Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 11

1 cup flour
1 teaspoon flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
4 ounces unsalted butter, softened (1 stick)
1 cup sugar
1/4 teaspoon vanilla
2 large eggs
1 pint blueberries, rinsed and drained (may substitute 2 cups frozen wild blueberries)
1 teaspoon lemon juice
confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 350°.
  • Lightly grease a 9-inch springform pan and dust with flour. (You can also make this cake in a 9-inch cake pan that has been greased and dusted with flour, and lined on the bottom with parchment paper.).
  • In a bowl, combine 1 cup of the flour with baking powder and salt and set aside.
  • Using an electric mixer on medium-high to high speed, cream the butter, sugar and vanilla until light and fluffy, about 3 minutes. Add the eggs one at a time and continue beating until well blended. Reduce the speed to low and gradually add the flour mixture. Beat until smooth. pour the batter into the prepared pan.
  • In a medium bowl, combine the blueberries with the remaining teaspoon of flour and the lemon juice. Spoon berry mixture over batter.
  • Bake for 1 hour at 350° or until a cake tester or toothpick inserted in the center comes out clean. Remove from the oven and let the cake cool in the pan for 10 minutes. If using a springform pan, slide a thin knife around the edges of the cake to release it from the pan before you release and remove the springform. (If using a cake pan, slide a knife around the edges of the cake and invert it onto a cake rack. Transfer the cake to a platter, berry side up.) Dust with confectioner's sugar before serving.

WILD BLUEBERRY CAKE

Wild Blueberry Cake image

The recipe for this "melt-in-your-mouth" wild Blueberry cake comes from Marjorie Standish's book,"Cooking Down East". Standish took the recipe from a Maine church cookbook, and it was one of the most popular recipes ever used in her column.

Provided by Cheryl Wixson

Number Of Ingredients 8

2 eggs (separated)
1 cup sugar
½ cup butter at room temperature
1 teaspoon vanilla
1½ cups flour
1 teaspoon baking powder
1/3 cup milk
1½ cups fresh wild Maine blueberries

Steps:

  • Preheat the oven to 350 degrees. Grease and flour an 8 by 8-inch pan.
  • Separate the eggs.
  • In a small bowl, beat the whites until stiff. Beat in ¼ cup sugar. Set aside.
  • In a medium bowl, dust the blueberries with a bit of flour so they won't settle in the batter. Set aside.
  • In the bowl of your mixer, cream the butter with the vanilla. Gradually beat in the remaining ¾ cup sugar.
  • Add the egg yolks and beat until light. Sift the flour and baking powder together and add to the mixture alternately with the milk.
  • Fold in the beaten egg whites. Fold in the blueberries.
  • Turn into a greased 8 by 8-inch pan. Sprinkle the top of the batter lightly with sugar.
  • Bake at 350 degrees until a toothpick comes out clean, about 45 - 50 minutes.
  • Turn cake out onto a cooling rack.
  • Enjoy!

MAINE BLUEBERRY GRUNT

Maine blueberry grunt image

unlike a cobbler or crisp, a grunt cooks start to finish on the stovetop. Stewed, spiced berries are topped with dollops of biscuit dough, covered, and cooked until the dumplings are done. The technique can be traced to 1807, when recipes cooked sweetened dumpling dough in water to make quick puddings. It eventually evolved into...

Categories     Fruit Desserts

Number Of Ingredients 16

8 cups fresh blueberries
1/2 cup sugar
2 tablespoons water
1 teaspoon grated lemon zest and 1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon cornstarch
TOPPING:
3/4 cup buttermilk
6 tablespoons unsalted butter, melted and cooled, three quarters stick
1 teaspoon vanilla extract
2 1/4 cups flour
1/2 cup sugar
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoons salt
1/2 teaspoon ground cinnamon

Steps:

  • 1. for the filling, cook 4 cups of the blueberries, the sugar, water, lemon zest and cinnamon in a Dutch oven over medium-high heat, stirring occasionally, until the mixture is thick and jam -- like, 10 to 12 minutes. Whisk the lemon juice and cornstarch together in a small bowl, then stir into the blueberry mixture. Stir in the remaining 4 cups blueberries and cook until heated through, about one minute. Cover to keep warm and let set off the heat.
  • 2. For the topping, mix the buttermilk, melted butter, and vanilla in a measuring cup. Whisk the flour, 6 tablespoons of the sugar the baking powder, baking soda and salt together in a large bowl. Slowly stir the buttermilk mixture into the flour mixture until dough forms.
  • 3. Using a small ice cream scoop or two large spoons, spoon golf ball sized dumplings on top of the warm blueberry mixture. You should have 14 dumplings. Wrap the lid of the Dutch oven with a clean kitchen towel, keeping the towel away from heat source, and cover the pot. Simmer gently until the dumplings have doubled in size and a toothpick inserted into the center comes out clean, 16 to 22 minutes.
  • 4. Combine the cinnamon and the remaining 2 tablespoon sugar in a bowl. Uncover the pot and sprinkle the dumplings evenly with the cinnamon sugar. Serve.

THE 7 FOODS THAT MADE MAINE - BANGOR DAILY NEWS

From bangordailynews.com
  • Bean hole beans. Living up to its moniker as the “Pine Tree State,” Maine has a rich history of logging. English explorers first cut and used trees on Monhegan Island in the early 17th century.
  • Lobster rolls. Lobster rolls are arguably the most iconic food in Maine. “You cannot talk about Maine without talking about a lobster roll,” Jenkins said.
  • Ployes. When Britain conquered Canada in the mid-1700s, French-Acadians fled into the unsettled forestland of northern Maine along the St. John River Valley.
  • Italian sandwiches. You heard it here first, if you hadn’t heard it before: the American “Italian” sandwich — a soft hoagie roll stacked with salty deli meat, American cheese, tomatoes, onions, peppers, pickles and olives, doused in oil and vinegar — was allegedly invented in Portland.
  • Chowder. Chowder is the quintessential dish to warm up working longshoremen: creamy broth, brimming with seafood, flavored with fat and filled with potatoes (never tomatoes — in 1939, the Maine State Legislature even considered a bill outlawing tomatoes in chowder).
  • Blueberry cake. Blueberry pie may be Maine’s state dessert, but blueberry cake is more prevalent throughout the state’s history. “Blueberry pie [is present throughout] southern New England, but I didn’t bump into blueberry cake until I moved here,” Oliver said.
  • Fiddlehead ferns. For centuries, Wabanaki women in Maine have spent cool mornings in April, May and early June harvesting fiddlehead ferns from the forest floor.
