MAPLE BAKED BEANS
Since my husband raises hogs and my parents produce maple syrup, this recipe's a natural for me! I usually prepare Maple Baked Beans just for us during the winter. In summer, I'll often make it for family picnics and get-togethers.

Steps:
- Sort and rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qts. cold water. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from the heat. Cover and let stand 1 hour. Drain and rinse beans. Return beans to Dutch oven; cover with remaining water. Bring to a boil; reduce heat and simmer for 30-40 minutes or until almost tender. Drain and reserve liquid. In a 2-1/2-qt. casserole or bean pot, combine beans with all remaining ingredients. Cover and bake at 325° for 2-1/2 hours or until tender. Stir occasionally; add reserved bean liquid, if necessary.

MAPLE BAKED BEANS

- Preheat oven to 250 degrees F.
- Fill a stockpot with the beans and enough cold water to cover them. Bring the water to a boil and parboil the beans for approximately 20 minutes. Drain the water and reserve for later use. Place 4 salt pork cubes and half of the onion on the bottom of the bean pot. Fill the pot 3/4 full with beans. Add the Bean Goop. Fill the rest of the pot with the reserved water. Place the remaining cubes of salt pork and onion on top of the beans. Cover first with a layer of plastic wrap, then a layer of aluminum foil. Bake in the oven for 10 hours. Check beans at that time, blowing on them to see if the skin peels back. If so, they are finished. Time will vary depending on your oven and how long the beans were parboiled in the beginning. Cooking time could increase to as long as 12 hours total.
- In a large bowl or medium-size saucepan, mix the hot water with the sugars and molasses to dissolve the sugars. Then mix in all remaining ingredients. Set aside for use in the Baked Beans.
MAPLE-RUM GLAZED SALMON
Very easy recipe for oven roasted salmon fillets with a maple-rum glaze. The first time I made it this instantly eclipsed another salmon recipe (with an orange-ginger sauce) that we had used and loved for years. Some folks might write this off due to the mustard, but the flavors blend so well it is undetectable.

- Whisk rum, maple syrup, and mustard together in a large glass or ceramic dish until marinade is well-combined. Place fillets in marinade and turn to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes.
- Preheat oven to 450 degrees F (230 degrees C).
- Remove salmon from marinade, and shake off excess. Place fillets in a glass baking dish. Pour marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer until glaze is reduced, about 10 minutes; set aside.
- Bake fillets in the preheated oven until fish flakes easily with a fork, 20 to 30 minutes. Top fillets with glaze.

MAPLE BAKED BEANS

- 1. In a large pan, cover the beans with water. Bring to a boil and simmer until tender, about 1 hour.
- 2. Preheat oven to 300°F.
- 3. In a bowl, combine everything else except the bacon. Stir in the beans.
- 4. Place 1 bacon strip at the bottom of a large ovenproof dish or Dutch oven. Pour the bean mixture over it, then push the other strip in.
- 5. Add just enough boiling water to the pot to cover everything.
- 6. Cover the pot with aluminum foil, then a lid. Bake for 5 hours, checking hourly to make sure the beans aren't drying out. (Add more water as necessary to keep them submerged.) 7 Uncover for the last half hour to brown the top, if desired.
MAPLE BAKED PORK AND BEANS
When it comes to sweet and savory flavor combos, this is up there with the best. With a solid foundation and a few brilliant additions, you've got a knockout batch of baked beans.

- Soak the beans overnight as directed on package. Drain well. Preheat oven to 250 degrees F. Place the navy beans in a baking dish. Remove the rind from the salt pork in one continuous piece. Set aside. Cut the remaining salt pork into small strips. Heat a pan of water to boiling and add the rind and strips and blanch for 5 minutes. Drain well and rinse with cold water. Add the strips of salt pork to the beans. Stir in the onions, ketchup, maple syrup, brown sugar, mustard, cayenne, and hot water. Stir well to combine. Place the rind on top of the bean mixture. Cover the baking dish tightly with aluminum foil. Place in the oven and bake for 3 hours at 250 degrees F. Remove the rind, recover the dish, and bake at 250 degrees F for 3-5 hours longer or until the beans are tender and the sauce is thick. Check the beans once or twice during the cooking time and add additional water if needed.
SLOW-COOKED MAPLE SYRUP BAKED BEANS

- Drain the beans and place them in a large pot with enough fresh, cool water to cover 2-inches. Bring to a boil over medium-high heat; reduce heat and simmer for 2 hours, or until a bean is tender enough to mash easily. Keep an eye on the pot and make sure there is plenty of water, add more as needed.
- Preheat the oven to 325 F. Drain excess water from the beans and place them in an ovenproof casserole dish or dutch oven.
- Cook the bacon over medium-high heat in a heavy skillet until limp. Alternatively, you can cook the bacon in the oven on a cookie sheet lined with aluminum foil for 10 to 12 minutes. Using a slotted spoon transfer the bacon to paper towels to drain. Add the bacon to the beans.
- Discard all but 2 tablespoons of the rendered bacon fat in the pan. Add the onions and cook over medium-low heat until tender and slightly brown. (If you cooked the bacon in the oven, use a new saute pan with 2 tablespoons of bacon fat.) Add the onion to the beans.
- Add the maple syrup and mustard to the beans and stir to blend thoroughly.
- Season with salt and pepper.
- Cover the casserole loosely with foil and bake in the preheated oven 2 to 3 hours. If the beans seem too dry, add up to 1/2 cup water. The beans are done when the liquid is very thick. This recipe comes from the Culinary Institute of America and is served in their American Bounty Restaurant.

- Rinse and sort the beans; remove any pebbles or debris.
- Place the beans in a large bowl.
- Fill with water to submerge the beans with at least two inches of water.
- Soak overnight (8-12 hours).
- The next day, transfer the drained and rinsed beans again to a large pot.
- Re-fill with water and bring to a boil.
- Turn down the heat and simmer for about 45 minutes.
- Remove from heat and rinse again.
- Transfer the rinsed precooked beans to your slow cooker.
- Add the rest of the ingredients, stir together and place the whole onion in the center.
- Cover and cook on low heat for 6 to 8 hours or until the beans are tender. If the mixture appears dry, you can add some water.
- Preheat oven to 225°F.
- Once again, transfer the precooked beans to your dutch oven or a large oven-proof pot.
- Add the rest of the ingredients, cover and cook for approximately 6 hours.
- Remove the lid for the last 30 minutes or so to obtain a nice golden color. As with the slow cooker method, if the beans appear dry, add a little water.

- Wash and pick over beans. Put beans and water in saucepan, cover. Bring to a boil. Boil for 2 minutes.
- Remove from heat and let stand 1 hour.

- Remove from oven.
- Combine brown sugar and melted butter. Drizzle over beans.
- Bake, uncovered, for another hour or until liquid has evaporated.
