Steps:
- Pour 3/4 cup marinade over the shrimp in a large sealable plastic bag.
- Refrigerate and marinate for 30 minutes.
- Remove shrimp from the plastic bag and reserve the marinade.
- Thread the shrimp, pineapple chunks, onion, and bell peppers on the skewers.
- Grill or broil for 8 minutes, or until the shrimp turn pink, turning and brushing with the reserved marinade.

SHRIMP, PEPPER AND MANGO KABOBS IN GINGER MARINADE
Sauvignon Blac is great with this ginger shrimp. These shrimp, pepper and mango kabobs deliver wonderful, authentic flavor with minimal effort. A great recipe for entertaining a crowd-just double the ingredients.

- In a large bowl, whisk together ginger, garlic, rice wine vinegar, lime juice, brown sugar, oil, sesame oil, and cilantro. Add the shrimp. Toss to coat shrimp; cover and refrigerate for 1 hour.
- Remove shrimp from marinade. Pour marinade into a small saucepan. Bring to a boil and boil for one full minute. Remove from heat.
- Alternately thread shrimp, scallions, peppers and mango on skewers. Place skewers in center of cooking grate. Grill 4 to 6 minutes until shrimp turn pink and opaque, turning once halfway through grilling time, basting with reserved marinade. Serve warm over rice.

- Heat barbecue to high. In a bowl, combine the shrimp and barbecue sauce, turning to coat evenly. Build skewers, alternating shrimp, onion and mango. Finish each skewer with a slice of lime. Lightly brush each skewer with canola oil and season with pepper.

- Pour marinade over shrimp in glass bowl; stir to evenly coat shrimp. Refrigerate 30 min. to marinate.
- Heat grill to medium-high heat. Combine remaining ingredients; spoon onto center of large sheet of heavy-duty foil. Fold to make packet, leaving room for heat circulation inside. Remove shrimp from marinade; discard marinade. Thread shrimp onto 8 skewers.
- Grill packet 12 min. or until vegetables are crisp-tender, adding shrimp kabobs to the grill for the last 7 to 8 min. of the grilling time and cooking until shrimp turn pink, turning occasionally. Cut slits in foil to release steam before opening packet. Serve shrimp with the vegetables.

It's summer time, hot and humid. Barbecue weather is here and we are set to have great out door meals. In this dish I like to use an orange and habanero bbq sauce but any kind of bbq sauce will work, use your favorite. This dish is quick and easy to make and always gets great reviews from family and friends. Served with steamed rice and a fresh berry salad or watermelon slices for a nice light meal.

- Put bbq on high.
- In a bowl combine the shrimp and bbq sauce, coat evenly.
- Build the skewers with the shrimp, onion and mango alternating the ingredients as you go, topping the skewers with the lime wedge.
- Lightly brush the skewer with the oil and season with the red pepper flakes.
- Grill the skewers for 2 - 3 minutes per side, your preference until shrimp are opaque.

- Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 30 minutes in refrigerator.

- Pour chipotle marinade over shrimp in medium bowl; stir to evenly coat shrimp. Pour Italian dressing over combined remaining ingredients in shallow dish. Refrigerate shrimp and vegetables 30 min. to marinate.
- Heat grill to medium-high heat. Drain shrimp; discard any marinade. Drain vegetables, reserving dressing. Thread shrimp, peppers, zucchini and mangos onto skewers; set aside. Place corn on center of large sheet of heavy-duty foil; fold to make packet.
- Grill foil packet and kabobs 3 to 4 min. on each side or until shrimp turn pink and vegetables are crisp-tender, occasionally brushing kabobs with reserved dressing. Remove kabobs from grill. Cook vegetables an additional 4 min. or until crisp-tender.
- Cut slits in foil with sharp knife to release steam before opening packet. Serve kabobs with the corn.
