MAPLE-GLAZED PARSNIPS
Olive oil is often used as a building block for cooking, but in this recipe extra virgin olive oil isn't just a background ingredient. The fruity flavor of olive oil pairs well with earthy parsnips and sweet-tart dried cranberries while also giving a shiny coating.

Steps:
- Combine 1/2 cup water, the parsnips, cranberries, maple syrup, 1 tablespoon olive oil, the coriander, 1/2 teaspoon salt and a few grinds of pepper in a large nonstick skillet over medium-high heat; bring to a simmer. Reduce the heat to medium low, cover and cook until tender, 8 to 10 minutes.
- Uncover and add the remaining 2 tablespoons olive oil, 1 tablespoon water and the lemon juice. Cook, stirring, until glazed, 1 to 2 minutes. Stir in the parsley; season with salt.

BRAISED PARSNIPS WITH MAPLE SYRUP AND PECANS

Steps:
- 1. Heat butter a small saucepan over medium-high heat. When the butter melts and starts to get brown, add the pecans, cumin and coriander. Stir the pecans and "toast" them with the spices for a minute. Remove the pecans from the pan and set aside. Add the maple syrup and bring to a boil. Reduce to a simmer and cook for 5 minutes; remove from heat and set aside.
- 2. Place the parsnips in a large skillet and cover with water. Bring to a boil, reduce to a simmer and cook the parsnips 15 to 20 minutes or until the parsnips are tender when pierced with the tip of a knife. Note: I often find recipes don't give me enough liquid to work with. Parsnips can vary in size so feel free to add a splash of water to finish the cooking process, if needed. Drain off any remaining liquid. Sprinkle the parsnips with salt and toss with reserved maple syrup mixture and seasoned pecans. Serve immediately.

- Preheat oven to 400°F. Line a baking pan with parchment paper.
- Peel the parsnips and cut them into 2" pieces. The thicker end of the parsnips can be cut in half lengthwise.
- Toss parsnips with oil, maple syrup, sage, and salt & pepper to taste.
- Place the parsnips on the parchment paper and roast 18-22 minutes or until tender and lightly browned.

A few years ago a dear friend gave me and Advent calender. In the box for each day she had put one of her favorite recipes. This was in 3 and we really enjoyed it this year for Christmas dinner!

- Preheat your oven to 400 degrees.
- Wash and peel the parsnips and then chop them into evenly sized pieces.
- In a bowl, combine the parsnips, salt, and oil.
- Put on a baking sheet and toast until tender (which usually takes 30-45 minutes). Mix them up about every 8 to 10 minutes.
- When they are tender, drizzle with the vinegar and maple syrup. Mix up and then bake until brown, about 5 minutes.
- If desired, season with some pepper.

- Line a baking dish with non stick baking paper.
- Place parsnips, salt, pepper and oil in baking dish.
- Toss to combine.

MAPLE-GLAZED PARSNIPS AND CARROTS
Steps:
- Preheat the oven to 450°F, with the rack in the lower third. Place the parsnips, carrots, bacon, and thyme in a single layer on a rimmed baking sheet. Drizzle with the syrup; season with salt and pepper. Toss well to combine. Bake until the bottoms of the vegetables begin to caramelize and turn dark brown, about 20 minutes. Remove from the oven, and toss the vegetables carefully. Return to the oven, and bake until all sides are well browned, about 25 minutes more. Discard the bacon and thyme. Serve immediately.
