1/2-3/4 cup sugar, depending how sweet u want it
1/2-3/4 cup powdered milk
1 (170 g) container cream
2 -3 big ripe mangoes, 2 chopped and 1 sliced,for garnish
24 ladyfingers
maraschino cherry, if desired

Steps:

  • Blend the first 5 ingredients (except mango slices) to make mango cream mixture.
  • Lay ladyfingers on a 9x9 inch dish or pan.
  • Top with mango cream mixture.
  • Lay second layers of ladyfingers.
  • Repeat process.
  • Garnish with mango slices and cherries.
  • Refrigerate for 5-6 hours or overnight to set.

4 tablespoons unsalted butter, melted, plus more for the pan
10 graham cracker sheets, broken in half
1 1 1/2-quart carton mango ice cream
1 1 1/2-quart carton vanilla ice cream
1 1 1/2-quart carton orange-vanilla ice cream
Whipped cream, for topping

Steps:

  • Butter an 8-inch springform pan. Cut a 7-by-26-inch piece of parchment paper; press the strip around the inside of the pan so it extends above the rim (this will allow you to build a tall cake). Lock the ring to secure the paper to the pan.
  • Pulse the graham crackers in a food processor until finely ground. Add the melted butter and pulse until combined. Press the mixture into the bottom of the prepared pan and freeze until firm, about 10 minutes.
  • Meanwhile, cut the carton of mango ice cream in half with a serrated knife. Return one half to the freezer. Transfer the other half to a stand mixer and let soften slightly, then beat with the paddle attachment on medium speed until spreadable but not melted. Spread the ice cream evenly onto the crust with an offset spatula. Freeze until firm, 30 minutes to 1 hour.
  • Rinse out the bowl, then repeat step 3 with the vanilla ice cream, using half of the carton. Freeze the cake. When firm, repeat with the orange-vanilla ice cream, using half of the carton. Return to the freezer.
  • Repeat the layers with the remaining mango, vanilla and orange-vanilla ice cream, making sure each layer is firm before adding the next. Freeze the ice cream cake until completely firm, at least 1 hour.
  • Remove the springform ring and parchment. Cover the cake with whipped cream and freeze at least 10 minutes more.

1 cup sugar
2/3 cup unsalted butter, melted
1 teaspoon vanilla extract
2 1/4 cups whole milk
1 1/2 cups cake flour
1 teaspoon baking powder

12-ounce can evaporated milk
14-ounce can sweetened condensed milk
1 tablespoon dark rum
2 large ripe mangoes
3 tablespoons sugar
1 cup heavy cream
Ground cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-inch square baking pan with vegetable oil and line the bottom with parchment paper.
  • Make the cake: Beat the eggs and sugar in a large bowl with a mixer until pale and slightly thick, about 6 minutes. Slowly beat in the melted butter, then beat in the vanilla and 1/4 cup whole milk.
  • Whisk the flour, baking powder and salt in a bowl. Sift the flour mixture over the egg mixture, then gently fold together with a rubber spatula to make a thick batter. Transfer the batter to the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes. Run a knife along the edges to release the cake from the pan.
  • Meanwhile, whisk the remaining 2 cups whole milk, the evaporated milk, condensed milk and rum in a bowl. Pierce the warm cake all over with a fork, then pour the milk mixture gradually and evenly on top, letting the cake absorb the liquid until all is used. Cover and refrigerate at least 1 hour or overnight.
  • Before serving, make the topping: Peel, pit and dice the mangoes. Puree half the mangoes in a blender with 2 tablespoons sugar. Transfer to a bowl and fold in the remaining diced mango.In a separate bowl, beat the heavy cream and the remaining 1 tablespoon sugar with a mixer until soft peaks form. Slice the cake; top each piece with the whipped cream and sprinkle with cinnamon. Serve the mango topping on the side.

1 1/4 cups graham cracker crumbs
1/4 cup chopped cashews
1/4 cup sugar
3 tablespoons butter
2 (8 ounce) packages cream cheese, room temperature
1 cup sugar
1 1/2 cups sour cream
3 eggs
1 1/2 cups mango puree (made from ripe mangoes or use thawed frozen mangoes)
1/2 teaspoon vanilla
1 teaspoon lemon juice
1 1/2 cups sour cream
1/2 cup sugar
2 tablespoons apricot jam
2 tablespoons corn syrup
1 teaspoon lime juice
1 teaspoon cider vinegar

Steps:

  • Preheat oven to 300°F.
  • Butter a 10-inch springform pan and set aside.
  • Combine first 3 ingredients (graham cracker crumbs- sugar) in a small bowl.
  • Stir in melted butter.
  • Press mixture into prepared pan.
  • Combine cream cheese and sugar in a food processor or blender; process until combined.
  • Add sour cream, eggs, mango puree, vanilla and lemon juice; process using on/off turns until combined.
  • Pour mixture into prepared crust.
  • Bake for 1 hour or until set.
  • Let cheesecake cool for 1 hour.
  • While cheesecake is cooling prepare topping by combining sour cream and sugar in a food processor until combined.
  • Preheat oven to 350°F.
  • After cheesecake is at room temperature (1 hour cooling at room temperature), top cheesecake with topping.
  • Bake 4 minutes.
  • Remove from oven.
  • Chill for at least 4 hours.
  • Prepare garnish (optional but highly recommended- if desired substitute passion fruit glaze for the following apricot glaze) Process glaze ingredients (apricot jam- vinegar) in a food processor.
  • Spread glaze over chilled cheesecake before serving.

1 ounce salted dry-roasted macadamia nuts (about 1/4 cup)
3 tablespoons granulated sugar
1/4 cup all-purpose flour
1 tablespoon unsalted butter, melted
1/4 cup fresh orange juice
1 envelope unflavored gelatin (1 scant tablespoon)
2 firm but ripe mangoes, peeled (each about 1 pound)
1/2 cup granulated sugar
3 tablespoons fresh lemon juice
1 cup heavy cream
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Lightly coat inside of 8 ring molds (each about 2 inches high and 2 3/4 inches in diameter) with cooking spray. Place on a rimmed baking sheet lined with parchment paper.
  • Make the crust: Pulse macadamia nuts and granulated sugar in a food processor until finely ground. In a bowl, combine nuts, flour, and butter with a fork until mixture resembles coarse meal. Spoon a generous tablespoon of the mixture into each mold, and press into bottom. Bake until golden brown, about 12 minutes. Let cool.
  • Make the mousse: Pour orange juice into a small saucepan. Sprinkle with gelatin, and let stand until softened, about 5 minutes. Heat over low heat, stirring, until dissolved. Remove from heat.
  • Cut one-quarter of one mango into 1/8-inch-thick slices for garnish (halve large slices); cover, and refrigerate. Coarsely chop remaining mangoes. In a blender, puree chopped mangoes, granulated sugar, and lemon juice until smooth. With machine running, add gelatin mixture in a slow, steady stream, and blend until combined. Transfer to a bowl.
  • With a whisk or an electric mixer on medium speed, beat cream until soft peaks form. Add confectioners' sugar, and beat until soft peaks return. Whisk one-third of the whipped cream into the mango mixture. Using a rubber spatula, gently fold in remaining whipped cream.
  • Divide mousse among molds, filling three-quarters full. Cover with plastic wrap, and freeze until firm, at least 4 hours (up to 1 week).
  • When ready to serve, let cakes stand at room temperature for 5 minutes. Gently push up from bottoms to unmold. Transfer cakes to serving plates; let stand 10 minutes to soften slightly. Serve garnished with mango slices.
