HONEYED SNAPPER KEBABS
If you marinade the fish for 1/2 hour at room temperature your end result will be a subtle and distinctive flavour. Be careful not to overcook the fish or it will become dry and flavourless. You may substitute with any fresh firm fish you like.

Steps:
- Sauce.
- In a medium pan combine, butter, lemon juice, parsley, soya sauce, honey, salt and hot sauce, bring to boil over medium heat for 3 minutes to blend seasonings, remove from heat, stir and set aside until needed.
- Kebabs.
- Wash and dry fish, cut into 1 1/2" cubes and set aside.
- Cut orange peppers into 1" squares and pineapple into 1 1/2" cubes, also cut each bacon slice into 4 peices.
- Now assemble your 4 kebabs in any fashion you desire; using 4 long skewers and all of the fish, fruit, vegetables and bacon.
- Place the prepared kebabs in a deep dish and pour the sauce over the skewers, let them marinade at room temperature for 30 minutes.
- Cook on grill or broiler for 5 minutes, baste and turn, cook 4 minutes longer (or until fish is done) baste and remove from heat.
- Enjoy!
GRILLED SALMON STEAKS WITH CILANTRO-GARLIC YOGURT SAUCE
This glaze will work on virtually any protein you can think of. Even tofu. Try it on shrimp, black bass or snapper fillets, chicken kebabs, or lamb chops.

- Prepare a grill for medium-high heat; oil grate. Remove and discard seeds from 1 chile. Purée both chiles, garlic, cilantro, yogurt, oil, honey, and 1/4 cup water in a blender until smooth; season well with salt. Transfer half of sauce to a small bowl and set aside for serving.
- Season salmon steaks lightly with salt. Grill, turning once or twice, until flesh is starting to turn opaque, about 4 minutes. Continue to grill, turning often and basting with remaining sauce, until opaque all the way through, about 4 minutes longer. Serve with reserved sauce alongside.
HONEY CHICKEN KABOBS
A delicious clean-eating recipe for grilled honey chicken kabobs with a simple honey-based marinade.

Steps:
- In a large mixing bowl, combine lemon juice, honey, olive oil, mustard and crushed garlic.
- Stir in thyme, sea salt and pepper.
- Add chicken and let soak for 10 minutes.
- Then add zucchini, bell pepper and onion.
- Toss until well coated.
- Let marinate in the refrigerator for 1-2 hours.
- Soak wooden skewers in cold water for 30 minutes. This keeps them from burning.
- Preheat grill to medium.
- Thread the chicken and vegetables onto the skewers.
- Basted the assembled kabobs generously with the marinade mixture.
- Grill on medium heat, turning every few minutes to make sure they cook evenly.
- Grill until juices run clear when chicken is pierced with a knife, about 10-12 minutes, or until the chicken reaches the safe miminum internal temp of 165 degrees F.

Steps:
- 1. If using wood skewers, soak in water for 15 mins. Spray grill grates w/ cooking spray or oil grates w/ canola oil. Heat grill to medium.
- 2. In bowl, combine hoisin sauce, honey, ginger and garlic. Whisk well. Alternately place red bell pepper, yellow bell pepper, chicken and mushrooms on skewers. Brush w/ 1/2 of the sauce.
- 3. Place kebabs on grill. Grill about 10 min, turning occasioally, and basting w/ remaining sauce.
