HEALTH NUT OATMEAL
A great way to get your fiber and nutrients! You can make it up in big batches and portion it into small containers to grab and go in the morning. Adapted from Rachael Ray's Yum-O Family cookbook.

Steps:
- Mix the oatmeal, milk, and 4 cups of water in a large, deep saucepan and bring to a boil over medium high heat. When it boils, quickly lower heat to very low. Stir in brown sugar, dried cranberries, flaxseed meal, sunflower seeds and salt. Cook at a low simmer for 15-20 minutes, or until very thick and creamy.
- Stir often to prevent burning.
- Serve with additional milk and sprinkle with a tablespoon of the Grape nuts cereal if desired, or cool and refrigerate to reheat later in the week.

HEALTH NUT BANANA BAKED OATMEAL
This is my version of baked oatmeal with lower fat, higher protein and fiber. This is a filling and very tasty, healthy snack that is also low in sugar and fats. Yum!

Steps:
- Preheat oven to 325 degrees F.
- In a large bowl combine oatmeal, cinnamon, nutmeg, sugar, salt and chopped walnuts.
- Bring milk to almost a boil add mashed bananas, vanilla, and protein powder together until well mixed.
- Combine wet and dry ingredients together and mix well.
- Pour into greased casserole dish.
- Bake at 325 for 45 minutes.
- Serve hot or chilled in bars.
HEALTH NUT OATMEAL COOKIES
Anyone who knows me will vouch for the fact that cookies are not my culinary strong point. These cookies turned out well for me so I would like to share them, figuratively-speaking. I like that this recipe has a lot of heart-healthy ingredients also.

Steps:
- In a large bowl, beat the butter with the brown sugar until fluffy.
- Beat in the egg, vanilla and nutmeg.
- In a separate bowl, mix the rolled oats, flour, baking powder, baking soda and salt.
- Stir into the butter mixture along with the hazelnuts, wheat germ, sunflower seeds and flax seed and mix until blended.
- Drop by heaping tablespoonfuls, about 2 inches apart, onto greased or parchment paper-lined baking sheets.
- Bake in the top and bottom thirds of a 375 degree F oven, switching and rotating the sheets halfway through, for 10 minutes or until golden.
- Let cool on sheets on racks for about 2 minutes.
- Transfer to racks; let cool completely.
