil and then in plastic wrap or a heavy-duty freezer bag.

1 1-pound loaf brioche or egg bread, torn into bite-size pieces

Steps:

  • For praline:
  • Spray rimmed baking sheet with nonstick spray. Stir sugar and 1/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Increase heat to high and boil without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 7 minutes. Stir in nuts. Quickly spread nuts on prepared sheet. Cool. Chop praline into small pieces. (Can be made 1 day ahead. Store in airtight container at room temperature.)
  • For bread pudding:
  • Whisk eggs, cream, sugar, 1 cup maple syrup, and vanilla in large bowl to blend. Add brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally.
  • Preheat oven to 375°F. Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. Cool slightly. Cut into 6 to 8 pieces. Place 1 piece pudding on each plate. Place scoop of ice cream atop pudding, drizzle with maple syrup, sprinkle with praline, and serve.

1 cup half-and-half

1/2 cup confectioners' sugar
2 -3 teaspoons half-and-half or 2 -3 teaspoons milk

  • Grease bottom or parchment paper line an 8 x 4-inch or a 9 x 5-inch loaf pan, or 2 (6 x 3-inch) small loaf pans.

1 cup (about 4 ounces) coarsely chopped pecans

1/4 cup vegetable oil
2 egg whites, beaten to blend

Steps:

  • Preheat oven to 350°F. Butter 9x5x2 1/2-inch loaf pan. Place paper liners in 6 muffin cups. Puree prunes and water in processor until smooth. Combine flour, sugar, oats, baking soda, allspice and cinnamon in medium bowl. Mix pumpkin, pecans maple syrup, oil, egg whites and pureed prunes in large bowl. Stir in dry ingredients into pumpkin mixture (batter will be thick).
  • Spoon batter into loaf pan until 3/4 full. Smooth top with spatula. Divide remaining batter among 6 muffin cups. 1 cup old-fashioned oats
1 cup boiling water
1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
1/2 cup maple syrup
2 teaspoons canola oil
1-1/2 teaspoons salt
3-1/2 to 4 cups all-purpose flour
TOPPING:
1 egg white, lightly beaten
2 tablespoons old-fashioned oats

Steps:

  • Place oats in a blender or food processor, cover and process oats for 6-7 seconds or until coarsely chopped. Transfer to a small bowl; add boiling water. Let stand until mixture cools to 110°-115°. In a large bowl, dissolve yeast in 1/3 cup warm water; add syrup, oil, salt, oat mixture and 2 cups flour; beat until smooth. I needed a baking cookbook of some sort for my "dessert of the month" challenge and after careful deliberation, and much drooling, over at least 20 books about baking, each with stunning photographs I settled on William Sonoma's The Baking Book: Essential Recipes for Today's Home Baker. I love this baking cookbook. I've leafed through it a number of times already...just to make sure I didn't miss anything delicious. I'm intrigued by a number of the different baking methods and I know that this cookbook will help me expand my baking knowledge and repertoire!!! Earlier in the week, my quarterly shipment of organic maple syrup arrived from Amazon. I knew right away that this bread would be first on the list to try! While I didn't have any pecans in the pantry, I did have some walnuts leftover from the holidays. They substituted easily into the original recipe, as did the rice milk that I used in place of the buttermilk. I love how this recipe uses the pecans/walnuts. You grind half of them in a food processor with some flour and then mix the "nut flour" into the batter. And then you coarsely chop the other half to fold into the batter after it has been prepared. This created a perfectly nutty flavor with not too much crunch! And all the milk, syrup, eggs and butter gave them a great moist and fluffy texture. A keeper of a recipe, for sure...Nom. Nom.

2 1/2 cups flour
1 cup sugar
1 tablespoon baking powder

Steps:

  • Preheat the oven to 350°F and grease 24 muffin cups with nonstick cooking spray.
  • Add 3/4 cups of the walnuts to a food processor or blender with 1/2 cup of the flour. Process until a nut flour forms.
  • In a bowl, sift together the other 2 cups of flour, the "nut flour", the sugar, baking powder, and salt. Create a little well in the middle and add the beaten eggs, melted butter or margarine, milk and syrup. Stir for about 1 minute, or until smooth-ish but slightly lumpy batter forms.
  • Coarsely chop the remaining walnuts and gently fold into the batter. Pour the batter into the greased muffin cups.
  • Bake for 18-22 minutes, or until begin to golden on the edges and center has cooked through. Let cool for about 10 minutes on a wire rack, then remove the muffins from the pan. Serve warm with butter.
  • This can also be baked in a loaf pan for 50-55 minutes. Let cool completely before slicing.
  • Enjoy!
