Progresso® chicken broth provides a simple addition to these maple flavored pork chops served with pumpkin risotto - a flavorful Italian dinner that's ready in 35 minutes.

4 center-cut pork loin chops
Salt and pepper to taste, if desired
1 1/2 teaspoons maple flavoring
3/4 cup uncooked Arborio or other short-grain white rice
1 clove garlic, finely chopped
1 cup canned pumpkin
3 cups Progresso™ chicken broth (from 32 oz carton)
1/4 cup shredded Parmesan cheese
1/4 teaspoon salt

Steps:

  • Melt margarine in 12-inch skillet over medium-high heat. Sprinkle pork with salt and pepper. Cook pork in margarine 5 minutes, turning once, until brown. Remove pork from skillet; brush both sides with maple flavoring.
  • Add rice and garlic to skillet. Cook over medium heat 30 seconds, stirring frequently. Stir in pumpkin and 1/2 cup of the broth. Cook uncovered, stirring frequently, until liquid is absorbed. Stir in an additional 1/2 cup broth. Continue cooking about 15 minutes, stirring constantly and adding broth 1/2 cup at a time after previous additions have been absorbed.
  • Add pork and any remaining broth to skillet. Cover and cook 5 to 10 minutes or until pork is slightly pink when cut near bone and rice is creamy and just tender. Stir in cheese and salt.

1 cup grated onion
2 cups ketchup
1 cup canned pumpkin puree
3/4 cup chicken broth
1/4 cup packed dark brown sugar
1/4 cup molasses or maple syrup
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon pumpkin pie spice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Four 1-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing

Steps:

  • For the pumpkin bbq sauce: Heat the olive oil in a medium saucepan over medium heat. Add the onions and cook until tender and transluscent, 4 to 5 minutes. Add the ketchup, pumpkin puree, broth, sugar, syrup, vinegar, chili powder, Worcestershire, garlic powder, smoked paprika, pumpkin pie spice, salt and pepper and whisk well to combine. Bring to a low simmer. Reduce the heat to low and let cook until thickened, 20 to 30 minutes. If it begins to look too thick, add a few tablespoons of water or broth.
  • For the pork chops: Preheat a grill or grill pan for cooking over medium-high heat. Sprinkle the pork chops generously on both sides with salt and pepper. Brush the chops on each side with vegetable oil and grill, 4 minutes per side. Baste the pork chops on each side with the sauce and grill an additional minute per side to allow the sauce to caramelize. Serve the chops with extra sauce.

4 fresh sage leaves, chopped
2 cups chicken broth
2 cups 1 percent milk
2/3 cup quick-cooking polenta
1 1/2 cups canned pure pumpkin
1/4 cup grated Parmesan
Kosher salt and pepper
4 (5-ounce) boneless center-cut pork loin chops
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1/4 cup pure maple syrup
1/4 cup chicken broth, low-sodium canned

Steps:

  • For the polenta: Heat the olive oil in a small skillet over medium heat. Add the sage to the oil and cook until the sage is slightly crisped, about 1 minute. Remove from the heat and set aside. Meanwhile, put the broth and milk in a medium saucepan and bring to a boil over high heat. Slowly whisk in the polenta, reduce the heat to low, and cook, whisking occasionally, until the polenta is thick and creamy, about 15 minutes. Pull the saucepan from the heat and whisk in the pumpkin, sage with the oil, cheese, salt, and pepper. Hold in a warm place.
  • For the pork chops: Heat a large skillet over medium-high heat. Dry the pork chops well and season with salt and pepper, to taste. Add the oil to the pan and heat until shimmering.   • Pour off the excess oil from the pan. Add the vinegar, and return the pan to the heat and use a wooden spoon to scrape up any brown bits that cling to the pan. Stir in the mustard, maple syrup, and chicken broth, along with any juices from the pork chops. Cook over high heat until the mixture is syrupy, about 5 minutes. Season to taste.
  • Serve the pork chops with the pumpkin polenta and drizzle with the sauce.

1/3 cup sea salt
1/4 cup plus 2 tablespoons and a pinch of smoky maple seasoning, such as McCormick® Grill Mates® Smokehouse Maple Seasoning
1/2 cup packed light brown sugar
Four 3/4-inch-thick bone-in center-cut pork chops (2 1/2 to 2 3/4 pounds total)
Vegetable oil, for the pork chops
1 lemon, cut in half
3 tablespoons unsalted butter
2 Granny Smith apples, each peeled, cored and cut into 6 wedges
1 tablespoon finely chopped fresh chives, optional

Steps:

  • Whisk together the salt, 1/4 cup of the smoky maple seasoning, 1/4 cup of the sugar and 4 cups water in a medium saucepan. Bring to a simmer, whisking, until the salt and sugar dissolve. Pour in 4 cups of cold water and mix thoroughly, then transfer the brine to a large container with a lid and cool to room temperature. Add the pork chops to the brine, cover and refrigerate 8 to 10 hours.
  • Prepare a grill for medium-high heat.
  • Remove the pork chops from the brine and pat dry with paper towels. Lightly rub some oil into the chops, then season all over with 2 tablespoons smoky maple seasoning. Grill until the pork chops are well marked and charred, 7 to 9 minutes. Flip and continue to grill until cooked through and an instant-read thermometer registers 145 degrees F, 4 to 6 minutes more. Let rest under tented foil while you cook the apples.
  • Put a large cast-iron skillet on the grill. Juice one of the lemon halves into a small bowl. Add 1 teaspoon of the lemon juice and the remaining 1/4 cup sugar to the skillet and stir with a heatproof spatula until the mixture looks like wet sand. Cook with the lid open, stirring frequently, until the sugar melts and deepens to amber, about 8 minutes. Add the butter and stir until melted. Once the foam subsides, add the apples, cover the grill and cook, gently stirring occasionally and coating the apples in the caramel, until the apples are crisp-tender, about 8 minutes. Remove the skillet from the heat and, being careful of splattering, add the remaining lemon juice and a pinch of smoky maple seasoning and stir gently.
  • Arrange the pork chops on a platter and top with the apples. Use a fine rasp grater to zest the other lemon half over the dish. Sprinkle with chives if using.

1 cup canned pumpkin
2 tablespoons honey, pref. raw-thick type
1/4 teaspoon Lawry's Seasoned Salt
1/2 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1/4 teaspoon allspice
1/2 teaspoon apple cider vinegar
2 tablespoons chicken broth
1/2 cup celery, chopped fine (about 1 rib)
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl; mix pumpkin, honey, Lawry's, red pepper flakes, ginger, allspice, cider vinegar, broth, and celery.
