Australian Gourmet Traveller Italian recipe for mackerel caponata

Number Of Ingredients 19

4 blue mackerel cutlets (240gm each)
2 tbsp olive oil
20 gm butter
2 cloves of garlic, finely chopped
½ Spanish onion, cut into wedges
500 ml passata (2 cups)
60 ml aged red wine vinegar (¼ cup)
1 tbsp golden raisins (see note)
1 tbsp salted capers, rinsed and drained
1 cup Bella dí Cerígnola olives (see note)
4 bay leaves
1 tbsp caster sugar
2 tsp marjoram leaves
2 inner stalks of celery, thinly sliced widthways, blanched and refreshed in iced water
For shallow-frying: vegetable oil
1 large eggplant, very thinly sliced widthways
1 tbsp pine nuts, toasted
1 tbsp extra-virgin olive oil, for drizzling
To serve: blanched flat and green beans

Steps:

  • Season mackerel to taste with sea salt and freshly ground black pepper. Heat half the olive oil in a large frying pan over medium-high heat, add butter and when foaming add mackerel and cook for 3-4 minutes on each side or until just cooked through. Remove from pan and set aside. Add remaining olive oil, garlic and onion to pan and cook, stirring continuously, for 5 minutes or until just soft, then add passata, vinegar, raisins, capers, olives, bay leaves and sugar and cook for 5 minutes or until reduced by two-thirds. Add marjoram, celery and mackerel and cook for 1 minute to warm through and season to taste.
  • Meanwhile, heat enough vegetable oil in a separate frying pan over medium-high heat until oil starts to shimmer. Cook eggplant, in batches, turning occasionally, for 3-5 minutes or until golden. Drain on absorbent paper.
  • To serve, divide mackerel caponata between plates, top with eggplant, scatter with pine nuts, drizzle with extra-virgin olive oil and serve with beans to the side.

Mackerel is a recent discovery for me. I never knew how to cook it but I learned quickly once I discovered how cheap it is and how good it is for you! This is a really simple way to cook it.

4 (100 g) mackerel fillets
2 garlic cloves, minced
1/2 lemon, juice of
salt
pepper

Steps:

  • Lay the fillets of fish on a baking tray, which has been covered with foil for easy clean up.
  • Sprinkle with salt and leave for 5-10 minutes. This helps give the flesh a firmer texture but you may omit this step if you prefer.
  • Meanwhile, preheat the oven grill.
  • Mix together the garlic, lemon and some freshly ground black pepper.
  • Pour over the mackerel and then put in the oven to grill for about 5 minutes.
  • If you have some fresh herbs like parsley to hand you could finely chop them and sprinkle them over the fish at this point.
  • Serve with your favourite veggies.

GRILLED MACKEREL WITH TOASTED GARLIC BUTTER

2 medium mackerel, filleted, skin on
5 garlic cloves, smashed
4 ounces butter
Salt
Pepper
1 or 2 limes

Steps:

  • Preheat an outdoor grill to medium heat and oil the grates with a brush or towel.
  • In a small saucepan, melt the butter and add the smashed garlic.
  • Make 3 deep cuts on each side of the fish. Season fillets generously with salt and pepper. Place flesh side-down and cook for 2 to 3 minutes. Flip fish over and cook for an additional 2 to 3 minutes. Remove from grill and brush with some of the garlic butter (about 2 tablespoons).
  • Squeeze 1/2 of a lime over each fillet and serve immediately.

ROASTED MACKEREL WITH GARLIC AND PAPRIKA

2 garlic cloves, peeled
2 tsp paprika
1 tsp sea salt, plus more to taste
Olive oil
8 mackerel fillets, skin on
1 pound new potatoes
2-3 scallions, trimmed and thinly sliced
For the vinaigrette
Pinch of saffron
1 Tbsp white wine vinegar
1 tsp Dijon mustard
1/4 cup extra virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • 1. Preheat the oven to 400°F.
  • 2. Put the garlic and paprika into a mortar, add the salt, and pound to a smooth paste. Add a few drops of olive oil, then rub the flesh side of the mackerel fillets with the paste and set aside.
  • 3. Make the vinaigrette. Put all the ingredients into a small bowl and whisk together with a fork. Season with salt and pepper to taste.
  • 4. Line a baking sheet with parchment paper and brush lightly with olive oil. Lay the mackerel fillets skin side up on the paper and season the skin with sea salt. Roast for 8-10 minutes until the skin is crisp and the fish is cooked through. Remove from the oven and leave to rest.
  • 5. Meanwhile, boil the potatoes in a large pan of salted water for about 15 minutes until tender, then drain. Return to the pan with 1 tablespoon of olive oil. Crush lightly with the back of a fork, then add the scallions and stir to combine. Season with salt, then add a couple of tablespoons of the vinaigrette.
  • 6. Serve the crushed potatoes topped with the mackerel and a drizzle of the remaining vinaigrette.

GRILLED MACKEREL WITH SOY, LIME & GINGER

300g mackerel
100g jasmine rice
4 spring onions , sliced
1 red pepper , deseeded and diced
1 tbsp low-sodium soy sauce
juice 1 lime
small piece fresh ginger , grated
1 garlic clove , crushed
2 tbsp honey

Steps:

  • To make the marinade, mix all the ingredients together and pour over the mackerel. Cover and chill for 30 mins.
  • Heat grill and put the mackerel, skin-side up, on a baking sheet lined with foil. Grill for 5 mins, then turn and baste with remaining marinade. Grill for 5 mins more.
  • Cook the rice following pack instructions, then drain and toss with the spring onions and pepper. Serve with the mackerel.

3 tbsp extra-virgin olive oil
4 small whole mackerel , gutted and cleaned
1 large red chilli , deseeded and finely chopped
1 small garlic clove , finely chopped
small knob fresh root ginger , finely chopped
2 tsp honey
finely grated zest and juice of 2 lime
1 tsp sesame oil
1 tsp Thai fish sauce

Steps:

  • Light the barbecue and allow the flames to die down until the ashes have gone white with heat. Make the drizzle by whisking 2 tbsp olive oil and all the other ingredients together in a small bowl, adjusting the ratio of honey and lime to make a sharp sweetness. Season to taste.
  • Score each side of the mackerel about 6 times, not quite through to the bone. Brush the fish with the remaining oil and season lightly. Barbecue the mackerel for 5-6 mins on each side until the fish is charred and the eyes have turned white. Spoon the drizzle over the fish and allow to stand for 2-3 mins before serving.
