1-1/2 pounds sweet potatoes, peeled and cubed
1 medium apple, peeled and cut into 8 pieces
2 tablespoons butter
1 tablespoon lemon juice
2 teaspoons minced fresh gingerroot
1/2 teaspoon salt
1/2 teaspoon pepper
PORK:
1 teaspoon water
1/2 teaspoon cornstarch
3 tablespoons maple syrup
2 teaspoons wasabi mustard
2 teaspoons soy sauce
1/2 teaspoon pepper
1-1/2 pounds pork tenderloin, cut into 1-inch slices
1 tablespoon olive oil
2 garlic cloves, minced

Steps:

  • Place sweet potatoes and apple in a large saucepan with water to cover. Bring to a boil over high heat. Reduce heat to medium; cover and cook just until tender, 10-12 minutes. Drain. Mash potatoes and apple. Add the next 5 ingredients; keep warm., Stir water into cornstarch until smooth; add syrup, mustard, soy sauce and pepper. Add pork; stir to coat. , In a large skillet, heat oil over medium heat. Brown pork. Add garlic; cook until meat is no longer pink, 3-5 minutes longer. Serve with sweet potatoes and pan juices.,

Maple Glazed Pork Roast With Sweet Potatoes image

This recipe makes a delicious and flavorful roast. I use about 1/2 cup of maple syrup to baste the roast and add some brown sugar to the sweet potatoes when I mash them. I left the original recipe unchanged here to post for you. I love sweet potatoes with pork! I hope you enjoy this one!

4 lbs boneless pork loin roast
4 1/2 tablespoons all-purpose flour
1/4 cup pure maple syrup
4 lbs sweet potatoes
3 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 350°F.
  • Pat pork dry and season generously with salt and pepper.
  • Sprinkle center of a flameproof roasting pan with 1/2 tablespoon flour.
  • Set pork on flour in pan and roast in middle of oven 40 minutes.
  • Brush pork with some maple syrup and roast, brushing with maple syrup every 10 minutes, until a thermometer inserted 2 inches into center of meat registers 155°F, 20 to 25 minutes more.
  • While pork is roasting, peel potatoes and cut into 1 1/2-inch pieces.
  • In a kettle cover potatoes with salted cold water by 2 inches and simmer until tender, about 15 minutes.
  • Drain potatoes in a colander set over a large bowl and reserve 3 cups cooking water.
  • Return potatoes to kettle and mash with a potato masher, or purée in a food processor.
  • Season potatoes with salt and pepper and keep warm.
  • Transfer pork to a platter and let stand, loosely covered with foil, 10 minutes.
  • While pork is standing, skim fat from pan juices.
  • In a small bowl make a beurre manié by kneading together butter and remaining 4 tablespoons flour until smooth.
  • Add 1 cup reserved cooking water to roasting pan and deglaze over moderately high heat, stirring and scraping up brown bits.
  • Add remaining 2 cups cooking water and any juices that have accumulated on platter and bring mixture to a boil.
  • Whisk in beurre manié and simmer sauce, whisking, until thickened to desired consistency, about 2 minutes.
  • Pour sauce through a fine sieve into a sauceboat.
  • Slice pork and serve with sweet potatoes and sauce.
  • Serves 6 to 8.

8 ounces pork tenderloin
1 tablespoon honey mustard
2 teaspoons lemon juice
1 tablespoon maple syrup
Nonstick pan spray
2 ripe pears

Steps:

  • Wash and dry the pork, and cut into about 3 pieces.
  • Mix together the mustard, lemon juice and maple syrup, and add pork, turning to coat.
  • Heat a nonstick pan large enough to hold the pork until it is medium hot. Spray with nonstick spray, and saute the pork on all sides until it is brown.
  • Peel the pears, and cut into small thin slices. Add to pork, and stir well to coat, cooking a few minutes until the pears soften.
  • Spoon the remaining pork marinade over the pork, and cook another minute. Serve pork with pears over the mashed cider sweet potatoes.

This is our favorite way to serve pork chops and is a great way to stretch the meat to feed a crowd. This is also really works really well with chicken. I use regular pancake syrup since that's what I usually have on hand but I would imagine that the real maple syrup would be even better. I have on occassion made this with honey when i've been out of syrup - it always works and is a very forgiving recipe. Hope you enjoy.

1 lb boneless pork chop, sliced into strips
1/2 cup flour (you probably won't use it all)
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
3 tablespoons oil
1 cup water
1/2 cup maple syrup
2 tablespoons mustard (I really like dijon mustard but pretty much any kind works)
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)

Steps:

  • Preheat a nonstick skillet on stove with the butter and oil on medium heat. The oil will help keep the butter from burning.
  • Combine the flour, salt and pepper in a ziptop bag. Add pork slices and shake to cover lightly. Shake off any excess.
  • Add pork to oil/butter in skillet. Lightly brown in batches. It will finish cooking in the sauce so don't worry about cooking through. Remove from skillet as it browns.
  • Combine water, maple syrup, mustard, salt and pepper in skillet and whisk till hot and bubbley. Add pork back in to sauce and cook over med-low heat for 20 minutes or till cooked through. The flour from the pork will thicken the sauce.
  • We like to serve it with rice-a-roni and a veggie.

SPICY MAPLE ROASTED PORK CHOPS AND SWEET POTATOES



Spicy Maple Roasted Pork Chops and Sweet Potatoes image

This was another successful, tossed-together kitchen creation. It is best described as spicy pork chops surrounded by roasted sweet potatoes coated in a spicy maple glaze. The sweet potatoes turn out soft on the inside and somewhat crispy on the outside, and the pork chops turn out juicy and spicy. DH and I enjoyed eating a bite of sweet potato with each bite of pork chop. I like to leave the skin on my sweet potatoes when roasting due to its nutritional value and crispy texture, but feel free to peel if desired. This truly is spicy. If you desire to tone down the heat, please do use less cayenne pepper.

200g sea salt
300g light muscovado sugar
2kg/4lb 8oz piece skinless pork shoulder
100ml maple syrup
100g wholegrain mustard
2 tbsp English mustard powder

Steps:

  • Mix the sea salt and 200g of the sugar in a large food bag, add the pork and coat it well. (If you don't have a bag, rub over the pork in a dish and cover with cling film.) Leave in the fridge overnight.
  • The next day, remove the pork and wipe down the meat with kitchen paper. Heat oven to 140C/120C fan/gas 1. Mix the remaining sugar, the maple syrup, mustards and some ground pepper. Rub half the mixture over the pork and sit it on a rack in a roasting tin. Roast for 6 hrs.
  • Spoon the remaining maple mixture over the pork and roast for 1 hr more.
  • Rest the meat for 30 mins on a plate loosely covered with foil. To serve, tear the pork into big fat chunks and, after skimming the surface, spoon over any juices from the tin.
