2 large sweet potatoes, (4 cups mashed)
3 tablespoons salted butter, melted (or more to taste)
¼ cup pure maple syrup (or more to taste)
3 tablespoons bourbon whisky
Zest of 1 orange
1 teaspoon ground cinnamon
¼ teaspoon ground cardamom
1 teaspoon kosher salt, or to taste

Steps:

  • Preheat oven to 400 degrees F.
  • Wash the sweet potatoes and pat them dry. Poke several holes in each potato with a fork and wrap them in foil. Place potatoes on the center wrack of your oven and roast until very soft and juices are seeping out, about 60 to 90 minutes.
  • Remove potatoes from the oven and allow them to cool enough to handle.
  • Peel the skin off of the potatoes (it should come off easily using your hands), and place the flesh in a medium-sized mixing bowl.
  • Add the remaining ingredients to the bowl and mash everything together until well combined.
  • If necessary, heat the potatoes back up on the stove top before serving.
  • Serve with butter and chopped pecans.

2 pound yukon gold potatoes, peeled and cut into 1-inch pieces
2 cup reduced-sodium chicken broth
0.75 cup applesauce
2 tablespoon butter, cut up
2 tablespoon maple syrup
1 - 2 tablespoon bourbon
0.5 teaspoon salt
4 slices crumbled, crisp-cooked bacon

Steps:

  • In a 6-quart slow cooker combine sweet potatoes, Yukon gold potatoes, and broth. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. Use a slotted spoon to transfer vegetables to a large bowl, reserving cooking liquid.
  • Mash vegetables until smooth, adding cooking liquid if needed to mash. Add applesauce, butter, syrup, bourbon, and salt. Mash until light and fluffy. Sprinkle with bacon before serving.

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Put on a baking sheet and roast until very tender and a knife easily pierces through the center, 45 to 60 minutes.
  • Let the potatoes cool slightly and then halve lengthwise. Holding the sweet potatoes with a potholder or towel, scoop out the insides and discard the skins. Pass the potatoes through a food mill or ricer into a large bowl.
  • Heat the butter, maple syrup and zest in a small skillet over medium heat until the butter is melted. Pour over the potatoes and stir to combine evenly. Season with salt and pepper.

6 lbs sweet potatoes
1 lemon, juice and zest of
3 tablespoons maple syrup
2 tablespoons light brown sugar
3 tablespoons Bourbon
8 tablespoons butter, room temperature
1 1/2 teaspoons salt
1 teaspoon white pepper
1/2 cup flour
1/2 cup packed light brown sugar
1 teaspoon salt
1/2 teaspoon white pepper
1 pinch ground thyme
1/2 cup chopped pecans
5 tablespoons butter, chilled and chopped to bits

Steps:

  • Bake whole sweet potatoes for 45 minutes to an hour at 375°F Cool for about 20 minutes.
  • Peel potatoes and put them into a large mixing bowl with lemon juice and zest, syrup, and brown sugar.
  • In a large sauce pan, heat bourbon on high until boiling. Gently and CAREFULLY, tilt the pan so it catches on fire (to burn off the alcohol). Extinguish.
  • Add potatoes to bourbon, along with the butter, salt and pepper.
  • Place mixture in a 13x9 inch baking dish. This can be refrigerated for up to 2 days before serving.
  • Mix topping ingredients together right before you are ready to serve. Sprinkle on top of dish.
  • Bake from 20 minutes at 375°F.

3/4 cup whipping cream
1/2 teaspoon cayenne pepper

Brown sugar, for garnish

Steps:

  • Place the sweet potatoes into a pot of cold water with salt and bring to a rapid boil; about 20 minutes. Drain and return back into pot to mash.
  • In a medium saucepan, combine the remaining ingredients, except the brown sugar. Allow to simmer over medium heat until butter is melted and mixture is creamy. Pour mixture over potatoes, adding a dash of salt for flavor and stir. Sprinkle potatoes with brown sugar.

1 teaspoon vanilla extract
3 eggs
1 egg yolk
3/4 cup cream
1/4 cup plus 2 tablespoons maple syrup
1/4 cup plus 1 tablespoon brown sugar
1/4 cup bourbon
1/4 teaspoon kosher salt
1/4 teaspoon grated nutmeg (preferably freshly grated)
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
A few grinds black pepper
2 2/3 cups all-purpose flour
3/4 teaspoon kosher salt
3/4 teaspoon sugar
4 ounces (8 tablespoons) chilled butter, cut into pieces
4 ounces (1/2 cup plus 1 tablespoon plus 2 teaspoons) chilled vegetable shortening, cut until pieces
1/4 to 1/2 cup cold water, as needed

Steps:

  • When it comes to fall vegetable-based pies, some individuals fancy pumpkin, while others (like me) are die-hard sweet potato fans. Both are autumnal, both marry well with the flavors of maple, spirits, and spice; but using sweet potatoes results in a denser, creamier texture. Originally created for an article in Fine Cooking magazine, this dessert is always one of my Thanksgiving pie offerings. I can't tell you how many people have said as they down the last crumb, "and I thought I didn't like sweet potato pie."
  • This is like a sweet potato custard, and you will want to take care not to overbake the filling. Check it frequently as it nears the end of its baking time and remember that it will set up a bit as it cools.
  • Serve this pie with some lightly whipped cream or, for a slightly twisted take on a tried-and-true Thanksgiving combo, garnish with some marshmallow fluff.
  • 1 (9-inch) basic pie crust, baked blind, recipe follows
  • Preheat oven to 425 degrees F.
  • Pierce the sweet potatoes at each end with a fork and place them on a foil-lined baking sheet. Roast until the potatoes are soft, about 1 hour, turning them over halfway through the baking time. Cool, peel, and put the flesh through a food mill or mash smoothly with a potato masher. You should have 2 cups of puree.
  • Turn oven down to 375 degrees F.
  • Combine the puree with all the remaining ingredients for the filling. Whisk until well combined and smooth. Pour the filling into the partially baked pie shell. Bake for about 45 to 50 minutes, until the filling is just barely set. When the rim of the pie plate is nudged, the very center of the filling should barely move.
  • Cool the pie to room temperature. It can be made several hours or up to 1 day in advance.
  • Place the flour, salt and sugar in the bowl of a food processor with a steel blade. Pulse to combine.
  • Add the chilled butter and shortening; pulse until the fat is evenly cut in and the mixture resembles coarse cornmeal. Remove to a mixing bowl.
  • Working quickly, gradually add enough cold water, while tossing and stirring with a fork, until the dough just begins to come together. Divide the dough into 2 even portions, flatten into rounds, wrap in plastic, and chill for a few hours or overnight.
  • Roll out 1 portion and fit it into a 9-inch pie pan. Crimp edges. Reserve remaining portion for another use. Line shell with foil or parchment paper and fill with dry rice or beans. Blind bake in a preheated 375 degree F oven for 20 minutes. Remove foil and beans before filling.

This recipe is a grown-up take on sweet potatoes with brown sugar and marshmallows. A generous swirl of browned butter and maple syrup give the potatoes an earthy sweetness and great depth of flavor, while salted, toasted pecans sprinkled on top add a savory crunch. To save time on Thanksgiving, toast the pecans and make the brown butter up to a day in advance. Simply store the pecans in an airtight container, and the brown butter in the refrigerator. (Gently melt the butter in the microwave before using.)

4 pounds sweet potatoes, peeled and cut into 1-inch cubes
3/4 cup raw pecans (optional)
2 teaspoons kosher salt, plus more to taste
10 tablespoons unsalted butter (1¼ sticks)
1/2 cup whole milk
3 tablespoons maple syrup, plus more to taste
1/2 teaspoon black pepper, plus more to taste

Steps:

  • Bring a large pot of water to a boil. Add the sweet potatoes and cook, uncovered, stirring occasionally, for about 15 to 20 minutes, until very tender when pierced with a fork.
  • Meanwhile, toast the pecans (optional): Place the pecans in a medium sauté pan. Cook over medium-low heat, tossing often, for 3 to 5 minutes, until lightly toasted. Transfer to a cutting board, and roughly chop. Sprinkle generously with salt, and set aside. Wipe out the pan with a paper towel.
  • In the same pan, melt the butter over medium heat. Cook, watching carefully and stirring occasionally with a silicone spatula, until brown bits appear and the butter gives off a nutty aroma, about 3 minutes. Remove from the heat immediately. Carefully pour the melted butter into a small heatproof bowl, scraping the pan with a spatula to get all of the brown bits. Set aside.
  • Drain the cooked potatoes, and add them to the bowl of a stand mixer fitted with the paddle attachment. Add the milk, 3 tablespoons maple syrup, 2 teaspoons salt and pepper and mix on medium-low speed until the potatoes are creamy and smooth. Add the reserved brown butter and mix until just incorporated.
  • Transfer the potatoes to a shallow serving bowl, sprinkle with the reserved pecans, and drizzle with maple syrup. Serve warm. (The potatoes may be kept warm, covered, in a low oven for up to 30 minutes. Add the pecans just before serving.)

  • Directions Preheat the oven to 375 degrees F. Place the sweet potatoes on a foil lined baking sheet and roast for 45 minutes to 1 hour, until very soft to the touch. Remove from the oven and let cool 20 minutes. When cool enough to handle, peel them by hand and put the flesh in the bowl of a mixer. Using a paddle attachment, mix in the lemon zest and juice, maple syrup and brown sugar. Place the bourbon in a small saucepan and place over high heat. Let it come just to the boil and then tilt the pan slightly towards you to set it aflame*. Add to the potatoes along with the butter. Mix well. Add salt and pepper and transfer to a 13 by 9-inch oven-safe casserole dish. (Recipe can be made to this point up to 2 days before, refrigerated.) Sprinkle topping over potatoes and bake for 20 minutes until the top is golden brown. Alternatively, you may simply sprinkle the top of the casserole with a little bit of brown sugar and 1/2 cup chopped pecans. *This method does not "burn off" the alcohol Pecan Crumb Topping: Mix the flour, brown sugar, salt, pepper, thyme and pecans together in a small bowl. Add the butter and work with your fingers until a crumbly mass forms.
