My husband came up with this creation for Easter dinner, as Tilapia is indigenous to the sea of Galilee. It remains the best fish I have ever put in my mouth, absolutely beyond restaurant quality.

2 eggs
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds
1 cup freshly grated Parmesan cheese
8 (6 ounce) tilapia fillets
¼ cup all-purpose flour for dusting
6 tablespoons butter
salt to taste
1 cup freshly grated Parmesan cheese
8 sprigs parsley
8 lemon wedges

Steps:

  • Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

4 tilapia fillets (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/4 cup butter, cubed
1/4 cup white wine or chicken broth
2 tablespoons lemon juice
1/4 cup sliced almonds

Steps:

  • Sprinkle fillets with salt and pepper. In a large nonstick skillet, heat oil over medium heat. Add fillets; cook until fish just begins to flake easily with a fork, 2-3 minutes on each side. Remove and keep warm., Add butter, wine and lemon juice to same pan; cook and stir until butter is melted. Serve with fish; sprinkle fish with almonds.

Lemon Almond Tilapia out of the air fryer is quick and easy, and can be served casually on a weeknight, or dressed up with a simple lemon cream sauce for a more special occasion. Tilapia is so versatile and offers a nice large surface for a delicious crust.

2 tablespoons flour (for dredging)
2 egg whites (lightly beaten)
½ cup almonds (finely ground)
½ teaspoon finely chopped lemon zest
¼ teaspoon dried thyme
¼ teaspoon salt
2 6- to 7-ounce fillets Tilapia
salt and freshly ground black pepper
oil (in a spray bottle)

Steps:

  • Set up a dredging station. Place the flour in a shallow dish. Place the beaten egg whites in a second shallow dish. Finally, place the ground almonds, lemon zest, dried thyme and salt in a third shallow dish.
  • Pre-heat the air fryer to 400ºF.
  • Coat the fish fillets one at a time by first coating in flour. Shake off any excess flour and then dip the fish into the egg white, coating completely. Immediately press the fish into the almond-lemon mixture. Set the coated fish fillets aside.
  • Spray the coated fish fillets with oil and then transfer them to the air fryer basket. You might have to overlap the fillets a little if you have a smaller air fryer. Just make sure you overlap the thin edges of the tilapia. Air-fry at 400ºF for 8 to 10 minutes, flipping the fish over halfway through the cooking process. The crust on top should be nice and toasty and the fish should feel firm to the touch.
  • Optional: To make a simple lemon cream sauce, pre-heat a small saucepan over medium-high heat. Add 1 teaspoon of butter, 1 sprig of thyme and 1 smashed garlic clove and cook for a few minutes until the garlic clove just starts to brown on the edges. Add ¼ cup of white wine and bring the mixture to a boil. Add ½ cup of heavy cream and return the sauce to a boil. Simmer for a minute and remove the saucepan from the heat. Season the sauce to taste with salt, freshly ground black pepper and a squeeze of lemon juice. Stir in a little lemon zest and chopped thyme and serve.

1 teaspoon salt

Steps:

  • In a shallow bowl, combine 1/4 cup flour and salt. Dip fillets in flour mixture. , In a large nonstick skillet, cook fillets in 2 tablespoons butter over medium-high heat until fish just begins to flake with a fork, 4-5 minutes on each side. Remove and keep warm., In the same skillet, melt remaining 2 teaspoons butter. Stir in remaining 1 tablespoon flour until smooth; gradually whisk in broth, wine and lemon juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in parsley. Serve fish and sauce with rice; garnish with almonds.

4 each tilapia fillets
3 tablespoons fresh lemon juice
1 tablespoon butter, melted
1 clove garlic, finely chopped
1 teaspoon dried parsley flakes
1 dash pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  • Rinse tilapia fillets under cool water, and pat dry with paper towels.
  • Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
  • Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

1/4 cup butter, melted
3 tablespoons lemon juice
6 tilapia fillets (about 2 lbs)
1 1/2 teaspoons creole seasoning
1/2 cup almonds, sliced

Steps:

  • Combine the melted butter and lemon juice in a shallow dish. Dip the fish fillets in the butter mixture, and place in an ungreased 13x9x2 inch baking dish.
  • Sprinkle the fillets evenly with the Creole seasoning. Bake, uncovered, at 375 degrees for 15 minutes. Sprinkle the fillets with the sliced almonds, and bake an addtional 10 minutes or until the fish flakes easily. (Cooking time varies with the thickness of your fish).

(Bonus: It is one of the least mercury-laden fish, and is also low in sodium.) Green beans and mushrooms deliver fiber and potassium, while crunchy almonds boast antioxidants." I'd probably skip the oil and take my fats from extra almonds.

I made this with concerns of getting more Calcium into my diet. Almonds have 80 mg per 1 ounce. The almonds toasted up so nice giving this dish great flavor.

1/4 cup flour
1 egg, lightly beaten
1 cup sliced almonds

pepper
Old Bay Seasoning
1 lemon
2 tablespoons butter

2 scallions, sliced

  • Season tilapia with salt, pepper and old bay.
  • Dust with flour then dip into egg.
  • Press almond slices into the fish.
