FRESH MANGO BREAD



Fresh Mango Bread image

I make lots of these during mango season and give away to friends and family. It's great for breakfast or afternoon snack! Sometimes I even stick it in the toaster for a different texture.

Number Of Ingredients 10

2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar, can substitute 1/4 cup for dark brown sugar (better crust)
2 large eggs
3/4 cup vegetable oil
2 1/2 cups mangoes, peeled and chopped
1 teaspoon lemon juice
1/4 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Combine all of the dry ingredients.
  • Beat eggs with oil and add to flour mixture.
  • Add mangos, lemon juice and raisins.
  • Mix well.
  • Pour into 2 greased 8x4 loaf pans.
  • Bake for about 1 hour or until toothpick comes out clean.

2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
3 eggs
¾ cup softened butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
2 cups chopped mango
½ cup shredded coconut
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
  • Sift flour, baking soda, cinnamon, and salt together in a large bowl; make a well in the center.
  • Whisk eggs, butter, sugar, and vanilla extract together in a separate bowl. Fold mango, coconut, and walnuts into the egg mixture; pour resulting mixture into the well in the center of the flour and mix well. Pour batter into prepared loaf pans and let sit at room temperature for 20 minutes.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

My Hawaiian family got me every type of fruit bread you can think of while I was in Maui. I fell in love with all of them, and now that summer is here I decided to take a shot at this bread recipe. So here is my first attempt at mango- banana bread!

1 mango - peeled, seeded, and chopped
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
½ teaspoon pumpkin pie spice
¾ cup unsalted butter, softened
½ cup white sugar
½ cup brown sugar
3 large eggs
1 ¼ teaspoons vanilla extract
½ cup mashed banana
½ cup toasted shredded coconut
¼ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Take about 1/4 of the chopped mango and puree in a food processor or blender until it is the same consistency as mashed bananas; it should yield about 1/2 cup pureed mango. Reserve remaining chopped mango.
  • Sift flour, baking soda, cinnamon, salt, and pumpkin pie spice together in a large bowl.
  • Combine butter, white sugar, and brown sugar in a small bowl until blended; mix in eggs and vanilla extract. Fold into the dry ingredients until just combined. Fold in chopped mango, pureed mango, banana, coconut, and walnuts. Let sit for 10 to 15 minutes. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes.

Mango Glaze for Fish, Chicken, or Pork image

1 1/2 cups rice wine vinegar
1/2 cup sugar
1 teaspoon minced jalapeno
1 tablespoon minced ginger root
2 ripe mangos, peeled, seeded, and sliced
3 tablespoons lime juice

Steps:

  • Heat the vinegar in a saucepan over medium heat. Add the sugar and cook until thickened slightly. Add jalapeno, ginger, and mango and continue cooking until softened. Add the lime juice. Transfer to a food processor and puree until smooth. Strain, if necessary. Consistency will be thick and jam-like, but can be thinned to more of a glaze consistency with honey or water.

A soft and tender mango loaf cake given an extra zing with a fresh passion fruit glaze. Easy to make and the ideal crowd-pleaser. It's also perfect with your afternoon tea!

3/4 cup unsalted butter or 3/4 cup margarine
1 cup caster sugar
3 large eggs
1/2 teaspoon vanilla extract
2 1/2 cups cake flour
2 teaspoons baking powder
1 pinch salt (only if you're using unsalted butter)
1 cup mango pulp
3 passion fruit
1/2 cup icing sugar, sifted

Steps:

  • Preheat oven to 325F and grease and line a 2lb loaf tin.
  • Place the butter and sugar into a large bowl or the bowl of your stand mixer and beat until light and fluffy, about 2 minute on med-high speed.
  • Add in the eggs and vanilla extract, scraping down the sides as necessary, mix on med-high until well incorporated and smooth, around 1 minute.
  • Add the cake flour, baking powder and salt if using, mix on low-med until smooth.
  • Add in the mango purée/pulp and mix on low-medium until well incorporated, light and smooth.
  • Pour the cake batter into the lined loaf tin and level it off with a spatula/wooden spoon.
  • Place in the oven for 65-70 minutes until risen, golden and an inserted skewer into the centre comes out clean.
  • Leave to cool in the tin for at least 1 hour before transferring to a wire rack.
  • Once cool, make the glaze: Using a medium sized bowl, scrape the insides of the passion fruits into a sieve and use the back of a spoon to separate the juice from the seeds. Place seeds in a separate bowl, you can either discard them or use them as a garnish.
  • Add 1/2 cup sifted icing sugar into the passion fruit juice and mix until smooth and glossy.
  • Slowly spoon glaze all over the cooled cake and garnish with passion fruit seeds if desired.
  • Cake will keep in an airtight container, at room temp, for 3 days.

1 Cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 Cup sugar
2 Tablespoon butter, softened
1 large egg
3/4 Cup mashed, very ripe mango
1/2 teaspoon vanilla
For Ginger Glaze:
1/4 Cup water
3 Tablespoons sugar
2 inch section fresh ginger, peeled and sliced into thin rounds

Steps:

  • Prepare Mango Loaf: 1) Preheat oven to 350 degrees. 2) In a small bowl, whisk together flour, baking soda and salt. Set aside. 3) At medium speed of mixer, cream together 1/3 Cup sugar and butter. Add egg and beat well to combine. Add mango and vanilla. Beat until blended. Add flour mixture. Stir just until moist. 4) Pour batter into an 8 x 4 inch loaf pan coated with cooking spray. Bake for 45 to 60 minutes, or until cake tester inserted in center comes out clean. While loaf bakes, prepare ginger syrup: Combine water and 3 Tablespoons sugar in a small sauce pan. Bring to a simmer and stir to dissolve sugar. Add ginger. Simmer until syrup reduces to 1/4 Cup, about 30 minutes. Remove from heat, strain, and discard ginger. Let cool until warm, but not hot. Using a wooden skewer, poke holes in warm loaf while still in pan. Pour syrup over loaf. Let cool in pan on wire rack for 15 minutes. Remove loaf from pan and finish cooling completely on wire rack.

  • Heat the oven to 180°C/160°C fan/gas 4. Cream the softened unsalted butter and caster sugar in a large bowl using an electric mixer until light and fluffy. In another bowl, beat the eggs with the mango pulp.
  • In a third bowl, mix the self-raising flour, baking powder, salt, the finely grated zest of 2 limes and the ground ginger. Add a third of the mango/egg to the butter/sugar mix, then add a third of the dry mix. Stir until just combined. Repeat twice.
  • Add the stem ginger in syrup, then beat until smooth. Fully line a 900g deep loaf tin with non-stick baking paper, then spoon in the batter. Bake for 55-60 minutes or until risen and a skewer pushed into the middle comes out clean.
  • Mix the lime juice with the natural yogurt, drizzle half over the cooled cake, then drizzle with a little mango pulp and sprinkle over grated lime zest. Serve with the remaining lime yogurt and mango pulp.
