We love stuffed cabbage, but it takes quite a bit of time to prepare, my mom gave me this delicious casserole and it sure is one of our favorites.

1 lb chopped beef or 1 lb other meat
2 cups cooked rice
1 medium onion, chopped
2 tablespoons butter
1 egg
2 lbs cabbage, chopped
1 (8 ounce) can chopped tomatoes or 1 (8 ounce) can tomato sauce
salt and pepper

Steps:

  • Mix chopped beef, rice, onion, butter, and egg.
  • Salt and pepper to taste.
  • Grease 3 quart casserole.
  • Line bottom of casserole with 1/2 cabbage; add 1/2 meat mixture; top with rest of cabbage, then rest of meat mixture.
  • Top with chopped tomatoes or tomato sauce.
  • Cover, bake at 350 degrees for 1 hour; uncover and bake an additional 30 minutes.
  • Tastes just like stuffed cabbage without all the work.

1/3 cup chopped onion
4 cups chopped cabbage
1 medium green pepper, chopped
1 cup uncooked instant rice
1 cup water
1 can (6 ounces) tomato paste
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup ketchup
2 tablespoons cider vinegar
1 to 2 tablespoons sugar, optional
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker; add cabbage, green pepper and rice. , In a large bowl, combine the water and tomato paste. Stir in the remaining ingredients. Pour over beef mixture; mix well. Cover and cook on low until rice and vegetables are tender, 4-5 hours.

3 tablespoons good olive oil
1 1/2 cups chopped yellow onions (2 onions)
2 (28-ounce) cans crushed tomatoes and their juice
1/4 cup red wine vinegar
1/2 cup light brown sugar, lightly packed
1/2 cup raisins
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 large head Savoy or green cabbage, including outer leaves
2 1/2 pounds ground chuck
3 extra-large eggs, lightly beaten
1/2 cup finely chopped yellow onions
1/2 cup plain dried breadcrumbs
1/2 cup uncooked white rice
1 teaspoon minced fresh thyme leaves
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the sauce, heat the olive oil in a large saucepan, add the onions, and cook over medium-low heat for 8 minutes, until the onions are translucent. Add the tomatoes, vinegar, brown sugar, raisins, salt, and pepper. Bring to a boil, then lower the heat and simmer uncovered for 30 minutes, stirring occasionally. Set aside.
  • Meanwhile, bring a large pot of water to a boil.
  • Remove the entire core of the cabbage with a paring knife. Immerse the head of cabbage in the boiling water for a few minutes, peeling off each leaf with tongs as soon as it s flexible. Set the leaves aside. Depending on the size of each leaf, you will need at least 14 leaves.
  • For the filling, in a large bowl, combine the ground chuck, eggs, onion, breadcrumbs, rice, thyme, salt, and pepper. Add 1 cup of the sauce to the meat mixture and mix lightly with a fork.
  • Preheat the oven to 350 degrees F.
  • To assemble, place 1 cup of the sauce in the bottom of a large Dutch oven. Remove the hard triangular rib from the base of each cabbage leaf with a small paring knife. Place 1/3 to 1/2 cup of filling in an oval shape near the rib edge of each leaf and roll up toward the outer edge, tucking the sides in as you roll. Place half the cabbage rolls, seam sides down, over the sauce. Add more sauce and more cabbage rolls alternately until you ve placed all the cabbage rolls in the pot. Pour the remaining sauce over the cabbage rolls. Cover the dish tightly with the lid and bake for 1 hour or until the meat is cooked and the rice is tender. Serve hot.

1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
  • In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

2 tsp olive oil, divided
1 lb lean ground beef
1 large onion, chopped
1 Tbsp minced garlic
1/2 tsp dried thyme
1 tsp sweet hungarian paprika
salt and black pepper to taste
1 large head green cabbage, cored and cut into small wedges
1 can(s) (14.5 oz.) petite diced tomatoes with juice
1 can(s) (15 oz.) tomato sauce
1/4 c water
2 c cooked brown rice
2 c low-fat mozzarella cheese

Steps:

  • 1. In a large skillet over medium heat, cook ground beef until browned and cooked through. Remove and set aside.
  • 2. In the same skillet, add 1 tsp. olive oil, chopped onion, and cook over medium heat until the onion is translucent and starting to brown, about 5 minutes. Add the minced garlic, dried thyme, and paprika and cook about 2 minutes more. Add the diced tomatoes with juice, tomato sauce, and ground beef. Add water to the pan. Simmer until it is hot and slightly thickened, about 15-20 minutes.
  • 3. While it simmers, cut the cabbage in half, remove the core and any wilted outer leaves. Cut into small wedges. (Or chop coarsely into 1-inch pieces, if you prefer.)
  • 4. Heat remaining olive oil in a large skillet or dutch oven, add the cabbage and cook over medium-high heat until the cabbage is about half-cooked, turning it over several times so it all cooks. Season with salt and pepper.
  • 5. When the meat and tomato sauce mixture has cooked and thickened a bit, stir in the 2 cups of cooked rice and gently combine.
  • 6. Spray a 13x9" casserole dish with non-stick spray and layer half the cabbage, half the meat mixture, remaining cabbage, and remaining meat mixture. Cover tightly with foil and bake in a preheated 350-degree oven for 40 minutes, or until the mixture is just starting to bubble on the edges.
  • 7. Remove foil and sprinkle on cheese. Bake uncovered an additional 15 minutes, or until the cheese is melted and starting to slightly brown. Serve hot.

  • Bring a large pot of water to a boil. Add cabbage strips to boiling water. Boil until tender. Drain.
