JO MAMA'S SWEET POTATO PIE
I have been on a quest to find the best (at least my family's favorite) sweet potato pie. This has been the reigning champion to all since 1992. At Thanksgiving, I cook it and a new contender each year. I am adding strong contenders to my cookbook as well.

Steps:
- Blend sweet potatoes with butter.
- Add eggs, sugar, nutmeg, vanilla and cinnamon; stir in milk.
- Turn into pastry shell and bake at 350 degrees for 1 1/2 hours.
MAMA'S CANDIED SWEET POTATOES
The combination of orange juice with sweet potatoes is outstandingly delicious! My mother was a great cook. Her dishes always had plenty of exciting flavors. I'm passing on one of her favorites which we enjoyed.

Steps:
- Boil sweet potatoes for 30 minutes. Let potatoes cool and then peel. Cut into quarters.
- Place in a large saucepan and add butter, orange juice, syrup and sugar.
- On top of stove cook at low heat for about 1 3/4 hours to glaze potatoes. Tilt saucepan often to coat all potatoes. Place oranges slices in pot 30 minutes before serving. (She never used a crock pot, but I bet it would work as well.) Freezes well -- just reheat and serve.

MAMA'S SWEET POTATOES
Again, trying to capture all the old family recipes of cooks passed on. This one is easy, nothing fancy, not anything actually home made. But oh, what memories!

Steps:
- 1. In saucepan, cook sweet potatoes, liquid, and brown sugar over low heat about 20-30 minutes, until syrup forms and cooks down nice and thick. Stir occasionally to prevent sticking. You might want to cut some of the larger potato pieces into smaller chunks, but leave them chunky. My mother never mashed her sweet potatoes.
- 2. Place cooked sweet potatoes into a greased casserole to fit - usually about a 2-quart dish. Top evenly with the marshmallows. They should be nice and thick and cover the potatoes well. Use more than half the bag if you need to.
- 3. Bake at 350 degrees about 20-25 minutes, until marshmallows are puffed and browned. May serve hot, or allow to cool to room temperature (that's usually how we had them, because they would have to sit out while the dressing and other dishes were in the oven).
MAMA LANE'S SWEET POTATO PUDDING
Steps:
- Put all ingredients together in a 5 by 9 by 2-inch baking dish. Bake in a preheated 350 degree oven, 1 to 1 1/2 hours. Stir 2 or 3 times to keep from burning. Bake until brown on top.

Here in the South, sweet potato pie is a staple among many despite 100's of variations. This is the recipe that both my mom and grandma have used for years. Even my picky husband marks this as his favorite pie!

- Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
- Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
- Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.
- Bake in the preheated oven until pies are set in the middle, 40 to 60 minutes.

- dock thawed crust with a fork all over, bake for 10 minutes or until golden, set aside.
- Boil or bake potatoes until soft.
- peel potatoes while still warm and whip with a hand mixer to remove the strings.

- then add remaining ingredients.
- taste for sweetness.
- and pour into crusts.

- Puree all ingredients in a blender.
- I have to do this in 2 batches to fit all the ingredients.
- Pour each batch into a large container with a pouring spout (I use a plastic juice pitcher).
- Pour filling into a uncooked pie crust.(This recipe will make 2 deep dish pies).
- Bake in a 350 degree oven that has been preheated for approximately 1 hour.
- I cover the edges of the crust with foil to prevent over browning. I remove it after 30 minutes and rotate the pies so they cook evenly.
- Allow to cool completely before slicing. Enjoy!

- Grate the sweet potatoes into a medium mixing bowl. Add the grated onion, green onions, flour, beaten eggs, paprika, salt, and pepper, and mix well.
- Heat the peanut oil in a large, deep cast-iron skillet over medium heat. Working in batches, drop 1/4 cup of the sweet-potato mixture into the hot oil, lightly flattening into 1/2-inch-thick pancakes with a spatula. Fry until golden and crisp, about 3 to 4 minutes per side.
- Transfer to a paper-towel-lined sheet tray to drain. Sprinkle with salt. Repeat with remaining pancakes.
- Combine the ingredients in a medium saucepan over medium heat. Bring the mixture to a boil, then reduce heat and simmer for 25 to 30 minutes, stirring occasionally, until thick and syrupy.
- Don't grate the sweet potatoes until just before you're ready to mix and cook; otherwise, they might turn brown and ruin your beautiful cakes! If you've gotten ahead of yourself, or are serving your brunch buffet-style, hold the cakes warm in a 200-degree oven until ready to serve.
