BANANA MUFFINS
This recipe is the best I've found for Banana muffins just watch not to overbake them. They come out nice and moist. they also freeze well for later use. I have put different additions in them over the years instead of walnuts, like peanut butter chips or chocolate chips, pecans and peanuts.

Steps:
- In large bowl mix flour baking soda and powder and salt.
- set aside.
- Beat together in large bowl- butter & sugar until fluffy.
- Add eggs one at time beat well after each.
- next add mashed banana beat well.
- Next alternately add buttermilk and flour mixture mix only until dry ingredients are moist.
- Do not over mix.
- Batter will be slightly lumpy.
- stir in vanilla and nuts.
- Line (or grease) muffin pans.
- Fill apx.
- 1/2 to 2/3 full.
- Bake in 400 degree pre-heated oven for 15-18 minutes.

Steps:
- Preheat oven to 350°.
- To prepare cupcakes, combine 1/4 cup granulated sugar and banana; set aside.
- Beat 1/2 cup granulated sugar, butter, and 1 teaspoon vanilla at medium speed of a mixer until well-blended (about 3 minutes).
- Add eggs, 1 at a time, beating well after each addition. Add banana mixture to sugar mixture, beating well.
- Lightly spoon flour into a dry measuring cup; level with a knife.
- Combine flour, baking soda, salt, and nutmeg in a bowl, stirring well with a whisk.
- Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture; mix after each addition.
- Spoon batter into 12 muffin cups lined with paper liners.
- Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack.

LULLABY MUFFINS
This came from a free sleep kit I got from Tylenol PM. Under the recipe it said "between the bananas, whole wheat and honeyed touch of sweetness, these muffins are practically an edible lullaby." And for someone having trouble sleeping they've been a welcome addition to my nightly sleep tea or glass of milk....Night Night zzzzzzzzzzzzzzzz I did add some cinnamon and a light sprinkle of chopped walnuts on top.

These tender banana muffins are crowned with a delightfully crunchy cinnamon crumb topping that lends to their addictive nature. The easy recipe, which doesn't require any special equipment - just a couple of bowls - was adapted from one originally developed by a 9-year old named Meghan Cwikla. With it, she won the junior division at the 1997 State Baking Contest at the Connecticut State Fair.

Steps:
- For the topping, in a medium bowl, mix flour, sugar and cinnamon. Add butter or margarine and mix with a fork or pastry cutter until crumbly. Put aside while preparing muffin batter.
- For the muffins, in large bowl, combine dry ingredients. Set aside.
- In another bowl, combine mashed bananas, sugar, slightly beaten egg and melted butter or margarine. Mix well. Stir into dry ingredients just until moistened.
- Fill greased muffin cups two-thirds full. (Do not use paper muffin cups!) Using hands, arrange coarse, pea-sized crumbs over muffin batter.
- Bake at 375 degrees for 18 to 20 minutes or until muffins test done with a cake tester. Cool in pan 10 minutes before removing to a wire rack.

- Heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases. Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, vanilla extract, eggs, mashed bananas and buttermilk.
- Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix. Scatter in the chopped pecans, if using, then spoon the mixture into the muffin cases. Top with pecan halves, then bake for 20-25 mins, until golden brown. Cool on a wire rack.

- Heat a nonstick griddle over a low to medium flame, and place the bread slice on it.
- Let it just lie there for about a minute (you can slice the banana now!).
- Now carefully cover the bread with the sliced banana discs, overlapping if necessary, and sprinkle the cinnamon over this.
- Using a flat spoon or ladle, gently press the bread slice with with back-to-front movements (you will see part of the banana slices sinking into the bread and the cinnamon merging with the bananas).
- When the bottom of the bread slice is well browned, remove from the griddle and eat immediately!
