Mangosteen, the Queen of Tropical fruits, is native to Malysia. Garcinia mangostana is its botanical name.

Number Of Ingredients 5

2/3 cup mangosteen, chopped
2/3 cup dry champagne
1 egg white
50 g sugar
6 slices limes

Steps:

  • Peel the fruit, chop or dice the flesh and then push through a fine sieve.
  • Stir the champagne into the puree.
  • Whip up the egg white until thick and then add the sugar and re-beat.
  • Fold the eggwhite mixture into the fruit puree.
  • Freeze.
