Bursting with blueberries, this low sugar muffin carries a hint of lemon flavor from the lemon yogurt in the batter.

2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 cup blueberries, do not thaw if frozen
1 teaspoon finely grated lemon peel
1 large egg
3 tablespoons canola oil
1/2 cup sugar substitute or sugar
1 cup low fat lemon yogurt
6 tablespoons 1% milk
1 1/2 teaspoon vanilla extract
1 teaspoon sugar, optional

Steps:

  • Preheat oven to 375 degrees F. Spray 12 muffin cups or liners in muffin tins with nonstick cooking spray. Measure flour, baking powder and baking soda into a large bowl. Stir with a whisk. Add blueberries and lemon peel. Set aside. In a small bowl, whisk egg until frothy. Add oil, sugar substitute or sugar, yogurt, milk and vanilla. Whisk until smooth. Make a well in the dry ingredients and pour in the yogurt mixture. Using a large spoon or spatula, stir just until all the flour is moistened. Do not over mix the muffin batter. Spoon batter into muffin cups filling 2/3 full. If desired, sprinkle lightly with sugar. Bake for 18 to 20 minutes or until a toothpick comes out clean when placed into the center of the muffin. Remove and place on wire rack to cool.

  • Fill 3/4 full.
  • Bake in 400 F.

This recipe uses regular bagged Splenda and regular sugar. If you use Splenda for baking, just use 3/4 cup Splenda for baking in the cake and 1/2 cup Splenda for baking in the topping.

1/2 cup sugar
1/4 cup Splenda granular
salt, dash
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup blueberries
1/4 cup sugar
1/4 cup Splenda granular
1/3 cup flour
1/4 cup butter
1 1/2 teaspoons cinnamon

Steps:

  • Mix oil, egg, and milk together, stirring well.
  • Mix flour, 1/2 cup sugar,1/4 cup splenda, salt, and baking powder together in a bowl.
  • In a third bowl use a fork to cut together the 1/4 cup sugar, 1/4 cup Splenda, 1/4 cup butter, and the cinnamon.
  • Make a well in flour, sugar, splenda, salt and baking powder mix and pour in the oil, egg and milk.
  • Stir till lumps are gone; fold in blueberries (I used 2 cups).
  • Spread in oiled 8x8 cake pan or in cupcake papers.
  • Sprinkle the third mix over all.
  • Bake at 400 degrees for 20-25 minutes for cake, or 15-20 minutes for cupcakes,.

1 cup soy flour
1/2 cup sugar substitute (recommended: Splenda)
1 teaspoon baking powder
2 eggs
1/2 cup heavy cream
1/3 cup club soda
1/2 cup blueberries (if not sweet, sprinkle with 1 tablespoon of sugar substitute)

Steps:

  • Preheat oven to 375 degrees F.
  • Spray a 6-cup muffin tin with vegetable oil cooking spray. Evenly sprinkle the pan with the wheat bran and soy flour mix, being careful to coat the sides of the cups also; this will prevent sticking.
  • In a bowl using a wire whisk, mix all the remaining ingredients, except the blueberries, until well blended. Then fold in the blueberries and fill the 6 muffins cups evenly with the batter. Place on the center rack of the oven and bake for 20 to 25 minutes, or until the tops turn golden brown and a toothpick stuck in the center comes out clean. Remove from oven and let cool before refrigerating. Serve warm with butter or cold with cream cheese.
