FRIED MAHI MAHI | THE BEST WAY TO COOK MAHI MAHI
This fried mahi mahi has a crispy golden coating on the outside while keeping the fish tender and flaky on the inside. And I included a creamy, slightly spicy, and refreshing sauce to complete this mahi mahi recipe. It'll have you thinking it's from a five-star restaurant, but it takes under 20 minutes to make at home!

Steps:
- Cut the mahi mahi filets into strips and pad them dry with a paper towel.
- Mix the breadcrumbs, Mexican seasoning, salt, and pepper in a bowl.
- Crack the egg in a second bowl and whisk it to combine the yolk with the white.
- Put the flour in a third bowl.
- Cover the fillets with flour, then soak them in the egg mixture, and cover both sides with the breadcrumbs.
- Heat the oil to 350°F (180ºC), then fry one or two at a time for 3-4 minutes on each side until they're golden brown.
- Transfer to a plate lined with paper towels or a wire rack to drain excess oil.
- Mix all the sauce ingredients in a bowl until combined and serve for dipping with the fried mahi mahi. Enjoy!

Here's a healthier alternative to the usual deep-fried hush puppies. I think these look like mini corn muffins, but they taste the way a hush puppy should. Originally from an August 1983 issue of Bon Apetit from "The Cook's Exchange Readers' Best Recipes".

- Preheat oven to 425 degrees.
- Spray cups of mini muffin pans with nonstick vegetable spray.
- Blend cornmeal, flour,baking powder, salt, sugar and red pepper in medium bowl.
- Stir in onion.
- Beat eggs, milk and oil in small bowl.
- Add to cornmeal mixture and stir just until blended.
- Spoon batter into prepared muffin pan, filling cups 1/2 to 2/3 full.
- Bake until golden, about 15 to 20 minutes, or until a toothpick inserted into center comes out clean.
- Serve immediately.
MAHI MAHI HAWAIIAN STYLE
This is a quick and easy dinner solution. This comes from another website. Update: After a number of reviews I have changed the ingredients list. When I made this, I too thought the cloves were strong but DH liked it so I posted. I have since changed the ingredient list and reduced the amount of cloves and nutmeg. Please feel free to adapt as necessary for preference. Thanks everyone for your input.

- Preheat oven to 350°F.
- Cut fish fillets into serving size portions allowing 4 to 6 ounces per serving.
- In bowl, mix pineapple, cloves and nutmeg.
- Spray an oven proof baking dish with non-stick cooking spray.
- Place fish in prepared dish, top with pineapple mixture and drizzle a half to one full tablespoon of pineapple juice over each serving.
- Cover with foil and bake 10 to 12 minutes, uncover and top with coconut. Bake 5 minutes more or until fish flakes easily.

PAN-SEARED MAHI MAHI WITH GREMOLATA BREAD CRUMBS
Steps:
- Preheat a large saucepan over medium heat for 2 to 3 minutes. Add 2 tablespoons oil, then add panko. Cook and stir until lightly toasted, 2 to 3 minutes. Add garlic and cook until fragrant and panko is golden brown, 1 to 2 minutes.
- Transfer bread crumb mixture to a small bowl and add lemon zest, seafood seasoning, and 1/4 teaspoon salt; mix to combine. Set aside.
- Wipe out the saucepan and pour in remaining oil. Season fish fillets with remaining salt and add to the pan.
- Cook over medium heat until opaque, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Serve fish topped with bread crumb mixture.
