MARINATED SHIITAKE MUSHROOMS

2 teaspoons sesame oil
1 teaspoon sliced garlic
1 tablespoon sliced fresh ginger root
3/4 pound baby shiitake mushroom caps, not more than 1 1/2 inches in diameter, wiped clean and stems removed
1 cup rice wine vinegar
1 teaspoon sambal olek (Thai chile paste)
1/2 teaspoon salt
1/2 cup Sesame Vinagrette

Steps:

  • In a large heavy saucepan, heat the sesame oil over medium heat. Add the garlic, ginger root, and mushrooms and saute for 3 minutes, or until the mushrooms are just seared and still dry. Deglaze the pan with the vinegar and reduce over medium-high heat until almost no liquid remains. Stir in the sambal olek and salt and remove from the heat. Add the vinaigrette and tir to mix. Set aside and allow to marinate for at least 6 hours. The mushrooms can be kept covered in the refrigerator, for up to 4 days.

1 cup olive oil
1/2 cup soy sauce
2 scallions, green and white parts separated and green parts thinly sliced
2 cloves garlic, peeled and crushed
2 tablespoons honey
5 tablespoons white wine
Salt and freshly ground black pepper
1 1/2 pounds maitake mushrooms
1/2 bunch watercress, roots trimmed

Steps:

  • Put the olive oil, soy sauce, scallion whites, garlic, honey, and 2 tablespoons of the wine in a blender and blend until smooth. Season with salt.
  • Cut the maitake into slices 1 inch thick. It's important that each slice be attached to the large stem at the bottom; otherwise the slice will fall apart and be hard to handle on the grill. To avoid this problem, simply pick up the mushroom and look at where the stem is. Turn the mushroom on its side while gently slicing, making sure the connection between the frilly part of the mushroom and the stem stays intact. Place the slices in a shallow rimmed dish and coat them with the marinade. Cover and refrigerate overnight.
  • Heat a grill until it's very hot and arrange the maitakes on the grill, reserving the marinade. Press the slices with a metal spatula to form grill marks, and brush them with some of the reserved marinade. Grill for 3 minutes, then turn and press down with the spatula again. Brush with some of the remaining marinade and grill for 2 minutes more. Set the maitakes aside.
  • Heat a sauté pan over high heat and add the reserved marinade and the remaining 3 tablespoons white wine. Bring to a boil and reduce for a few minutes, until the sauce coats the back of a spoon.
  • To serve, arrange a bed of watercress on four individual plates. Slice the maitakes into a few pieces and divide among the plates, arranging them on top of the watercress. Season with salt and pepper. Spoon the sauce over the mushrooms and garnish with the scallion greens.

This recipe is from a Japanese Mushroom company called Yukiguni Maitake Corporation. I bought some maitake mushrooms at a local japanese market and wanted to add the recipe here so that I can find it tomorrow when I plan to cook them! I would image you could use regular "gringo" mushrooms too. But I have read that the health benefits of maitake mushrooms is really really good- especially for cancer.

7 ounces maitake mushrooms
1 lb top sirloin steak, sliced into strips
2 green onions, cut to desired size
1 small eggplant, chopped
2 -3 leaves Chinese cabbage, sliced into 1 in. strips (aka Napa cabbage or you could use Bok Choy)
1 tablespoon vegetable oil
3 -4 tablespoons oyster sauce
1 red pepper, diced
1/4-1/2 cup soy sauce
1/4-1/2 cup white wine
1 -2 tablespoon oil
1 -4 teaspoon cornstarch (optional)

Steps:

  • Marinate the beef in a mixture of equal parts soy sauce and white wine for 5 to 6 minutes.
  • Break maitake mushrooms into bite sized pieces.
  • Heat oil in wok on high heat (peanut oil works best for stirfry because of the high heat but I use canola oil without any problems).
  • Add red pepper, green onion and eggplant to the wok and stir fry.
  • Add beef, Maitake Mushrooms, Chinese cabbage and oyster sauce to the mixture. Stir well and cook until beef is cooked through.
  • If desired, add 1-4 tsp corn starch to thicken the sauce.
