Crispy fried catfish fillets coated in a seasoned cornmeal crust!

4-6 catfish fillets, about 1-2 pounds
1 cup milk or buttermilk
Salt
3/4 cup fine cornmeal (do not use coarsely ground cornmeal)
1/2 cup flour
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon cayenne
1/4 teaspoon celery seed
Oil for frying (use peanut oil if you can)

Steps:

  • Heat oil in pan, heat warming oven: In a heavy frying pan (I prefer to use cast iron), pour enough oil to come 1/2 inch up the sides of the pan. Heat the pan on medium-high. Heat your oven to 200°F and lay a cookie sheet inside. Place a wire rack on top of the cookie sheet.
  • Mix together cornmeal, flour, spices for dredging: Mix the cornmeal, flour and spices together. (Or you can substitute your favorite seasoning instead.) Place in a shallow dish for dredging.

I worked at a hospital for years and the cafeteria served crispy fried catfish nearly every Friday. I asked the manager for the recipe.. She just gave me the basics.... cornmeal, flour, salt, black pepper and paprika...dip in milk and deep fry. The breading is what makes it taste so good.

6 slice(s) catfish or talapia, filets
2 cup(s) milk
- salt, to taste
BREADING
1 1/2 cup(s) yellow cornmeal, stone ground preferred
1/2 cup(s) all purpose flour
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper, coarse ground
1 teaspoon(s) paprika
FOR DEEP FRYING
2-3 cup(s) shortening or vegetable oil-enough to deep fry fish

Steps:

  • Combine breading ingredients in gallon size ziplock bag. Shake to mix together well.
  • Melt shortening or oil in skillet until hot.
  • Place filets in milk. Remove and salt both sides, according to taste.
  • Place 2-3 filets in bag and shake until coated. Remove from bag and dip again in milk.
  • Place fish in ziplock bag for a second coating. Repeat this process for remaining pieces.
  • Fry 3 pieces of fish in hot oil (iron skillet) for approximately 6-7 minutes on each side until done and golden brown. Repeat with remaining filets.

This is a very easy method to make any type of fish fillets. Choose mild-flavored fish - flounder, halibut, cod, catfish, or tilapia are great candidates.

4 (5 ounce) mild white fish fillets
1 lemon, juiced
salt to taste
4 tablespoons all-purpose flour
1 teaspoon Chinese five-spice powder
4 tablespoons canola oil
1 tablespoon sesame oil

Steps:

  • Wash fish fillets under running cold water and dry with a paper towel. Drizzle with lemon juice and season with salt on both sides.
  • Combine flour and Chinese five-spice powder in a shallow bowl. Dip fish fillets into the flour mixture so they are covered on both sides.
  • Heat canola and sesame oils in a large skillet over medium heat. Add fish to hot oil and pan-fry for 2 to 3 minutes. Carefully turn and continue cooking until fish flakes easily with a fork, 2 to 3 minutes more.

1/4 cup all-purpose flour
2 teaspoons seafood seasoning
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 pounds fresh tilapia fillets
2 tablespoons canola oil
2 tablespoons butter
1 teaspoon chopped garlic
2 tablespoons lemon juice
2 tablespoons freshly chopped parsley leaves

Steps:

  • Heat oven to 300 degrees F.
  • In a shallow baking dish combine flour, seafood seasoning, salt and pepper. Add the tilapia and lightly coat each side.
  • Heat oil in a large skillet over medium-high heat. Shake off any excess seasoned flour and place in the skillet. Brown on both sides, about 2 to 3 minutes per side. Place tilapia on a baking sheet that is lined with a paper grocery bag or paper towels and keep warm in the oven while you prepare the sauce.
  • Turn down the heat to the pan the tilapia was cooked to low and add the butter. Once the butter is melted, add the garlic, lemon juice and parsley and saute for 2 minutes. Place the fillets on serving plates or a platter, top with the sauce and serve.

LEMON PEPPER TILAPIA (OR CATFISH)

1/2 cup cornmeal
1/2 teaspoon garlic powder (or to taste)
1/2 teaspoon salt (I use 1 teaspoon season salt)
1 tablespoon lemon pepper
2 eggs, lightly beaten (you might need 3 eggs)
6 tilapia fillets (or use catfish)
2 tablespoons butter
2 -3 tablespoons oil (more if needed)
lemon slice, sliced thinly (optional)

Steps:

  • In a shallow dish combine flour, cornmeal, garlic powder, salt, and lemon pepper until well combined.
  • Place the eggs in a shallow dish.
  • Dip fish fillets into the eggs then dredge in the flour/cornmeal mixture until well coated.
  • Heat butter with oil in a large skillet.
  • Add in the fillets and fry until brown on both sides.
  • Place the fish on a serving platter and top each fillet with 2 to 3 lemon slices if desired.
  • Delicious!
