1/2 cup freshly grated parmesan cheese
3 tablespoons butter, softened
1/8 teaspoon cayenne pepper
2 tablespoons thinly sliced green onions
3 tablespoons mayonnaise
1 teaspoon grated lemon, rind of
1 1/2 lbs sole fillets
2 tablespoons lemon juice

Steps:

  • Heat broiler.
  • In medium bowl, stir together all ingredients except fish and lemon juice.
  • Place sole fillets on broiler pan; sprinkle with lemon juice.
  • Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes).
  • Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).

I am putting here for future use. ***For the reviewer who wanted advice on how to prevent fish from sticking: try a Teflon or other non-stick pan and use plastic spatulas to move the fish around gently to avoid breaking the fish. Hope this helps.

3 eggs, beaten
1 1/2 cups parmesan cheese, grated
3 tablespoons vegetable oil

  • Dip fish in the eggs and then coat in the parmesan.

4 skinless flounder-fillets
Salt and pepper, to taste
Flour, for dredging fish
2 tablespoons vegetable oil
3 tablespoons butter, divided
1 lemon, juiced
1 small bottle capers

Steps:

  • Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
  • Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.

1¾ pounds fingerling potatoes
Salt and pepper
4 whole flounder
1 cup all-purpose or rye flour
9 tablespoons butter
¼ cup minced fresh parsley

Steps:

  • Boil the potatoes in a large pot of salted water until tender, then drain. Once they are cool enough to handle, peel them.
  • Rinse the fish in cold water, then coat each one in the flour, patting off the excess. Melt 5 tablespoons of the butter in a skillet and pan-fry the fish for 5 minutes on each side, or until crisp and golden. Keep the cooked fish warm while you cook the remainder.
  • Melt the remaining butter in a casserole. Add the peeled potatoes and let them sauté a little before adding the parsley. Season with salt and pepper. Serve immediately with the potatoes, sliced lemon, and dill sprigs.

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking dish.

This recipe I found in Food and Wine magazine. I have tweaked some of the ingredients to suit my family's taste. It is a lovely quick way to serve flounder. You may also substitute any type of white fish as well. It comes out wonderful.

4 flounder fillets, approx 2 lbs
1 garlic clove, minced
3/4 cup parmesan cheese, grated fine
1/2 cup plain breadcrumbs
1/4 teaspoon basil, minced
1/4 teaspoon oregano, minced
1/4 teaspoon thyme, minced
1 teaspoon parsley, minced
4 tablespoons butter, melt
2 tablespoons olive oil

Steps:

  • Preheat oven at 425°F.
  • Lay out fish fillets, in single layer, in greased baking dish. Set aside.
  • In a bowl combine garlic, Parmesan, breadcrumbs, basil, oregano and parsley. Mix together well.
  • Add melted butter and olive oil to crumb mixture and combine well. It will become mealy.
  • Sprinkle crumbs all on top of each fish fillet.
  • Bake for 12-15 minutes, until fish is cooked and topping is golden in color.
  • Remove from oven and let set for 5 minutes.
  • Serve.

This is a pretty basic recipe but it is just delicious! You can use lemon pepper in place of black pepper.

8 sole fillets
1/2 cup flour
1/2 teaspoon seasoning salt (or use white salt, or to taste)
1/4 teaspoon black pepper (or to taste)
7 tablespoons butter
1/4 cup fresh lemon juice
2 tablespoons chopped fresh parsley

Steps:

  • Mix the flour with seasoned salt and pepper in a shallow dish.
  • Dredge the fish fillets in the flour mixture.
  • Heat a large skillet over high heat.
  • Add in about 3 tablespoons butter to the hot skillet.
  • Saute the fillets in 2 batches, cooking on each side (on high heat about 2 minutes per side) or until just cooked through; transfer the fish to a plate to keep warm.
  • Add in the remaining 4 tablespoons butter and cook until golden in colour; add in lemon juice, bring to a boil and add in the parsley.
  • Season the sauce with salt and pepper.
  • Pour the warm sauce over the fish.
  • Serve immediately.

buttermilk
all-purpose flour
lemon wedge

Steps:

  • Heat butter and oil in a large skillet until hot.
  • Dip the fish first in buttermilk, then in the flour, shaking to remove excess flour.
  • Sauté fish for 2-3 minutes per side, depending on thickness of fish.
  • Remove fish from the pan, drain on paper toweling or a paper bag.
  • Serve with lemon wedges.
  • Variations:.
  • With Browned Butter and Almonds: After the fish is cooked through, place on a hot serving dish and keep warm. Clean out the pan and add about 3 TBSP butter. Cook the butter over medium heat until it is lightly browned, adding 2 TBSP slivered almonds just as the color of the butter is turning. Pour the browned butter and almonds over the fish.
  • With Herbs and Butter: Follow directions above, but adding chopped chives and parsley (or chopped sweet marjoram or chirvil) to the butter. Sauté the herbs with the butter for 30 seconds. Pour the herb butter over the fish before serving.

8 small fillets of sole, flounder or fluke, about 1 1/2 pounds
1 egg
Salt and freshly ground pepper to taste
3 tablespoons water
1 tablespoon plus 1/3 cup peanut, vegetable or corn oil
1/2 cup flour
3 cups fresh bread crumbs
3 tablespoons butter
Juice of 1 lemon

Steps:

  • Put the fillets on a flat surface. There may be a small bone line running partly down the center of each fillet. If so, cut on both sides and discard it.
  • Beat the egg, salt, pepper, water and one tablespoon of oil in a flat dish.
  • Put the flour in a flat dish and toss the fillets in it. Shake off excess.
  • Put bread crumbs in a flat dish.
  • Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.
  • Heat the remaining one-third cup of oil in a heavy skillet and add enough breaded fillets to make one layer without crowding. Cook until golden brown on one side, about one and one-half to two minutes. Turn and cook about one and one-half minutes on the second side. The cooking times will depend on the thickness of the fish. It may be necessary to add more oil if it disappears. As the fillets are cooked transfer them to a warm serving platter. Continue cooking until all the fillets are done.
  • Pour off the oil from the skillet and wipe it out with paper towels.
  • Put the butter in the skillet and swirl it around over high heat until it starts to foam. Continue cooking until it starts to become hazelnut brown. Pour this over the fish. Sprinkle the fish with the lemon juice and serve.
