CLASSIC MEATLOAF

Classic Meatloaf image

The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

Provided by Chef John

Categories     Main Dish Recipes     Meatloaf Recipes     Beef Meatloaf Recipes

Time 1h15m

Yield 10

Number Of Ingredients 19

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

LOW SALT MEATLOAF

Low Salt Meatloaf image

This is a great low salt recipe. It has a hearty beef flavor with a twist. This is moist yet fairly dense meatloaf which is great the next day for sandwiches.

Provided by Quickdrawmatty

Categories     Meat

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 16

1 1/2 lbs extra lean ground beef
2 eggs
2 pieces bread, toasted and finely cubed (a no salt added brand)
2 tablespoons minced onions
1 tablespoon garlic powder
1 tablespoon cilantro
2 (4 g) packets sodium-free beef bouillon (herb ox)
1 teaspoon pepper
2 tablespoons hot sauce (salsa brava brand low sodium) (optional)
1 tablespoon Worcestershire sauce
1/2 teaspoon salt substitute
1 teaspoon celery seed
1 (8 ounce) can no-salt-added tomato sauce (for topping)
1 teaspoon dry mustard (for topping)
1/2 teaspoon salt substitute (for topping)
1 tablespoon brown sugar (for topping)

Steps:

  • Preheat oven to 375 deg.
  • mix topping ingredients and set aside.
  • Beat the eggs and place in large bowl.
  • Add remaining ingredients and mix thoroughly.
  • Form into loaf shape of your choice and place into small lightly greased pan. I just used a 4x8 pan that was about 4 inches deep. Bread pan would work fine.
  • Cover with foil and bake for 45 minute.
  • Remove foil and coat top with the topping mix and bake for another 15-20 minute.
  • All that's left now is to decide what to have with it. I like baked sweet potatos or garlic mashed potatos. If you like bell peppers these can be added for a great little south western taste. Using fresh onion instead of minced will make this a bit more moist but it is a preference thing. Enjoy!

EASY MEATLOAF RECIPE

Easy meatloaf recipe image

Serve this easy meatloaf made with pork, prosciutto and parmesan hot or cold. It's ideal for supper, picnics or to pack in lunchboxes

Provided by Mary Cadogan

Categories     Buffet, Lunch, Main course, Supper

Time 1h20m

Yield Cuts into 8-10 slices

Number Of Ingredients 9

2 slices fresh white bread, crusts removed
500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
big handful of parsley
1 tbsp fresh chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
  • Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.
  • Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.
  • Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
  • Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

  • Beat 2 large eggs and milk in a large mixing bowl. Finely chop onions until you have 1/2 cup minced onions then add to the bowl. Add 2 pounds ground beef.
  • In a separate bowl mix all the dry ingredients and then shake over meat. This will help reduce the amount of mixing required. Over mixing leads to a dense loaf.
  • Add the rest of the ingredients and mix to combine. Transfer to a 9x5-inch loaf pan and pat down to a slightly domed top by pushing the edges in.
