CRUNCHY JICAMA AND MANGO SALAD WITH CHILE AND LIME



Crunchy Jicama and Mango Salad with Chile and Lime image

1 medium jicama (about 1 pound)
2 small cucumbers
3 medium mangoes
1/4 cup roughly chopped cilantro leaves, plus sprigs, for garnish
2 teaspoons powdered dried chile - any medium heat kind is fine
2 limes, juiced
Kosher salt

Steps:

  • Peel and cut the jicama into long thin strips. Slice the cucumbers in half, scoop out the seeds and then cut into strips similar in size to the jicama strips. Peel the mangoes, cut the cheeks off, then slice into wedges. Combine all the ingredients in a large mixing bowl with the chopped cilantro, powdered chile and lime juice. When ready to serve, season with a little salt and garnish with fresh cilantro sprigs.

1 Recipe Chili Lime Chicken
1 large head romaine lettuce (rinsed, chopped)
4 cups baby spinach
2 mangos (chopped)
1 pint cherry tomatoes (halved)
1/2 English cucumber (sliced, halved)
1 red or orange bell pepper (chopped)
4 clementine oranges (peeled segmented)
1 avocado (sliced or chopped)
1/3 cup diced red onion
1 cup raw cashews (toasted in a skillet)
2 tablespoons chopped cilantro
1/3 cup extra virgin olive oil
3 tablespoons lime juice
1 tablespoon apple cider vinegar
1 1/2 teaspoons Lime zest (zest of one lime)
2-3 tablespoons honey to taste ((3 for sweeter))
1 teaspoon Dijon mustard
1/2 tsp EACH garlic powder, salt
1/4 teaspoon pepper

Steps:

  • Prepare Chili Lime Chicken according to recipe directions (click "1 recipe chili lime chicken" in the ingredients to be taken to the recipe). While the chicken is resting, you can prep the vegetables and make the dressing.
  • Add Salad Dressing ingredients to a medium bowl or jar. Whisk to combine and refrigerate until ready to use. You may need more or less honey depending on how sweet your fruit is and personal "tangy" preference.
  • Add chopped romaine lettuce and baby spinach to a large salad bowl followed by all remaining salad ingredients. Top with sliced or chopped chicken.
  • You can either drizzle with dressing and toss OR if expecting leftovers, drizzle dressing over individual servings. Serve immediately.

Inspired by those stops, she created this larger format fruit salad that has a hint of spice. The result is a refreshing and irresistible snack.

2 cups cubed mango
2 cups cubed papaya
2 cups cubed pineapple
2 cups cubed watermelon
1 cup English cucumber chunks
1/2 cup unsweetened coconut flakes
2 oranges, sliced into wheels
Juice of 1 lime
Chile-lime salt, such as Tajin, to taste

Steps:

  • Mix the mango, papaya, pineapple, watermelon, cucumber, coconut flakes and oranges in a large bowl. Stir in the lime juice. Sprinkle with the chile-lime salt to your desired spiciness level.

If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

  • Cut flesh of wide sides by slicing them in cross-hatch pattern, making sure not to cut through skin.
  • To remove mango pieces, push skin inside-out so cut mango pieces fan out, and cut pieces from skin. Cut two remaining narrow sides from pit by cutting around pit. Peel and cut mango pieces. Repeat for remaining mango.
  • In medium bowl, add mangoes. In small bowl, mix lime peel, chile pepper and salt; sprinkle on top of mango mixture, and mix well. Serve.
