Coat your pork shoulder with a sweet mustard glaze then slow-roast for soft, tender meat that just falls apart

200g sea salt
300g light muscovado sugar
2kg/4lb 8oz piece skinless pork shoulder
100ml maple syrup
100g wholegrain mustard
2 tbsp English mustard powder

Steps:

  • Mix the sea salt and 200g of the sugar in a large food bag, add the pork and coat it well. (If you don't have a bag, rub over the pork in a dish and cover with cling film.) Leave in the fridge overnight.
  • The next day, remove the pork and wipe down the meat with kitchen paper. Heat oven to 140C/120C fan/gas 1. Mix the remaining sugar, the maple syrup, mustards and some ground pepper. Rub half the mixture over the pork and sit it on a rack in a roasting tin. Roast for 6 hrs.
  • Spoon the remaining maple mixture over the pork and roast for 1 hr more.
  • Rest the meat for 30 mins on a plate loosely covered with foil. To serve, tear the pork into big fat chunks and, after skimming the surface, spoon over any juices from the tin.

My husband and I think this roasted pork tenderloin tastes like a fancy restaurant dish, but it couldn't be simpler to make at home. The maple-mustard glaze makes it extra special. It's a modification of a recipe we first tasted at a friend's house. -Colleen Mercier, Salmon Arm, British Columbia.

3/4 teaspoon salt
3/4 teaspoon rubbed sage
1/2 teaspoon pepper
2 pork tenderloins (3/4 pound each)
1 teaspoon butter
1/4 cup maple syrup
3 tablespoons cider vinegar
1-3/4 teaspoons Dijon mustard

Steps:

  • Preheat oven to 425°. Mix seasonings; sprinkle over pork. In a large nonstick skillet, heat butter over medium heat; brown tenderloins on all sides. Transfer to a foil-lined 15x10x1-in. pan. Roast 10 minutes., Meanwhile, for glaze, in same skillet, mix syrup, vinegar and mustard; bring to a boil, stirring to loosen browned bits from pan. Cook and stir until slightly thickened, 1-2 minutes; remove from heat., Brush 1 tablespoon glaze over pork; continue roasting until a thermometer inserted in pork reads 145°, 7-10 minutes, brushing halfway through with remaining glaze. Let stand 5 minutes before slicing.

This is our favorite way to serve pork chops and is a great way to stretch the meat to feed a crowd. This is also really works really well with chicken. I use regular pancake syrup since that's what I usually have on hand but I would imagine that the real maple syrup would be even better. I have on occassion made this with honey when i've been out of syrup - it always works and is a very forgiving recipe. Hope you enjoy.

1 lb boneless pork chop, sliced into strips
1/2 cup flour (you probably won't use it all)
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
3 tablespoons oil
1 cup water
1/2 cup maple syrup
2 tablespoons mustard (I really like dijon mustard but pretty much any kind works)
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)

Steps:

  • Preheat a nonstick skillet on stove with the butter and oil on medium heat. The oil will help keep the butter from burning.
  • Combine the flour, salt and pepper in a ziptop bag. Add pork slices and shake to cover lightly. Shake off any excess.
  • Add pork to oil/butter in skillet. Lightly brown in batches. It will finish cooking in the sauce so don't worry about cooking through. Remove from skillet as it browns.
  • Combine water, maple syrup, mustard, salt and pepper in skillet and whisk till hot and bubbley. Add pork back in to sauce and cook over med-low heat for 20 minutes or till cooked through. The flour from the pork will thicken the sauce.
  • We like to serve it with rice-a-roni and a veggie.

This is from another web site but is so awesome tasting that you will want to try it for sure!!! And its sooooo simple!! If the glaze is prepared ahead of time it will thicken, just reheat it in the micro until it melts and then use it. UPDATE:::Made this again the other day and DID marinate it. I made the sauce, added the pork and popped in the fridge for 2 hours, took out the pork and put on the grill and microwaved the sauce, if you dont heat the sauce it will be WAY too sticky for the grill and believe me you will have a mess! I have also done this with some very thick (1 1/2 inch) cook out style pork chops and they were super too!

1/2 teaspoon fresh ground black pepper
1/2 cup maple syrup
1/4 cup apple jelly

  • In a small saucepan, combine syrup, jelly and garlic.

This meal is simple to make and delicious. A great substitution at Christmas if you don't want the labour of preparing a turkey dinner. Using dried cranberries instead of raisins adds great colour to the dish. I use the ingredient amounts and cooking times as estimates and vary them to suit the size of the pork tenderloin. I sometimes also add some fruity wine vinegar to the apple mixture for some added flavour.

1 -1 1/2 lb pork tenderloin
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar
2 apples, peeled,cored and sliced
2 tablespoons dried cranberries or 2 tablespoons raisins

Steps:

  • Preheat oven to 400 degrees.
  • Place the tenderloin in a roasting pan or casserole dish (I use cooking spray first to make clean up easier).
  • Combine the remaining ingredients together and stir.
  • Spoon the apple mixture around the tenderloin, cover and bake for 30 minutes.
  • Remove the lid and spoon the apple mix over top of the tenderloin.
  • Place back in the oven and bake 15 to 20 minutes or until tenderloin registers at least 155 to 160 degrees on a meat thermometer.

3/4 teaspoon salt, divided
1/4 teaspoon black pepper

2 tablespoons butter
2 lbs thick sliced, peeled Granny Smith apples
1 shallot, thinly sliced
3 tablespoons maple syrup
1 1/2 tablespoons lemon juice

Steps:

  • Preheat oven to 425 degrees.
  • Combine 1/2 teaspoon salt, pepperand 1/4 teaspoon cinnamon, and rub over the trimmed pork tenderloins.
  • Heat a large ovenproof skillet over medium-high heat.
  • Add 1 tablespoon olive oil, add pork and saute 4 minutes on each side.
  • Remove pork, and reduce heat.
  • Melt butter, and add the peeled, granny smith apples, and shallot to pan, and saute for 1 minute.
  • Stir in maple syrup, lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon ground cinnamon, and cook 4 minutes, and stir.
  • Return roast to pan, and roast at 425 degrees for 12 minutes or until a thermometer reaches 145 degrees.

1/4 cup Dijon mustard or 1/4 cup spicy brown mustard
2 tablespoons maple syrup
1 teaspoon dried rosemary leaves or 1/4 teaspoon ground rosemary
1/2 teaspoon salt
1/4 teaspoon pepper
8 granny smith apples
1/2 cup maple syrup
2 teaspoons cornstarch
2 teaspoons sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 425. Place pork on a broiler pan coated with cooking spray.
  • Combine mustard, 2 tablespoons syrup, rosemary, salt, and pepper in a small bowl. Pour half of it over pork and spread with pastry brush, being mindful not to place the brush back into the mustard mixture (in order to avoid contaminating it in case you want extra sauce for dipping).
  • Bake for 30-40 minute or until internal temperature reaches 160 (meat should be slightly pink).
  • Meanwhile, slice and peel apples.
