MADELEINES

Madeleines image

Recipe video above. Madeleines are sweet little French sponge cakes that are as delightful to look at as they are to eat. Flavoured with a hint of lemon and with the signature shell shape, these adorable mini butter cakes make for a lovely afternoon tea, or a pretty finish for any meal. Best served hot and fresh out of the oven. Keep the batter in a piping bag, then 10 minutes in the oven is all it takes!

Provided by Nagi

Categories     Sweet

Number Of Ingredients 13

3/4 cup + 1 tbsp plain flour (all purpose flour)
1 1/4 tsp baking powder
3 large eggs (, at room temperature (Note 1))
2/3 cup caster sugar (superfine sugar) ((ordinary / granulated sugar ok too))
1 tsp salt
1 tbsp vegetable oil ((or other neutral oil))
3 tbsp milk (, full fat (low fat ok too))
2 tsp honey ((or maple syrup))
2 tsp vanilla extract
2 tsp lemon zest
135g / 9.5 tbsp unsalted butter (, melted, warm (not hot))
Canola oil spray ((or other neutral oil))
Icing sugar / powdered sugar ((optional, for dusting))

Steps:

  • Sift flour: Sift the flour and baking powder into a bowl.
  • Whisk eggs and sugar: Whisk the eggs and sugar vigorously for 2 minutes until it becomes paler in colour and it's foamy (or 1 minute on speed 6 with handheld beater).
  • Mix flour in 3 parts: Add the flour mixture in 3 parts, whisking gently in between until combined.
  • Add everything else except butter: Add salt, oil, milk, honey, vanilla and lemon. Mix until combined.
  • Add butter: Add butter, mix gently with a rubber spatula until combined. The batter is fairly thin but should leave a faint ribbon briefly on the surface (see video).

Rustle up these little French sponges for a bake sale or special treat. They're best eaten warm from the oven, served with coffee or tea

Provided by Barney Desmazery

Categories     Dessert, Treat

Time 25m

Number Of Ingredients 5

50g butter, melted but cool, plus extra for the tin
1 egg
50g caster sugar
1 tsp honey
50g self-raising flour

Steps:

  • Heat the oven to 210C/190C fan/gas 6½ and butter eight holes of a madeleine tin (if you have a six-hole tin you'll need to bake in two batches). Beat the egg, sugar and honey together using an electric whisk until pale, fluffy and tripled in volume. Add the flour and a small pinch of salt, and finally mix in the melted butter.
  • Spoon the mixture into the buttered holes of the madeleine tin and bake for 8-10 mins or until puffed up and golden. Turn out onto a cooling rack while you cook a second batch if using a smaller tin. Best eaten warm from the oven but will keep in an airtight container for up to two days.

MADELEINES

Madeleines image

Madeleines are a simple snack that almost everyone, including beginners, can make. Since I'm an avid manga reader, I found this recipe in Kitchen Princess and later developed it into my own version. This is the original, I hope you enjoy.

Provided by Jem Mars

Categories     Dessert

Time 30m

Yield 6-9 cookies, 7-9 serving(s)

Number Of Ingredients 5

1 egg
3 tablespoons sugar
1/2 cup flour
1 teaspoon baking powder
3 tablespoons unsalted butter

Steps:

  • Mix the egg and sugar in a bowl, stirring well with a whisk.
  • Begin melting the butter, preferably in a small pan for about a minute and a half.
  • Add flour and baking powder to the bowl from step 1 and mix them together.
  • Add melted butter to the bowl (You'll use some in step 4, so save some) and mix.
  • Let the mixture sit for 10 to 20 minutes and the dough will thicken, it will then be easier to pour into the madeleine mold.
  • Take a brush and put some butter on the madeleine mold and put a little bit of flour in it. This will make it easier to take the cookie out of the mold.
  • Pour the dough into the mold.
  • Bake for about 20 minutes in an oven preheated at 170 degrees (approx. 340˚F).
  • Take them out of the mold and let them cool.
  • Enjoy!
