Acorn squash is tossed with a sweet and savory balsamic-maple dressing and then baked until tender and thoroughly delicious.

1 large acorn squash (1-1/2 lb.)
1/4 cup KRAFT Balsamic Vinaigrette Dressing
3 Tbsp. maple-flavored or pancake syrup
1/2 tsp. ground nutmeg

Steps:

  • Heat oven to 400ºF.
  • Cut squash lengthwise in half; remove and discard seeds. Place squash halves, cut sides down, on cutting board. Cut each half crosswise into 6 slices; place in large bowl.
  • Mix remaining ingredients until blended. Add to squash; toss to evenly coat. Spread onto foil-covered rimmed baking sheet.
  • Bake 45 min. or until squash is tender, turning after 25 min.

1 medium buttercup squash (about 2 pounds), stemmed, seeded and cut into 1-inch wedges
4 tablespoons unsalted butter, melted
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1/2 cup maple syrup

Steps:

  • Position an oven rack in the center of the oven and preheat to 425 degrees F.
  • Toss the squash with the butter, thyme, 2 teaspoons salt and 1/4 teaspoon pepper on a rimmed baking sheet until completely coated. Roast, tossing once halfway through, until the squash is just tender and beginning to brown on the edges, about 30 minutes.
  • Remove the squash from the oven, drizzle with the maple syrup and toss to coat. Continue to roast until the squash is tender and browned all over and the syrup is beginning to caramelize, about 10 minutes more.

1 1/2 to 2 pounds butternut squash
extra-virgin olive oil
salt and freshly ground black pepper
1 tablespoon artisan balsamic vinegar (Aceto Balsamico Tradizionale di Modena or Reggio-Emilio) or 3 to 4 high-quality commercial balsamic vinegar

Steps:

  • Preheat the oven to 400°F. Line a cookie sheet with foil. Cut the squash lengthwise in half. Seed and cut it into 3- to 4-inch squares, with skin intact. Score the flesh with crosshatch cuts about 1/2 inch deep. Rub all over with olive oil.
  • Set the pieces, skin side down, on the cookie sheet and sprinkle with salt and pepper. Bake 45 minutes, or until easily pierced with knife and lightly browned. Serve hot or at room temperature, sprinkled with balsamic vinegar.

1/4 cup maple syrup
2 tablespoons good quality balsamic vinegar
1 tablespoon fresh lemon juice
4 teaspoons unsalted butter
1 pinch freshly grated nutmeg

Steps:

  • Place squash, cut side up in a baking dish.
  • Stir together maple syrup, vinegar, and lemon juice and divide equally among cavities.
  • Dot each cavity with butter.
  • Baste exposed sides and top of squash with syrup mixture.
  • Bake at 375F for 20 minutes.
  • Baste again.
  • Sprinkle cavities with grated nutmeg and bake 20 minutes more, or until squash is tender when pierced with a fork.
  • Serve warm.
