BROWN BUTTER MAPLE CHESS PIE



Brown Butter Maple Chess Pie image

This is not your grandmother's chess pie. A luxurious combination of brown butter, maple, and custard make this Maple Chess Pie one for the books.

1/2 recipe of the perfect pie crust
1/2 cup butter
1/2 cup maple syrup
1 cup sugar
3 large eggs, room temperature
1/4 cup heavy cream
2 teaspoons vanilla extract
1/2 teaspoon salt
2 tablespoons cornmeal
powdered sugar and whipped cream for serving (optional)

Steps:

  • Prepare one half recipe of the pie crust according to directions. Form into a disk and place in the fridge.
  • Preheat oven to 425°F. Grease a standard sized pie pan with butter. Set aside.
  • Brown your butter by placing it into a small saucepan over low heat. Stir constantly until the milk solids from the butter separate and become a golden brown color. Remove from heat and allow to cool for at least 15 minutes.
  • Remove pie dough disk from the fridge. On a lightly floured work surface, roll dough out to 1/4 inch thick. Carefully place dough into pie pan, pushing into the pan. Fold the edge of the dough over on itself, and use your fingers to create a crimped edge. Or, if you don't know how to do this, just leave it be. It will look great regardless!
  • Prepare your crust to be blind baked by placing parchment paper over the dough, then adding uncooked rice into the center. Blind bake for 10 minutes while you make your filling.
  • In a large bowl, combine butter, maple syrup, sugar, eggs, heavy cream, vanilla, and salt. Whisk until well combined, then add in cornmeal.
  • Pour filling into partially baked crust, then lower oven temperature to 350°F and bake for an additional 45-50 minutes, until the center of the pie is set and is a light golden brown color.
  • Allow pie to cool completely before topping with a dust of powdered sugar and serving. I suggest letting it cool on a cooling rack for 1 hour, then in the fridge for 2 hours. I also love pairing my chess pie with whipped cream, as these photos shows!

Sort of a Yankee riff on the South's chess pie, this buttery and rich custard pie is adapted from "Sister Pie: The Recipes and Stories of a Big-Hearted Bakery in Detroit" by Lisa Ludwinski. Use the best dark maple syrup you can find, and don't forget the flaky sea salt. It takes the pie from simply sweet to sophisticated. Keep an eye on the crust while it's baking: If it's browning too much for your taste, lightly cover the entire pie with a sheet of aluminum foil for the remaining time.

Perfect Pie Crust, prepared for a custard pie and chilled
1/2 cup plus 2 tablespoons/140 grams unsalted butter (1 1/4 sticks), melted and cooled
1 cup/240 milliliters dark robust (formerly Grade B) maple syrup
3/4 cup/165 grams packed light brown sugar
1/4 cup/35 grams fine yellow cornmeal
Heaping 1/4 teaspoon kosher salt
3 large eggs, at room temperature
1 large egg yolk, at room temperature
3/4 cup/180 milliliters heavy cream, at room temperature
1 1/4 teaspoons pure vanilla extract
1 large egg, beaten
Flaky sea salt, for sprinkling

Steps:

  • On a lightly floured surface and using a lightly floured rolling pin, roll out a disc of dough into a circle about 1/4-inch thick. Starting at one end, gently roll up the dough onto the rolling pin. Unfurl the dough over a 9-inch pie plate and press it in lightly, making sure it's lining the plate.
  • Trim so there's about 1/2-inch of excess dough hanging over the edge of the pie plate. (If the dough feels warm, refrigerate it for 15 minutes.) Tuck the excess dough under itself so it is flush with the edge of the pie plate; leave the pie like this for a straight-edge finish, or crimp as desired. Freeze for at least 15 minutes. Heat your oven to 450 degrees with the rack on the lowest level.
  • Remove the pie crust from the freezer, tear off a square of aluminum foil that is slightly larger than the pie shell, and gently fit it into the frozen crust. Fill the crust with pie weights or dried beans (they should come all the way up to the crimps) and place the pie pan on a baking sheet. Transfer the baking sheet to the oven, and bake for 25 to 27 minutes. Check for doneness by peeling up a piece of foil - the crimps should be light golden brown. Remove the baking sheet from the oven and transfer to a cooling rack. After 6 minutes, carefully remove the foil and beans. You are now ready to fill the pie. Reduce your oven to 350 degrees.
  • Make the filling: In a medium bowl, whisk the melted butter and maple syrup. Whisk in the brown sugar, cornmeal and kosher salt.
  • Crack the eggs and yolk into another medium bowl. Add the cream and vanilla, and whisk until combined.
  • Slowly pour the egg mixture into the maple mixture, and whisk just until combined.
  • Place the blind-baked shell on a parchment-lined baking sheet. Brush the crimped edge with the beaten egg. Pour the maple filling into the pie shell until it reaches the bottom of the crimps.
  • Transfer the baking sheet with the pie on it to the oven and bake for 45 minutes to 1 hour, until the edges are puffed and the center jiggles only slightly when shaken. It will continue to set as it cools.
  • Remove the baking sheet from the oven and transfer the pie to a wire rack to cool for 4 to 6 hours. Once fully cooled and at room temperature, sprinkle generously with flaky sea salt, slice into 8 to 10 pieces, and serve. Store leftover pie, well wrapped in plastic wrap or under a pie dome, at room temperature for up to 3 days.

There's no maple syrup in this pie recipe, and that's not a mistake. Instead this brown sugar chess pie, injected with a shot of whiskey, will remind you of maple candies thanks to its rich caramel notes.

Dough:
1 teaspoon sugar
Pinch of kosher salt
1 1/4 cups all-purpose flour, plus more for surface
4 tablespoon chilled unsalted butter, cut into pieces
1/4 cup chilled lard or shortening
Nonstick vegetable oil spray
Filling and assembly:
2 cups (packed) light brown sugar
1 cup heavy cream
1/2 cup (1 stick) unsalted butter
1 tablespoon whiskey
2 teaspoons vanilla extract
5 large eggs, room temperature
1 cup all-purpose flour
3/4 teaspoon kosher salt
Whipped cream (for serving)

Steps:

  • Dough:
  • Pulse sugar, salt, and 1 1/4 cups flour in a food processor to combine. Add butter and pulse until the largest pieces are pea-size. Add lard and pulse again until mixture resembles coarse meal. Transfer to a large bowl and drizzle in 3 Tbsp. ice water; mix with a fork to combine. Knead 3-4 times to bring dough together (only a couple of floury spots should remain). Flatten dough into a 1/2"-thick disk, wrap in plastic, and chill until firm, at least 2 hours.
  • Let dough sit at room temperature 5 minutes to soften.
  • Roll out dough on a lightly floured surface to a 12" round, rotating often and dusting with more flour as needed to prevent sticking. Transfer to a 9" pie dish. Lift up edges and allow dough to slump down into dish. You should have about 1" overhang. Fold edges under and crimp. Freeze 15 minutes.
  • Meanwhile, preheat oven to 425°F. Lightly coat a sheet of foil with nonstick spray and place in pie crust, coated side down, pressing into bottom and up sides. Fill with pie weights or dried beans and bake until edges of crust are pale golden, 15-20 minutes. Carefully remove foil and weights and continue to bake crust until bottom is golden and looks dry, 12-18 minutes more. Transfer dish to a wire rack and let crust cool.
  • Filling and assembly:
  • Preheat oven to 325°F. Heat brown sugar, cream, and butter in a large heatproof bowl set over a large saucepan of barely simmering water, stirring constantly, until butter is melted, sugar is dissolved, and mixture is smooth (do not let bowl touch water). Remove bowl from heat and stir in whiskey and vanilla. Whisking constantly, add eggs one at a time, incorporating completely after each addition. Add flour and salt and whisk just until smooth. Scrape filling into crust and place on a foil-lined rimmed baking sheet.
  • Bake pie until filling is browned all over, puffed around the edges, and still slightly wobbly in the center, 45-55 minutes. Transfer dish to a wire rack and let pie cool at least 4 hours before slicing (the longer you can wait, the easier it'll be to slice; do not refrigerate).
  • Serve pie topped with whipped cream.
  • Do Ahead
  • Dough can be made 3 days ahead; keep chilled, or freeze up to 1 month. Crust can be baked 1 day ahead; store tightly wrapped at room temperature. Pie can be baked 1 day ahead. Let cool, then store loosely covered at room temperature.

2/3 cup water
1-1/2 cups real maple syrup
2 tablespoons butter
Pastry for double-crust pie

Steps:

  • Preheat oven to 400°. In a large saucepan, whisk cornstarch and water until smooth; whisk in syrup. Bring to boil; cook and stir until thickened, about 4 minutes. Remove from heat; stir in butter until melted. Set aside to cool., On a lightly floured surface, roll dough for bottom crust to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Chill 30 minutes. Meanwhile, roll remaining dough to 1/4-in.-thickness; cut out maple leaves with 1-1/2 to 2-1/2- inch cookie cutters. Place on a baking sheet; chill., Transfer maple filling to prepared pie plate. Bake 10 minutes on a lower oven rack. Reduce oven setting to 350°. I was in the middle of making a Chess pie and realized I was out of vanilla extract. I substituted some maple extract I had on hand, added some pecans and the result was delicious. This pie is decadent and rich, so fortunately a small slice will do. I think this would be a great pie for Thanksgiving. Top with sweetened whipped cream or whipped topping if desired.

1 (9 inch) unbaked pie crust
½ cup butter or margarine, softened
1 ½ cups white sugar
3 eggs
1 tablespoon yellow cornmeal
1 tablespoon white vinegar
1 teaspoon maple extract
⅝ cup chopped pecans

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into the bottom and up the sides of a 9 inch deep dish pie plate.

One 9-inch deep-dish pie shell, blind baked according to package directions and cooled
1 1/2 cups granulated sugar
4 large eggs
1 stick (8 tablespoons) unsalted butter, melted
1/3 cup whole milk
1 tablespoon all-purpose flour
1 tablespoon finely ground yellow cornmeal
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
3/4 cup heavy cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla paste

Steps:

  • For the pie: Preheat the oven to 350 degrees F. Place the blind-baked pie shell on a rimmed sheet pan.
  • In a large bowl, whisk together the granulated sugar and eggs until combined. Add the butter, milk, flour, cornmeal, vinegar, vanilla and salt. Whisk until well blended.

1 tablespoon cornmeal
1 tablespoon flour
3 eggs
1/2 cup melted margarine
1 teaspoon vinegar

Steps:

  • Combine sugar, corn meal, and flour. Melt the margarine and add to the sugar mixture. Cream well. Add eggs, one at a time and beat thoroughly after each. Add vinegar, vanilla, and milk. Beat thoroughly. Pour into unbaked pastry shell and bake in a 400 deg. oven for 10 minutes, reduce heat to 325 deg. and continue baking 30 to 45 minutes or until set.
  • Makes 1 (9) pie.
