Mmm mmm good! This is a must do for every holiday in my household, or just when you have guests overnight! Can be made with egg substitute, skim milk and turkey sausage to make it healthier!

2 ½ cups seasoned croutons
1 pound spicy pork sausage
4 eggs
2 ¼ cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
¼ teaspoon dry mustard
2 sprigs fresh parsley, for garnish

Steps:

  • Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
  • In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
  • The next morning, preheat oven to 325 degrees F (165 degrees C).
  • Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot.

This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

1 lb pork sausage or 2 cups cubed cooked ham
6 cups cubed bread (French bread or a chewy, rustic white bread is good)
1/4 lb medium cheddar, shredded
1/4 lb swiss cheese, shredded
6 eggs
2 cups milk
1 teaspoon salt
1/8 teaspoon pepper
3/4 teaspoon dry mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes in a lightly greased 9" X 13" baking pan.
  • Sprinkle bread evenly with cheese, and top with sausage (or ham).
  • Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
  • Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
  • Let stand at room temperature 30 minutes.
  • Bake at 350 degrees for 45-50 minutes, or until set.
  • Let stand 5 minutes before serving.

Steps:

  • Spread croutons on bottom of greased 13" x 9" baking dish. Crumble and cook sausage in medium skillet over medium heat until browned. Drain. Spread over croutons. Whisk eggs and milk in bowl until blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight. Preheat oven to 325F. Bake egg mixture 50-55 minutes or until set and lightly browned on top. Garnish with herb sprigs and carrot, if desired. Serve hot with picante sauce, if desired. Refrigerate leftovers.;

10 eggs, lightly beaten
3 cups milk
1 teaspoon salt
6 cups cubed bread*
2 cups shredded sharp Cheddar cheese
1/2 teaspoon black pepper
1/2 cup diced red pepper, optional
sliced green onion, optional

Steps:

  • Butter a 9 x 13 x 2 inch casserole dish.
  • In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
  • In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
  • Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
  • Pour egg mixture evenly over casserole.
  • Cover and refrigerate overnight, or bake immediately.
  • When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
  • If desired, sprinkle the casserole with sliced green onions. Serve warm.

1 cup small diced bell peppers (any color)
1/2 cup small diced onion
6 large eggs (see note)
1 cup milk
1/2 cup sour cream
1/2 teaspoon salt
Pinch of black pepper
24 ounces (about 6 cups) frozen tater tots
1 cup grated cheddar cheese
1 cup grated Monterey Jack cheese
Chopped green onion or chives (for garnish (optional))
Sour cream and salsa (for serving (optional))

Steps:

  • In a large skillet over medium heat, cook the sausage, peppers and onions, crumbling the sausage into small pieces as it cooks, until it is no longer pink and cooked through and the veggies are tender. Drain the grease (you can let the sausage/veggies hang out in the skillet for a minute or remove them to a plate).
  • In a medium bowl, whisk together the eggs, milk, sour cream, salt and pepper until smooth.
  • Lightly grease a 9X13-inch baking pan. Place the tater tots in a single layer across the bottom of the pan. (Use only as many tater tots as will fit in a single layer).
  • Sprinkle sausage over the tater tots followed by the veggies. Sprinkle cheese evenly across the top.
  • Pour the egg mixture evenly over and across the top. Cover the dish with lightly greased foil and refrigerate (overnight, up to 18 hours). OR you can bake it right away. The tater tots won't break down quite as much, but it is still delicious.
  • Preheat the oven to 350 degrees F. Bake covered for 25 minutes. Uncover and bake 20-25 minutes longer until golden, bubbly, and set. Sprinkle with green onions or chives, if using. Serve warm.

1 (32-ounce) bag of frozen tater tots
1 pound diced ham
1/2 cup bacon bits
1 1/2 cups, plus 1/2 cup cheddar cheese (shredded)
8 eggs
1 (10.5-ounce) can of cream of mushroom condensed soup
1 cup of milk
1/3 cup sour cream
1 teaspoon ground black pepper
1 teaspoon season salt
1 teaspoon onion powder
2 teaspoons hot sauce
1 red bell pepper (diced)
1 green bell pepper (diced)

Steps:

  • Preheat the oven to 375 F. Grease a 9 x 13-inch casserole dish with cooking spray.
  • Spread the tater tots, bacon, ham, and 1 1/2 cups of cheddar cheese into the casserole dish. Toss gently with your hands or a large spoon so that all of the bacon, cheese, and ham is evenly dispersed among the tater tots.
  • In a medium-sized bowl, whisk together the eggs, cream of mushroom soup, milk, sour cream, pepper, salt, onion powder, and hot sauce.
  • Pour the egg mixture evenly over the top of the tater tot mixture. Cover with aluminum foil and place in the oven. Bake for 45 to 50 minutes or until the eggs are almost completely set.
  • Remove the aluminum foil. Top the casserole with the remaining 1/2 cup of cheddar cheese and evenly distribute the red and green bell peppers.
  • Turn the heat of the oven up to 425 F and cook for 20 more minutes, or until the cheese is melted, the eggs are completely set, and the edges have browned.
  • Serve with a nice slice of toast and some fruit for a beautiful and complete breakfast!
