MAPLE MUSTARD PORK CHOPS

This is our favorite way to serve pork chops and is a great way to stretch the meat to feed a crowd. This is also really works really well with chicken. I use regular pancake syrup since that's what I usually have on hand but I would imagine that the real maple syrup would be even better. I have on occassion made this with honey when i've been out of syrup - it always works and is a very forgiving recipe. Hope you enjoy.

Number Of Ingredients 11

1 lb boneless pork chop, sliced into strips
1/2 cup flour (you probably won't use it all)
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
3 tablespoons oil
1 cup water
1/2 cup maple syrup
2 tablespoons mustard (I really like dijon mustard but pretty much any kind works)
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)

Steps:

  • Preheat a nonstick skillet on stove with the butter and oil on medium heat. The oil will help keep the butter from burning.
  • Combine the flour, salt and pepper in a ziptop bag. Add pork slices and shake to cover lightly. Shake off any excess.
  • Add pork to oil/butter in skillet. Lightly brown in batches. It will finish cooking in the sauce so don't worry about cooking through. Remove from skillet as it browns.
  • Combine water, maple syrup, mustard, salt and pepper in skillet and whisk till hot and bubbley. Add pork back in to sauce and cook over med-low heat for 20 minutes or till cooked through. The flour from the pork will thicken the sauce.
  • We like to serve it with rice-a-roni and a veggie.

4 boneless center cut pork chops, cut 1-inch thick
2 teaspoons garlic pepper seasoning
1/4 cup real maple syrup
1/4 cup Chardonnay wine, plus one cup for soaking skewers if needed
2 peaches, cut into bite-size pieces
1 sweet onion, cut into bite-size pieces
hot cooked couscous (optional)
fresh herb, for garnish (optional)

Steps:

  • If using bamboo skewers, soak them in one cup of chardonnay for 30 minutes prior to use.
  • Rub pork all over with garlic-pepper seasoning.
  • Cut chops into bite-size pieces and place in a glass utility dish.
  • Blend maple syrup and Chardonnay. Pour over pork and let marinate for 15 minutes.
  • Drain marinade into a small saucepan and bring to a boil; cook one minute.
  • Alternate pork with pieces of peach and onions on skewers.
  • Grill over moderate for about 10 minutes, turning occasionally and brushing with marinade.
  • Serve over couscous, garnished with fresh herbs, if desired.

2 tablespoons salted butter
1 cup maple syrup
¼ cup packed brown sugar
2 tablespoons honey
¼ cup water
2 (1-inch thick) bone-in pork chops
2 fresh peaches, sliced
2 green bell peppers, sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium skillet or saucepan over medium heat. Stir in maple syrup, brown sugar, and honey; bring to a simmer. When glaze is rapidly simmering, turn off heat.
  • Pour water into a 9x13-inch baking pan. Place pork chops in the water and surround with peach and bell pepper slices. Slowly pour glaze over chops, peaches, and peppers.
  • Bake in the preheated oven, turning halfway, until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

1/2 teaspoon pepper
1/2 cup maple syrup, divided
4 pork loin chops with bone (3/4 inch thick)
1 tablespoon butter
1/2 cup unsweetened apple juice
1 cup pecan halves

Steps:

  • In a small bowl, combine the mustard, pepper and 2 teaspoons syrup. Brush over both sides of pork chops. In a large nonstick skillet, brown pork in butter over medium heat for 2-3 minutes on each side. Add apple juice. Reduce heat; cover and simmer for 15-20 minutes or until meat is tender. Remove chops and keep warm.
  • Add pecans and remaining syrup to the skillet; cook and stir for 1-2 minutes or until blended. Serve over pork chops.
