This Maple Pecan Baked Oatmeal is filled with wholesome oats, studded with chopped pecans and lightly sweetened with pure maple syrup. Fancy enough to serve for brunch, but awesome as a make-ahead breakfast for the week as well.

2 cups old fashioned rolled oats
1/2 cup pecans (chopped and divided)
1/4 cup pure maple syrup (plus more for serving)
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
Scant 1/2 teaspoon fine-grain sea salt
2 cups unsweetened almond milk
1 large egg (or 1 Tablespoon flaxseed)
2 Tablespoons melted coconut oil
2 teaspoons pure vanilla extract
2 ripe bananas (sliced)
cooking spray

Steps:

  • Preheat the oven to 375°F and spray an 8x8 inch square baking dish with cooking spray.
  • Mix dry ingredients: In a large bowl, mix together the oats, half the pecans, baking powder, cinnamon, and salt.
  • Add in wet ingredients: Add in the milk, maple syrup, egg, coconut oil, vanilla and bananas. Stir well to combine.
  • Carefully pour oatmeal mixture into the prepared baking dish.
  • Scatter the remaining pecans across the top.
  • Bake: Bake for 35 to 40 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle each portion with maple syrup if you want it a bit sweeter.

1/4 cup almonds, sliced
2 tablespoons maple sugar or 2 tablespoons brown sugar, packed
2 tablespoons maple syrup
1 dash salt
3 cups milk
ground cinnamon (optional)

Steps:

  • In a greased, square baking dish of 8 inches , mix oatmeal, almonds, maple sugar, maple syrup and salt. Add milk and stir.
  • Cook in a preheated oven of 350 F for about 40 minutes or until oatmeal is tender and milk is absorbed. When ready to serve, sprinkle with cinnamon, if wanted.

3 cups old-fashioned oats
2 teaspoons baking powder
1-1/4 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 large eggs
2 cups fat-free milk
1/2 cup maple syrup
1/4 cup canola oil
1 teaspoon vanilla extract
1 large apple, chopped
1/4 cup sunflower kernels or pepitas

Steps:

  • Preheat oven to 350°. In a large bowl, mix the first five ingredients. In a small bowl, whisk eggs, milk, syrup, oil and vanilla until blended; stir into dry ingredients. Let stand 5 minutes. Stir in apple., Transfer to an 11x7-in. baking dish coated with cooking spray. Sprinkle with sunflower kernels. Bake, uncovered, 25-30 minutes or until set and edges are lightly browned.

1 1/2 cups instant maple oatmeal (I use Maypo)
1 teaspoon baking powder

Steps:

  • Beat oil, sugar and milk together.
  • Add remaining ingredients and mix well.
  • Pour into a greased 9-inch square baking pan.
  • Bake at 350F for 30 minutes.
  • NOTE: This can be made with Splenda substitute as well.
  • SERVING SUGGESTIONS: Make this personal by adding nuts, fruits,etc. to your liking. This also is great plain served with a bit of cool milk -- or a dollop of vanilla ice cream.

1 cup quick-cooking rolled oats
1/2 cup milk
3/4 cup maple syrup
1/4 cup margarine or 1/4 cup butter, melted
1 egg
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 400 degrees.
  • Grease bottoms only of 12 muffin cups or line with paper baking cups.
  • In large bowl, combine oats and milk; let stand 5 minutes.
  • Add syrup, butter and egg; blend well.
  • Add flour, baking powder, cinnamon and walnuts; stir just until dry ingredients are moistened.
  • Fill greased muffin cups 2/3 full.
  • Bake 15-20 minutes or until toothpick inserted in the center comes out clean.
  • Remove immediately from pan. Serve warm.
  • Note: For mini muffins, bake 8-10 minutes or until done.
