This light, crisp coleslaw for pulled pork is crunchy, slightly sweet, but not too creamy. Best enjoyed after at least 1 hour, but holds up well for days! GF, Vegetarian

14 oz bagged coleslaw mix
½ medium red onion (thinly sliced)
¾ cup mayonnaise
3 Tbsp red wine vinegar
2 Tbsp granulated sugar
½ tsp Kosher salt
pinch of freshly ground black pepper

Steps:

  • Combine in a bowl. Place bagged coleslaw mix in a large bowl, then add ½ a thinly sliced red onion, ¾ cup mayonnaise, 3 Tbsp red wine vinegar, 2 Tbsp granulated sugar, ½ tsp Kosher salt, and a couple pinches of black pepper. Use tongs to thoroughly toss.
  • Refrigerate until needed, at least 1 hour (though 2 or 3 hours is better).

Number Of Ingredients 7

1 large pork shoulder butt/5 to 7 pounds
1 large onion,cut in four
3 clove(s) garlic
8 ounce(s) dry rub
1 cup(s) chicken stock
4 tablespoon(s) canola oil
1 tablespoon(s) liquid smoke flavoring

Steps:

  • Pat dry the pork butt,rub generously with the dry rub.* (See recipe at bottom for dry rub*) Wrap the pork butt in cellophane and refrigerate overnight.(The longer the better!)
  • Heat a large pan or pot(big enough to hold the pork butt)add the canola oil. Place the pork but fat side down,brown on all sides,4-5 minutes per side.
  • Place the pork butt in your slow cooker,add the onion and garlic,liquid smoke,chicken stock. Set it for the appropriate time and walk away!
  • After the butt has finished cooking,remove the fat cap,then using two forks pull the toast apart to shred it into the juices in the slow cooker. Add your favorite barbecue sauce,spoon on toasted potato rolls and top with the vinaigrette cole slaw. Serve with pickles and potato salad if you like or corn on the cob is nice too! Enjoy!
  • Vinegar Coleslaw: 1-small head of green cabbage shredded 1/2 red bell pepper & 1/2 green bell pepper sliced thin 1-small carrot shredded 1/2 cup red vinegar 1/2 cup rice vinegar 3- tbsp. sugar 1- tsp.salt 1/2 tsp. pepper 1/2 of a medium minced sweet onion 1- tsp. dry oregano 1-teaspoon whole grain mustard Mix well and refrigerate over night before using.
  • Ed's Dry Rub: 1/2 cup salt 1/4 cup Hungarian paprika 2-tablespoons each: garlic powder onion powder adobo powder white pepper dry oregano One tablespoon each: cayenne pepper black pepper Mix well and store in zip-lock baggie

Slow-Cooker BBQ Pulled Pork Sliders with Slaw image

2 teaspoons smoked paprika
2 teaspoons kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
One 4-pound boneless pork shoulder, trimmed of excess fat
1 tablespoon olive oil
1 yellow onion, thinly sliced
3/4 cup chili sauce
1/2 cup apple cider vinegar
2 tablespoons dark brown sugar (if unavailable, substitute light brown sugar)
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 teaspoons sugar
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups shredded cabbage (about 1/3 head)
2 carrots, grated
16 slider buns or Hawaiian sweet rolls

Steps:

  • For the BBQ pork: Whisk together the smoked paprika, salt, garlic powder and onion powder in a large bowl. Add the pork shoulder and turn to coat.
  • Heat the oil in a large saute pan over low heat and cook the pork, turning occasionally, until all sides are golden, 8 to 10 minutes.
  • Remove the pork to a plate. Combine the onions with the chili sauce, vinegar, brown sugar and 1 cup water in a slow cooker and whisk together. Add the pork shoulder, cover and cook on low until the pork is hot and cooked through, 8 to 10 hours.
  • Remove the pork to a cutting board and set aside. Pour the liquid into a medium saucepan. Bring to a boil and cook over high heat until reduced by half or the sauce is thick, 8 to 10 minutes.
  • Meanwhile, shred the pork with 2 forks or chop into pieces. Put back in the slow cooker and top with the reduced sauce, to taste.
  • For the slaw: Whisk together the mayonnaise, mustard, vinegar, sugar, salt and pepper in a large bowl. Add the cabbage and carrots and toss until coated.
  • To serve, place the pulled pork on the bottom buns, top with the slaw, then close the sliders.

1 cup white vinegar

Steps:

  • Combine cabbage and red onion in a large bowl.
  • Stir sugar, vinegar, vegetable oil, salt, dry mustard, and celery seed together in a saucepan. Bring to a boil; remove from heat.
  • Pour sugar and vinegar mixture over the cabbage and red onion. Toss mixture. Let cool, about 10 minutes. Refrigerate for at least 1 hour.

1 carrot, cut into strips using a vegetable peeler
1 tablespoon cider vinegar
1 tablespoon extra-virgin olive oil
Coarse salt and ground pepper
3/4 cup homemade or store-bought barbecue sauce
2 cups Easy Pork Shoulder
4 hamburger buns

Steps:

  • In a bowl, combine cabbage, carrot, vinegar, and oil; season with salt and pepper. Let coleslaw stand 5 minutes. In a small saucepan, combine barbecue sauce and pork. Cook over medium-high until warmed through, about 5 minutes. Serve pork on buns with coleslaw.

3 tablespoons salt
2 tablespoons pepper
1 tablespoon sweet paprika
1 (5 lb) boneless pork shoulder
2 tablespoons vegetable oil
1/3 cup apple cider vinegar
1/3 cup distilled white vinegar
1 1/2 teaspoons sugar
1 teaspoon hot pepper sauce
8 hamburger buns, split
1/2 cup apple cider vinegar
1/2 cup distilled white vinegar
2 tablespoons sugar
2 teaspoons hot pepper sauce
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1/8 teaspoon pepper
1 (2 3/4 lb) green cabbage, cored and shredded

Steps:

  • Preheat the oven to 300 degrees. Mix together the salt, pepper, and paprika; sprinkle all over the pork and rub inches
  • In a large skillet or Dutch oven, heat the oil over medium-high heat. Add the pork and cook, turning occasionally, until browned, 8 to 10 minutes. Transfer to a 24-inch-long sheet of heavy duty foil and double wrap the pork.
  • Place the pork, skin side up, in a 9-by-13-inch baking dish; roast until tender, about 4 1/2 hours. Remove from the oven and carefully unwrap the top of the pork, revealing the skin. Increase the heat to 450 degrees and roast for 20 minutes more.
  • Transfer the roast to a large bowl, along with any juices. Using two forks, shred the pork. Add the vinegars, sugar, and hot sauce; toss. Serve on the hamburger buns, topped with coleslaw (recipe follows), if using.
  • For the coleslaw: In a medium bowl, whisk together the vinegars, sugar, hot sauce, crushed red pepper, salt, and pepper. Add the cabbage and toss. Let stand for 30 minutes, then toss and serve.
