Here is another recipe from McCall's Cooking School; this one for chilled chicken breasts covered in a delicious tuna (tonnato) sauce. This makes a very pleasant make-ahead hot weather meal. It is a take-off of the more familiar vitello (veal) tonnato. Indeed, the delicious sauce, which could be described as a tuna mayonnaise, can also be used over poached veal, over turkey cutlets, even over cold hard-cooked eggs or as a dip for crudites. You'll probably think of other uses, as well. I used to poach the chicken as detailed in the recipe, but nowadays, I bake them in the style of Ina Garten (Recipe#234465). The meat is juicy and tender, perfect for this presentation. Tuna packed in olive oil will give the best flavor to the tonnato. Any leftover sauce will keep, refrigerated, for up to 5 days.

1 head iceberg lettuce
4 whole chicken breasts (1 lb. each)
1 large onion, sliced
1 stalk celery, sliced
1 carrot, pared and sliced
2 parsley sprigs
1 teaspoon salt
1/4 teaspoon dried thyme leaves
1 small bay leaf
1 (10 3/4 ounce) can condensed chicken broth, undiluted
1 cup water
1 (2 ounce) can anchovy fillets
1 (7 ounce) can tuna
1 cup mayonnaise
1/2 cup finely chopped celery
1/2 teaspoon salt
1 dash black pepper
1 tablespoon lemon juice
2 tomatoes, cut into 8 wedges
watercress leaf
kalamata olives (optional) or nicoise olive (optional)

Steps:

  • Cut out core of iceberg lettuce with pointed knife; discard core. Hold cut part of lettuce under cold running water to separate leaves. Drain well on paper towels, in colander or salad spinner. Refrigerate, stored in plastic bag in crisper or plastic container with tight fitting lid.
  • Wipe chicken breasts with damp paper towel. With sharp knife, split in half. In large 10-inch skillet, combine onion, celery stalk, carrot, parsley, 1 teaspoon salt, the thyme, bay leaf, undiluted chicken broth, and water. Over medium heat bring to boiling; add the chicken.
  • Bring to boiling; reduce heat; simmer, covered, 30 minutes, or until chicken is fork-tender. Remove skillet from heat; cool chicken breasts in broth 1 hour. Meanwhile make Tonnato Sauce: Drain anchovy fillets; with sharp kinfe, chop 2 fillets; reserve the rest for garnish.
  • Drain tuna; discard liquid. In blender or food processor, combine chopped anchovies with tuna, mayonnaise, chopped celery, salt, pepper and lemon juice. Blend until smooth. Turn into 2-cup container with tight-fitting lid; refrigerate, covered. Makes about 2 cups.
  • Remove cooled chicken breasts from broth; strain broth, and refrigerate, covered, to use another time. Remove and discard skin and bone from chicken breasts. With sharp knife, shred lettuce.
  • To serve: Cover a large round serving platter with shredded lettuce. Place one whole tomato, cut into 8ths and reassembled, in the very center of the plate. Arrange the 8 breast halves on lettuce in a circle around this tomato. Spoon tonnato over each breast, covering it completely. Garnish each breast with a whole reserved anchovy fillet. Place tomato wedges between breasts Garnish with watercress.

This is my absolute favorite of all the Cooking School recipes! It's an especially tasty was of using up your leftover holiday bird or is worth cooking up a breast for. (See *recipe#132827* for directions.) Cooked chicken meat can be used, but turkey gives an even richer flavor. This dish is fit for company but is also good for OAMC as it freezes well.

3/4 cup butter or 3/4 cup margarine
3/4 cup flour
3 teaspoons salt
1/8 teaspoon nutmeg
1 quart milk
2 cups turkey broth (recipe follows)
4 egg yolks
1 cup heavy cream
1/2 cup dry sherry
1 (1 lb) package thin spaghetti
6 cups leftover cooked turkey or 6 cups cooked chicken, into into 1 . 5-inch pieces
2 (6 ounce) cans whole mushrooms, drained
1 (8 ounce) package sharp cheddar cheese, grated (2 cups)

Steps:

  • First make the sauce: Melt butter in a large saucepan. Remove from heat and stir in flour, salt and nutmeg until smooth. Gradually add milk and stock or broth; bring to boiling, stirring constantly; boil 2 minutes or until slightly thickened.
  • Using a wire whisk beat the egg yolks in a small bowl with the cream. Beat in a little of the hot mixture. Pour back into saucepan; cook over low heat, stirring constantly, until sauce is hot -- do not boil. Remove from heat. Stir in the sherry.
  • Meanwhile, in a large stockpot, bring 6 quarts of water to boiling; add 2 tablespoons salt and the spaghetti; cook as label directs; drain in colander. Return spaghetti to kettle. Add 2 cups sauce; toss lightly until spaghetti and sauce are well combined.
  • Combine turkey and mushrooms in a large bowl. Add 2 cups of sauce to this mixture and mix well.
  • Divide the spaghetti in half and place in two 12 x 8 x82-inch baking dishes, arranging around the edges. Spoon half of the turkey mixture into the center of each dish. Reserve rest of sauce for later use. Sprinkle cheese over spaghetti in each dish. Cover with foil; refrigerate 1 hour or overnight.
  • About 1 hour before serrving, preheat oven to 350 degrees. Bake, covered 45 minutes. reheat sauce; spoon over spaghetti in each dish.
  • Note: The above preparation makes a company-attractive casserole. However I usually prefer to combine all the sauce with the spaghetti, turkey and mushrooms in step 3.
  • Another note: To freeze: Line one of the baking dishes with foil; assemble casserole as directed. Fold foil over to seal; freeze right in the dish. When frozen, lift out foil; remove dish from freezer. To serve: Unwrap, return to casserole dish and let stand 1 hour to thaw. Bake, covered for 1 hour at 350 degrees or until bubbly.
  • One more note; To make turkey stock: Break up carcass. Place in a stock pot with 3 cups water, 3 parsley sprigs, 2 carrots (pared and halved) 3 celery tops, 2 onions (halved), 2 teaspoons salt, 10 black peppercorns, 1 bay leaf. Bring to boiling; rduce heat; simmer, covered 2 hours. Strain. Boil gently, uncovered, to reduce stock to 2 cups. This may be done ahead.

"Tonno" is Italian for tuna, and the name of this dish refers to the primary ingredient in the sauce. The sauce can also be served chilled over room-temperature chicken.

1 tablespoon olive oil
Two 12-ounce chicken breasts, boned and halved
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
4 cups arugula leaves (1 large bunch)
1 small carrot, peeled and finely chopped
1 rib celery, strings removed and finely chopped
1 small onion, peeled and finely chopped
1 medium clove garlic, finely chopped
1 cup dry white wine
3 fresh sage leaves
1 sprig rosemary
1/2 tablespoon capers, drained
One 6-ounce can light tuna, drained of oil
Salt and freshly ground pepper, to taste

Steps:

  • Heat oven to 425 degrees. Heat oil in ovenproof skillet over high heat. Season chicken with salt and pepper. Cook in skillet, skin-side down, until brown, 3 to 4 minutes. Flip; cook 1 minute. Remove chicken; add vegetables. Reduce heat to medium low; cook 5 to 6 minutes.
  • Add wine, and bring to boil. Stir in the herbs, capers, and tuna; add the chicken. Transfer skillet to oven, and roast until chicken is cooked through, about 15 minutes. Remove chicken; transfer to cutting board.
  • Discard herbs. Let tuna cool; puree until smooth. Add mayonnaise and juice. Slice chicken; arrange over arugula. Top with chilled sauce

1/2 cup sliced onion
1/2 cup sliced leek, washed well
1 cup sliced white button mushrooms
1/2 cup diced carrot
1/2 cup diced celery
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
5 cups water
4 (6 ounce) boneless skinless chicken breast halves (each about 6 ounces)
8 ounces cooked angel hair pasta or 8 ounces cooked orzo pasta
2 ounces anchovies packed in oil
3 ounces tuna (preferably in oil)
1 large egg yolk
1 tablespoon dijon-style mustard
1 tablespoon fresh lemon juice (not the bottled junk)
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon Tabasco sauce
1/2 cup extra virgin olive oil
1 tablespoon drained capers
4 cups arugula leaves, washed and dried (loosley packed)
1 tablespoon drained capers
1 tablespoon minced fresh chives

Steps:

  • PREPARATION FOR THE CHICKEN:.
  • Combine the onion, leek, mushrooms, carrot, celery, salt, pepper, and water in a large saucepan (preferably stainless steel).
  • Bring to a boil, reduce the heat to medium-low, and boil gently for 5 minutes.
  • Add the chicken breasts, and cook them just until the broth returns to a boil, about 4 minutes.
  • Boil for about 15 seconds, then remove the pan from the heat, cover, and let the breasts stand in the broth for 12 to 15 minutes.
  • THE SAUCE:.
  • Set aside 4 of the anchovies for the garnish.
  • Put the tuna and the remaining anchovies in a food processor, along with the oil from both of the cans.
  • Add the egg yolk, mustard, lemon juice, water, salt, and Tabasco and process for a few seconds.
  • With the processor running, add the olive oil in a slow stream and process for a few seconds, or until it is well incorporated and the sauce is smooth.
  • At serving time, divide the arugula among four plates.
  • Remove the chicken breasts from the broth with a slotted spoon.
  • Cut each breast into 4 crosswise slices, and arrange the slices on top of the arugula.
  • Generously coat the breasts with the tuna sauce and top each serving with 1 of the reserved anchovy fillets.
  • Sprinkle on some capers and chives and serve at room temperature.
  • Reheat the broth and add angel-hair pasta or orzo, divide among four bowls, and serve with the chicken.
  • Enjoy!

2 quarts water
1 teaspoon salt
2 cups elbow macaroni
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
2 cups milk
1/4 cup pimiento, chopped
1/4 cup green pepper, chopped
2 cups cheddar cheese, coarsely grated
1 cup chicken, cooked and slivered
1 large tomatoes, cut into wedges

Steps:

  • Preheat oven to 375. Put water in a large sauce pot, add salt, and bring to a rolling boil over high heat.
  • Add macaroni all at once and stir with a fork. Return water to a boil and reduce heat to moderately low. Simmer for 4 to 5 minutes or until tender. Do not overcook. Drain.
  • Meanwhile, put the butter in a medium-sized saucepan and heat over medium heat.
  • When butter is melted, remove from heat and stir in flour, salt, pepper, and mustard. When mixture is smooth, gradually add milk, stirring until no lumps of flour remain.
  • Return saucepan to heat and cook over moderately high heat, stirring constantly, until milk mixture comes to a boil and thickens slightly.
  • Add chopped pimiento and chopped green pepper. Reduce heat to low and simmer 1 minute longer.
  • Stir 1 1/2 cups of the grated cheddar cheese, the cooked drained macaroni, and the slivered chicken into the milk mixture.
  • Pour into a shallow 2-quart round or oval baking dish. Sprinkle the rest of the grated cheddar cheese over the top of the macaroni mixture.
  • The casserole can be prepared to this point and covered in foil or plastic wrap in the refrigerator for a couple days or until ready to bake.
  • Or, place casserole on center rack in oven and bake for 20 minutes (longer if casserole has been chilled). Cook until macaroni is hot and bubbly and the cheese is melted.
  • Remove from oven. Arrange tomato wedges on top of casserole and serve.
