HOMEMADE SPINACH PASTA DOUGH
Steps:
- Gather the ingredients.
- Squeeze as much water as possible from the chopped spinach with your hands or by pressing with a wooden spoon in a colander.
- In a blender or food processor , combine the spinach and eggs.
- Puree until the mixture is dark green and smooth, with few or no visible chunks of spinach showing.
- In a bowl, combine the flour and salt, stirring with a fork or a whisk to combine.
- On a large, lightly floured work surface (like a countertop covered with a silicone pastry mat), pour the flour mixture into a mound and make a well in the center.
- Pour the spinach-egg mixture into the well.
- Using a fork, stir the spinach mixture in a circular motion, gradually incorporating more and more flour.
- As the mixture turns chunky, begin to knead it, incorporating enough flour to make a stiff dough. Knead the dough for about 5 minutes, adding more flour until the dough is smooth and slightly tacky but not sticky.
- Set aside, covered with plastic wrap, for about 20 minutes.
- Assemble your pasta maker according to the manufacturer's instructions.
- Divide the dough into 4 to 6 equal sections with a knife or a dough cutter.
- Cover all of the pieces-except the one you're working with-with a clean dishtowel or plastic wrap.
- Form the piece of dough into a flat rectangle with your hands or a rolling pin to prepare it to be fed into the pasta maker.
- Beginning with one of the shorter sides of the rectangle, feed the pasta through the pasta maker on the first (widest) setting.
- Then fold it in thirds (like a business letter).
- Feed it through the pasta rollers again.
- Repeat the folding and rolling steps several times on the widest setting, before rolling pasta at increasingly smaller settings until it reaches the desired thinness.
- Use the sheets of pasta as-is for lasagna, form into ravioli, or cut into noodles using a pasta machine attachment.

- Add 2 inches of water to a medium saucepan, and fit with a steamer insert. Bring to a simmer. Add 6 ounces spinach, cover, and steam until bright green and softened, about 2 minutes. Let cool slightly. Squeeze out liquid using a clean kitchen towel or paper towels. Puree spinach in a food processor (you should have about 1/2 cup puree).
- Add eggs and yolk to puree in food processor, and process until combined. Add flour and 1 heaping teaspoon salt, and process until dough just comes together, about 20 seconds.
- Transfer dough to a well-floured surface. Knead until smooth and elastic, 5 to 10 minutes, adding up to 2 tablespoons flour if dough is too sticky. Place on a piece of parchment, and cover with an inverted bowl, or wrap tightly in plastic; let rest for 1 to 2 hours.
- Cut dough into 8 pieces. Working with 1 piece at a time (keep the remaining pieces covered with the inverted bowl), flatten dough into an oblong shape slightly thinner than the pasta machine's widest setting (number 1). Dust dough very lightly with flour, and feed through machine. Fold lengthwise into thirds and rotate 90 degrees. Repeat twice on same setting to smooth dough and increase its elasticity.
- Turn the dial to next narrower setting. Pass dough through twice, gently supporting it with your palm. Continue to press dough, passing it through ever-finer settings, two passes on each setting, until sheet is almost translucent and very thin but still intact (number 5 of 8 on a KitchenAid pasta roller). The dough will stretch to about 16 inches long. If dough bubbles or tears, pass it through again, and dust with flour if the dough is sticking.
- For farfalle, lasagna squares, or ravioli: Place rolled sheet on a lightly floured surface, and cut out as directed in corresponding recipe, using a dry brush to dust flour off if needed. For ribbon pastas: Place dough on a drying rack until slightly tacky, 10 to 15 minutes, and then use a pasta machine or cutting attachment to cut into strands. Drape over rack until strands are semidry and won't stick together, about 20 minutes. Cook immediately, or lay flat on a baking sheet dusted with semolina, cover tightly with plastic wrap, and refrigerate overnight.

- Bring 3 quarts of water to a boil. Place a bowl filled with water and ice next to the stove top. Plunge the spinach into the boiling water and blanch for 1 minute. Remove from the boiling water with a slotted spoon and immerse in the ice water. When cooled, remove from the water, squeeze in a towel to dry and place in the bowl of a food processor. Puree until a very fine paste forms.
- Mound 3 1/2 cups of the flour in the center of a large wooden cutting board. Make a well in the middle of the flour and add the egg and spinach and the olive oil. Using a fork, beat together the eggs and oil and begin to incorporate the flour, starting with the inner rim of the well.
- As you expand the well, keep pushing the flour up from the base of the mound to retain the well shape. The dough will come together when half of the flour is incorporated.
- Start kneading the dough with both hands, using the palms of your hands. Once you have a cohesive mass, remove the dough from the board and scrape up and discard any leftover bits. Lightly re-flour the board and continue kneading for six more minutes. The dough should be elastic and a little sticky. Wrap the dough in plastic and allow to rest for 30 minutes at room temperature. Roll out to the thinnest setting on a pasta rolling machine. Cut the pasta into 1/4-inch wide ribbons, place on a sheet tray that has been liberally sprinkled with semolina flour, cover with clean towels and set aside.

- Wash spinach several times in changes of water until grit free. Cook, covered in just the water that clings to the leaves, until it is tender. Cool and squeeze dry. Mince finely and squeeze dry again. Set flour and salt in food processor and process to combine. Add eggs, oil and spinach and process until combined and begins to form a ball. Add more water, a teaspoon at a time, if dough is too dry. Process 30 seconds. Remove dough from the processor and let it rest, covered with an inverted bowl at room temperature for 1 hour. Set the smooth rollers of a pasta machine at the widest setting. Divide dough into 4 pieces. Flatten 1 piece into a rectangle and cover remaining pieces with an inverted bowl. Dust rectangle with flour and feed it through rollers. Fold rectangle in half, dusting lightly with flour, and feed it through rollers 6 to 8 more times to knead. Fold in half each time and dust with flour, if necessary, so dough does not stick to roller. Turn dial down one notch and feed the dough through the rollers without folding. Turn the dial lower one notch each time until the second to last notch is reached.

- Put the flour in a food processor with ¾ of your egg mixture and a pinch of salt. Blitz to large crumbs - they should come together to form a dough when squeezed (if it feels a little dry gradually add a bit more egg). Tip the dough onto a lightly floured surface, knead for 1 min or until nice and smooth - don't worry if it's quite firm as it will soften when it rests. Cover with cling film and leave to rest for 30 mins.
- Cut away ¼ of the dough (keep the rest covered with cling film) and feed it through the widest setting on your pasta machine. (If you don't have a machine, use a heavy rolling pin to roll the dough as thinly as possible.) Then fold into three, give the dough a quarter turn and feed through the pasta machine again. Repeat this process once more then continue to pass the dough through the machine, progressively narrowing the rollers, one notch at a time, until you have a smooth sheet of pasta. On the narrowest setting, feed the sheet through twice.
- Cut as required to use for filled pastas like tortellini, or cut into lengths to make spaghetti, linguine, tagliatelle, or pappardelle. Then, dust in semolina flour and set aside, or hang until dry (an hour will be enough time.) Store in a sealed container in the fridge and use within a couple of days, or freeze for 1 month.

- There are two ways to prepare the spinach when making these spinach noodles (check recipe notes for the second method).

- Wash greens and chop into 1-inch pieces. If they’re on tough stems (like chard), de-stem, but save the stems for a later recipe, like pesto or broth.
- Cook greens in salted water for two minutes, transfer to a bowl of waiting ice water to blanch and keep the color bright. Once cool, drain the greens, and puree with a hand blender or food processor. If the puree feels dry, add a few drops of water.
- Pour flour into a mound on a clean, dry surface—say your counter or a large butcher block—and dig a hole in the center. Add the salt and greens puree to the center, and with a fork or your fingers (likely, both), knead the dry ingredients into the wet until they’re well incorporated. Your dough should be bright green and can form a tight ball. Remember: humidity can affect homemade pasta greatly, so don’t be discouraged if your dough feels dry. Add a few drops of salt water (not too many, it will go far) and continue to knead. Dust the first ball with flour, and run it through a pasta roller on the largest setting. Fold horizontally, dust with flour, repeat. Decrease the pasta roller by one increment, re-flouring the sticky dough each time you run it through, down to a four or five, depending on your machine—if the dough starts to tear, it’s too thin. The greens holding the green dough together are more delicate than egg protein, so you won’t want to go too thin. Dust the finished pasta sheet with flour and let rest. If you prefer a rolling pin, dust the rolling pin with flour as well, and start rolling until you reach about ⅛-inch thickness.
