KALE SALAD RECIPE (WITH HONEY DIJON VINAIGRETTE)

Steps:
- Remove stem from kale and chop into bite sized pieces and place in a large salad bowl.
- Add in salt and massage the kale with your hands until it starts to turn a darker green. This will make the kale more tender and easier to eat. Don't massage it like bread dough, it's more like you are taking handfuls of kale and scrunching it in your hands. You want to do this for about 1-2 minutes or until it turns a dark green. You should see a noticeable difference in texture between the massaged kale and the untouched kale.
- Add in the rest of the ingredients to the kale salad.
- Whisk together dressing ingredients and pour over salad ingredients.
- Toss salad to combine salad and dressing.
- Enjoy right away or let it marinade in the salad dressing for 20-30 minutes before serving for best flavor. Enjoy!

SPINACH AND KALE SALAD WITH HONEY DIJON VINAIGRETTE
This Spinach and Kale Salad with Honey Dijon Vinaigrette has been my family's favorite! It's a great spin on a traditional spinach salad.

Steps:
- Either on a large serving platter or divided onto four dinner plates, arrange the spinach and kale and top with the remaining ingredients, up to the hemp seeds.
- In a small bowl or in a jar with a tight fitting lid, combine the dressing ingredients and either whisk or shake until emulsified.
- Top the salad with the dressing just before serving. Store any additional dressing covered in the fridge.
HONEY DIJON VINAIGRETTE

This salad is from a local deli / caterer in town, CHOW :D The first time I had it, I was in love with kale. Cooking time is chill time. This is great even the next day. - Combine the four salad ingredients in a large bowl.
- Whisk together the vinaigrette ingredients and toss with the salad. * I like to massage the kale and dressing at this point. Just massage it with both hands for a few minutes. Toss in any additional fruits or berries.
- Refrigerate for at least one hour prior to serving to allow the flavors to develop. Serve and Enjoy!
- This is even better the next day and hold up well w/o wilting.
- NOTE: Use any type of nut or seed or fresh fruit. Try adding mango, watermelon or blueberries to the mix!

Everyone always asks for the recipe when I bring this salad to parties. We all love it so much, my friends and I just refer to it as: 'The Kale Salad'.

Steps:
- Place kale in a large serving bowl; add 1 teaspoon olive oil and 2 pinches salt. Gently massage the oil and salt into kale. Set aside to allow kale to soften, about 10 minutes.
- Combine 1/4 cup olive oil, lemon juice, Dijon mustard, maple syrup, cumin, garlic powder, cayenne pepper, salt, and pepper in a plastic or glass container with a lid. Cover container and vigorously shake until dressing is light yellow and evenly combined.
- Layer carrots, roasted corn, tortilla chips, almonds, and smoked cheese on top of kale. Drizzle dressing over salad. Mix salad using tongs to evenly distribute. Gently stir eggs into salad.
