2 tablespoons canola oil
Salt and freshly ground black pepper
Citrus Vinaigrette, recipe follows
8 (6-inch) flour tortillas, cut into 2 1/2 to 3-inch circles, and deep fried
Red Cabbage Slaw, recipe follows
Tomato and Avocado Salsa, recipe follows
Pineapple hot sauce, store bought or recipe follows, for drizzling
3/4 cup orange juice
1/4 cup lime juice
1 cup fresh basil leaves, chopped
1 cup fresh cilantro leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 heaping tablespoon honey
1/2 cup canola oil
1/4 cup rice vinegar
1 tablespoon sugar
2 tablespoons canola oil
1/4 head red cabbage, finely shredded
1 large carrot, cut into fine julienne
1/4 cup chopped cilantro leaves
Salt and pepper
4 plum tomatoes, chopped
2 ripe Hass avocados, peeled, pitted and diced
1/2 small red onion, finely chopped
1 serrano chile, finely diced
1 to 2 limes, juiced
2 tablespoons canola oil
1 to 2 teaspoons honey
3 tablespoons chopped cilantro leaves
Salt and freshly ground black pepper
1 ripe pineapple, preferably Golden pineapple
2 tablespoons canola oil
1 large Spanish onion, coarsely chopped
1 container frozen pineapple puree, thawed
2 habanero chiles, chopped
1 cup rice wine vinegar
Salt and pepper
Honey

Steps:

  • Preheat grill.
  • Brush fillets with oil and season with salt and pepper. Grill for 3 to 4 minutes per side.
  • Remove from grill and drizzle with some of the Citrus Vinaigrette. Let rest 5 minutes and then flake with a fork.
  • Fill each fried tortilla with some of the mahi, top with the Red Cabbage Slaw, Tomato and Avocado Salsa, and drizzle with Charred Pineapple-habanero Hot Sauce.
  • Combine all ingredients in a blender and blend for 1 minute.
  • Combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • Gently combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • Heat a grill to high or preheat the broiler. Place the whole pineapple (do not peel it) on the grill and grill until the entire surface is completely black and charred. Remove from grill and let cool slightly. Peel the pineapple, remove the core and coarsely chop the flesh.
  • Heat oil in a medium saucepan over medium-high heat; add the onion and cook until soft. Add the pineapple, pineapple puree, habanero and vinegar and cook until the mixture is completely soft, about 25 to 30 minutes. Transfer to a blender and blend until smooth. Season with salt, pepper and honey, to taste. Strain the mixture into a bowl.

½ teaspoon ground pepper
1 tablespoon extra-virgin olive oil
½ teaspoon salt, divided
1 avocado
⅓ cup plain whole-milk Greek yogurt
⅓ cup water
2 tablespoons lime juice
6 (6 inch) corn tortillas, warmed
½ cup jicama matchsticks
1 red Fresno chile or jalapeño pepper, seeded and sliced
½ cup loosely packed fresh cilantro leaves

Steps:

  • Sprinkle fish evenly with chili powder and pepper. Heat oil in a large nonstick or cast-iron skillet over medium-high heat. Add the fish; cook until golden brown and cooked through, about 3 minutes per side. Transfer to a paper-towel-lined plate; sprinkle evenly with 1/4 teaspoon salt. Set aside.
  • Place avocado, yogurt, water, lime juice and the remaining 1/4 teaspoon salt in a blender; process until well combined and smooth, about 30 seconds.
  • Use a fork to flake the fish into large pieces. Top tortillas with the fish, jicama, the avocado sauce, sliced chile (or jalapeño) and cilantro. Serve immediately.

1 1/2 pounds skinless mahi mahi fillets, cut into 3-inch pieces
Kosher salt
2 tablespoons achiote or annatto paste (or 1 tablespoon chili powder)
Juice of 1 lime
2 oranges (1 juiced; 1 halved and sliced)
1 teaspoon dried oregano
1/2 teaspoon ground cumin
3 scallions, roughly chopped
2 tablespoons ancho chile powder
2 teaspoons apple cider vinegar
1 teaspoon packed brown sugar
8 sprigs thyme
6 bay leaves
Corn tortillas, warmed, and assorted toppings, for serving

Steps:

  • Put a large piece of aluminum foil on a baking sheet; arrange the fish fillets side by side on the foil and sprinkle with 1/2 teaspoon salt.
  • Combine the achiote paste, lime juice, orange juice, oregano, cumin, scallions, chile powder, vinegar and brown sugar in a blender; pulse until smooth. Pour the mixture over the fish and turn to coat using tongs. Scatter the thyme sprigs and bay leaves over the fish, then top with orange slices. Cover the fish with another piece of foil and crimp the edges to tightly seal. Marinate in the refrigerator, 1 to 4 hours.
  • Position a rack in the upper third of the oven and preheat to 475 degrees F. Transfer the fish to the oven and bake until tender, about 25 minutes. Remove the herbs and orange slices. Serve the fish in tortillas with assorted toppings.
  • Trim 2 bunches spring onions; halve lengthwise, if large. Cook in a large cast-iron skillet over medium-high heat until tender and blackened, 5 to 8 minutes. Cut into pieces and sprinkle with lime juice and salt.

1/4 cup vegetable oil
1 jalapeno, seeded and finely chopped
1 small red onion, one quarter finely chopped, the remainder thinly sliced
1 garlic clove, grated
1 (15 ounce) can black beans, rinsed
1 teaspoon cumin
salt and pepper, to taste
3 tablespoons honey
2 tablespoons hot pepper sauce
2 limes, juice of, plus
2 teaspoons lime zest
1/2 head red cabbage, shredded
1/3 cup fresh cilantro, finely chopped
4 (6 ounce) mahi mahi fillets
8 taco shells
8 flour tortillas
1 cup creme fraiche or 1 cup sour cream

Steps:

  • Heat oil, add jalepeno, chopped red onion and cook for 4 minutes. In a small bowl, mash black beans with the cumin and season with salt & pepper.
  • In large bowl, combine honey, 2 tbsp oil, hot sauce and lime juice. Season with salt & pepper. Add sliced onion, cabbage and cilantro. Toss.
  • Coat fish with remaining 1 tbsp oil and the lime peel, and grill over medium for 8 minutes, turning once.
  • Warm taco shells and tortillas on the grill. Spread a few tbsp of the mashed beans on the outside of the taco, (stir in 1 to 2 tbsp hot water into beans if they are too thick) and wrap a tortilla around each one, pressing to ahere.
  • Flake half a piece of fish into each taco shell and top with some cabbage slaw. Top with creme fraiche or sour cream.

4 (8 ounce) mahi mahi fillets (can sub tilapia or cod)
2 tablespoons canola oil
caribbean jerk seasoning (I used Dry Jerk Seasoning)
1 cup fresh pineapple, diced
1 cup fresh mango, diced
1 cup fresh papaya, diced
1/4 cup finely chopped cilantro
1 tablespoon grapefruit juice, can sub lime juice
1 tablespoon white rum
1 scotch bonnet peppers or 1 habanero pepper
1/4 cup finely chopped red onion
1 -2 teaspoon honey
1 garlic clove, finely minced
salt and pepper
8 soft flour tortillas or 8 soft corn tortillas
2 avocados, thinly sliced with
1/2 lime, juice of
2 cups red cabbage, finely shredded

1 teaspoon fresh lime juice
1 teaspoon fresh lime zest
cilantro (to garnish)

Steps:

  • Brush fillets with canola oil and sprinkle evenly both sides, with jerk rub seasoning.
  • *Use 1 teaspoons seasoning per side per each fillet. More or less to taste.
  • Rub into fish evenly to coat.
  • Place fillets on hot grill and grill 3-5 minutes per side or til done and flakes easily with a fork.
  • Warm tortillas on grill.
  • Cut fillets into chunks, or coarsely shred with a fork.
  • Divide fish evenly onto 8 warmed tortillas.
  • Top each with fruit salsa, a slice of avocado, shredded cabbage, jicama, and top with lime sour cream.
  • Lime sour cream:.
  • Mix sour cream, lime juice and zest in small bowl.
  • Garnish with additional cilantro if desired.
  • *Note: If scotch bonnet or habanero peppers are too hot for your tastebuds, a red jalapeno can be substituted! They are actually quite mild.

4 (3 ounce) fillets mahi mahi
1 dash lime juice
1 medium tomato, diced
½ red onion, chopped
1 cup chopped fresh cilantro
2 scallions, thinly sliced

8 (6 inch) corn tortillas
1 avocado, sliced

Steps:

  • Season mahi mahi lightly with adobo seasoning and 1 dash of lime juice.

1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon kosher salt
1/4 tablespoon ground cinnamon
1/4 tablespoon red pepper flakes
1/4 tablespoon cayenne pepper
1/2 tablespoon dill seed
1/2 tablespoon ground black pepper
1/2 cup soy sauce
2 pounds fillet mahi mahi with skin
1/4 cup peanut oil
Mini taco shells
Pico de Gallo, store bought
Chopped fresh cilantro leaves

Steps:

  • Combine all of the dry ingredients for the rub and mix well. Set aside. Brush the soy sauce over the flesh side of the fillet. Let set in the refrigerator for 1 hour. Remove from refrigerator and brush with the oil. Sprinkle with desired amount of dry rub. Let stand for 15 minutes before grilling.
  • Cook the fillet with the flesh side facing the heat source. Cook until fork tender or 8 to 10 minutes or until just opaque. Cooking time will depend on how hot the heat source is. Let stand for about 5 minutes after removing from the heat. Flake the fish with a fork into a taco shell and top with Pico de Gallo. Add cilantro for garnish.

3/4 cup reduced-fat sour cream
3 tablespoons 2 percent milk
