MANGO COOLER
Made with juicy mango and fresh mint, this delicious drink is instantly cooling and refreshing.

Steps:
- Remove the skin and cut the juicy flesh off the mangos, then place in a blender or food processor, along with any juice left on the chopping board.
- Pour in the milk, finely grate in the lime zest and squeeze in the juice.
- Add 1 handful of ice cubes, then pick in the mint leaves and blitz until smooth.
- Taste, and add a little honey, if needed, then give it another quick blitz, before pouring into glasses and serving.

Steps:
- Melt Butter (Can substitute Oil or Spray Oil) in pan and brown chicken breasts.
- ADD onion and cook on low for about 5 minutes.
- ADD Chicken Stock and Wine and STIR in cream and 2 Mangoes that have been peeled and mashed or pureed; NOTE: Make sure Mangoes have no seeds.
- ADD Chicken Breasts and season to taste; HEAT until chicken is totally cooked and remove.
- GARNISH with slices from half a Mango that has been peeled and-- ENJOY!

- Stir sugar and 1 1/2 tablespoons hot water in a large pitcher until dissolved. Add wine, cucumber, and mango. Remove leaves from 6 sprigs of mint; stir into pitcher. Cover and chill for at least 3 hours and up to 6 hours.
- Stir ginger ale into pitcher. Fill 6 large wineglasses with ice. Divide wine cooler among glasses. Garnish with remaining 6 mint sprigs.
