1 package (5 ounces) spring mix salad greens
1 can (11 ounces) mandarin oranges, drained
6 green onions, sliced
3/4 cup slivered almonds
1/2 cup crumbled cooked bacon
VINAIGRETTE:
2 tablespoons olive oil
1 tablespoon plus 1-1/2 teaspoons honey
1 tablespoon white wine vinegar
1/4 teaspoon celery salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk the remaining ingredients; pour over salad and toss to coat.

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vinegar
1/2 cup oil
1/2 head iceberg lettuce
1/2 head romaine lettuce
1/2 cup thinly sliced celery
2 green onions
1 can mandarin orange (11oz.)
1/4 cup sliced almonds
6 teaspoons white sugar

Steps:

  • Combine 1/4 cup white sugar, salt, pepper, vinegar and oil.
  • Heat until sugar dissolves.
  • Cool.
  • Meanwhile cook almonds and 6 tsp.
  • sugar over med-low heat in saucepan stirring constantly until sugar melts and almonds coated.
  • Cool and break apart.
  • Break apart lettuces into bite size pieces.
  • Add thinly sliced celery, cut on diagonal and thinly sliced green onions.
  • 5 minutes before serving toss with drained mandarin oranges, sugared almonds and cooled dressing.
  • If desired can add a few pieces of chunked pineapple and top with a few crunchy chow mein noodles.

1 head romaine lettuce, chopped,washed,and dried
2 (11 ounce) cans mandarin oranges, drained
6 long stem green onions, finely chopped
1/2 cup sliced almonds
2 tablespoons sugar
1/4 cup red wine vinegar
1/2 cup olive oil
1 tablespoon sugar
1/8 teaspoon red pepper flakes
fresh ground black pepper

Steps:

  • In a large bowl, combine the Romaine, drained oranges, and chopped onions.
  • Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
  • Turn onto plate and cool for 10 minutes.
  • Combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
  • Pour salad dressing over lettuce mixture; toss.
  • Sprinkle with sugared almonds.

3 drops Tabasco sauce
1 tablespoon chopped parsley
2 tablespoons sugar
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Mix the vegetable oil, vinegar, Tabasco sauce, parsley, sugar, salt & pepper in a bowl.
  • For the Salad: Combine the leaf lettuce, romaine lettuce, scallions, celery, cranberries and oranges in a salad bowl and mix gently. Add the Red Wine Vinaigrette and toss to coat well.
  • For the Candied Almonds: Combine the sugar and almonds in a skillet over medium-low heat and cook until the sugar melts, stirring occasionally. Cook until the almonds are evenly coated, stirring constantly. Spread on waxed paper and separate with forks to cool.

This recipe is for a great salad my friend Katie makes. When I tasted it I just had to have the recipe. I made it for guests and it is just delicious. It is especially refreshing as an accompaniment to steak and chicken. Don't stress as it seems complicated but it is easy really. Just a caution to chefs don't put the avocado and dressing on till right before tossing and serving as the salad will wilt if left too long and avocado will discolor. 1/4 cup cider vinegar
1/4 cup sugar
2 tablespoons finely chopped fresh parsley
1 teaspoon salt

1 head iceberg lettuce
1 head romaine lettuce
2 cups chopped celery
