1 recipe basic pizza dough, recipe follows
Cornmeal, for dusting
4 tablespoons extra-virgin olive oil
2 cups your favorite tomato sauce
1/2 cup fresh basil leaves
1 cup freshly grated Parmigiano-Reggiano
1-pound mozzarella, sliced 1/4-inch thick
1 package active dry yeast
2 teaspoons sugar
1 cup warm water (110 degrees F)
1/4 cup lard or vegetable shortening
3 to 4 cups all-purpose flour
2 teaspoons salt
Olive oil

Steps:

  • Preheat oven to 500 degrees F. If you have one, place a pizza stone on the bottom rack of the oven.
  • Divide the dough in half and roll into a 12-inch circle, about 1/2-inch thick.
  • Dust pizza peel or baking sheet with cornmeal. Place rolled out dough on peel. Brush pizza dough with 2 tablespoons olive oil. Spread 1 cup tomato sauce evenly over dough, leaving a 1/2-inch border along the edges. Sprinkle 1/4 cup basil leaves on top of sauce and then top with 1/2 cup Parmigiano-Reggiano. Finally, top with 1/2-pound mozzarella slices. Bake for about 8 to 10 minutes, or until cheese is bubbling and the edges are golden brown. Repeat with remaining ingredients to make 2 pizzas.
  • In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook. Remove the dough from the bowl. Grease the bowl with olive oil and place the dough back in the bowl. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. The dough is ready to be shaped.

Steps:

  • Spray pizza pan with non stick spray.
  • Blend cheeses and spread evenly over pan.
  • Sprinkle pizza seasoning over mixture.
  • Cook in 325 degree oven for 10 minutes until cheese is melted and lightly browned.
  • Remove from oven and place in freezer for 30 minutes.
  • Remove from freezer and top with your favorite pizza sauce and toppings. Cook at 350 degrees for 10 minutes or until cheese is melted.

1/4 teaspoon sugar
3/4 cup hot water
1 3/4 cups flour
1/2 teaspoon salt
1 (14 ounce) jar pizza sauce
pepperoni
precooked bacon
tomatoes, sliced
green pepper
mozzarella cheese, shredded
chopped garlic

Steps:

  • Dissolve yeast and sugar in hot water.
  • Let sit for 8 minutes.
  • Meanwhile mix flour and salt.
  • Pour yeast mixture over flour mixture and mix well with a heavy spoon.
  • Turn onto floured surface and knead for 2 minutes.
  • Spread into a 12-14" circle.
  • (I do this directly onto a pizza stone with a marble rolling pin).
  • If you roll it out on a counter top, transfer to a greased pizza pan, stretching to edges.
  • Cover with sauce and desired topping.
  • Bake at 500 degrees for 8-12 minutes or until edges are golden.

1 (28 ounce) can whole canned tomatoes, drained and liquid discarded
1 tablespoon extra virgin olive oil
1 teaspoon red wine vinegar
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon dried oregano
1/4 teaspoon black pepper
1 ounce parmesan cheese, finely grated
8 ounces whole milk mozzarella, shredded

Steps:

  • In food processor fitted with metal blade, process flour, sugar and yeast until combined, about 2 seconds. With machine running, slowly add water through feed tube; process until dough is just combined and no dry flour remains, about 10 seconds. Let dough stand for 10 minutes.
  • Add oil and salt to dough and process until dough forms a satiny, sticky ball that clears sides of workbowl, 30-60 seconds. Remove dough and knead briefly on lightly oiled countertop until smooth, about 1 minutes. Shape dough into tight ball and place in large lightly oiled bowl. Cover tightly with plastic wrap and refrigerate for at least 24 hours and up to 3 days.
  • Process tomatoes, oil, vinegar, garlic, salt, oregano and pepper in food processor until smooth, about 30 seconds. Transfer to medium bowl and refrigerate until ready to use.
  • One hour before baking pizza, adjust rack in oven to second highest position, about 4-5 inches below broiler. Set pizza stone on rack and heat oven to 500 degrees. Remove dough from refrigerator and divide in half. Shape each half into smooth, tight ball. Place on lightly oiled baking sheet, spacing them at least 3" apart. Cover loosely with plastic wrap coated with non-stick spray; let stand for 1 hour.

This is the pizza I make the most often at home. It has a thin pizza crust base, which we all prefer, and all our favourite toppings! Try to use high quality Chorizo sausage for this; also, fresh goat's cheese without a rind is the best. When I have time, I like to caramelise the onions first by frying them in a couple of teaspoons of olive oil and a teaspoon of balsamic vinegar - try it as an option. It also works well with ready made onion confit/onion jam as a topping. The sauce used and shown in my photoes, is Leggy Peggy's wonderful Recipe #210246.

7 g dry yeast
1/2 teaspoon sugar
3/4 cup of lukewarm water
1 3/4 cups of unbleached strong plain bread flour
1/2 teaspoon salt
4 ounces chorizo sausage, sliced thinly
5 ounces goat's cheese, sliced thinly
1 red onion, peeled and sliced thinly
1 tomatoes, thinly sliced
2 -4 tablespoons tomato paste or 2 -4 tablespoons tomato sauce, of your choice
2 teaspoons capers (optional)
2 sun-dried tomatoes packed in oil, chopped finely (optional)
2 ounces grated mozzarella cheese (optional)
salt
fresh ground black pepper

Steps:

  • Combine the dry yeast, 1/2 teaspoon of sugar and 3/4 cups of lukewarm water. Mix a little and let sit for 6-8 minutes.
  • Combine 1 3/4 cups of unbleached strong plain bread flour with 1/2 teaspoon of salt in a bowl or food processor.
  • Pour the water combination into the bowl (or food processor) and mix until ready to knead (around 30 second in a food processor). If using a bowl, mix with a spoon, and your hands until you have a neat ball.
  • Prepare a lightly sprinkled surface with flour. Turn out dough and knead for around 2-3 minutes. Lightly cover your finger tips with flour if the mixture is a little sticky.
  • Roll out by hand for a 12'' base.
  • Place in 12'' lightly oiled oven pan. Press out dough to form a slight lip.
  • Spread your tomato puree or tomato sauce on top of the pizza dough. Then carefully arrange all the other toppings on top of the paste/sauce, putting the goat's cheese on last. (Or the mozzarella cheese if using.).
  • (Note - if you wish to caramelise your onions first, fry them in a couple of teaspoons of olive oil and a teaspoon of balsamic vinegar until glazed, soft and slightly sticky. Ready made Onion Confit or Onion Jam also works very well.).
  • Cook in a preheated over 250°C/495°F for 8-12 minutes (times may vary based on different ovens. Fan assisted oven will be quicker!).
  • Remove from oven, slice and share with your favourite friends and/or family members, keeping an extra slice for yourself!

1/4 teaspoon granulated sugar
1/3 cup warm water
1/3 cup boiling water (you can infuse water with herbs)
1 3/4 cups all-purpose flour
1/2 teaspoon salt
pizza sauce, of your choice, as needed
shredded cheese, of your choice, as needed

Steps:

  • Dissolve yeast and sugar in water; allow to rest for 8 minutes.
  • In a separate bowl, combine flour and salt.
  • Pour yeast mixture over flour mixture and mix well with a heavy spoon.
  • Turn dough onto a floured surface and knead for 2 minutes.
  • Working from the edges to the center, press dough into a 12" circle.
  • Place dough on a lightly greased pizza pan and stretch dough to edges.
  • brush some olive oil over the dough.
  • Spread tomato paste over crust and top with mozarella cheese or cheese mix (romano, parmesan, mozarella).
  • Suggested toppings: marinated artichokes, red and green peppers, chili peppers, mushrooms, sundried tomatoes, FRESH BASIL, ham, pineapple, Italian sausage.
  • On the top I put parmesan, feta, and crumbled goat's cheese, whole leafs of spinach, and a sprinkling of crumbled dried red peppers.
  • Bake in a 500 degree oven for 8-12 minutes, or until edges are golden.
  • This may be frozen before cooking for the future. and given to a special person as a gift.

1 1/2 cups warm water (about 110˚ F)

1 small clove garlic, grated

Steps:

  • Make the dough: Sprinkle the yeast over the hot water in a small bowl. Let stand until dissolved and slightly foamy, 5 to 10 minutes.

  • Make the pizza: Preheat the oven to 500˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet in the lower third of the oven. Working on a lightly floured surface, cut the other ball of dough in half. Cup your hand around each piece and gently roll each into a small ball. Transfer 1 ball of dough to a lightly floured piece of parchment paper and roll into a thin 12-inch round with a rolling pin (keep the other ball of dough covered; this recipe makes 2 thin-crust pizzas). Top the dough with 1/4 cup pizza sauce and 2 tablespoons grated Parmesan cheese, going all the way to the edge.
  • Transfer the pizza (on the parchment) to the hot stone and bake until the crust is set, 4 to 5 minutes. Remove from the oven and top with 1 1/4 cups grated mozzarella, going all the way to the edge. Return the pizza to the stone, then slide out the parchment from under it. Bake until the crust is golden brown and the cheese is melted, about 10 minutes. Repeat to make another pizza.

⅓ cup ⅓ cup lukewarm water
⅓ cup ⅓ cup whole wheat flour

2 ½ tsp 2 ½ tsp. sugar
2 tsp 2 tsp. olive oil
1 ⅓ cup 1 ⅓ cups lukewarm water
Cornmeal for pizza paddle
3 Tbsp 3 tbsp. olive oil
2 clove 2 cloves garlic, chopped
14 oz 14 ounce can crushed tomatoes
1 tsp 1 tsp. chopped fresh oregano
1 tsp 1 tsp. coarse salt
Freshly cracked black pepper
6 6 fresh basil leaves, sliced
16 fillets 16 anchovy fillets, drained, rinsed, patted dry
½ tsp ½ tsp. salt
4 balls 4 balls buffalo mozzarella, sliced into ¼ inch thick rounds

Steps:

  • In a small bowl, bloom the yeast in the 1/3 cup lukewarm water until foamy, about 5 minutes.
  • Mix dry ingredients in a stand mixer fitted with a dough hook.
  • While mixer is running on low speed add the yeast mixture, the oil, and enough of the remaining 1 1/3 cups water to make the dough come together.
  • Knead on low speed for about 12 minutes until the dough is firm, smooth and elastic.
  • Remove dough from the bowl.
  • Divide dough into 4 and shape each piece into a ball.
  • Line a baking sheet with parchment paper.
  • Set dough balls onto baking sheet and cover with a damp cloth.
  • Let rise in a warm place for 1 hour and 45 minutes.
  • Heat the olive oil in a medium saucepan on medium-low heat.
  • Add the garlic and saute 2 minutes or until softened.
  • Add tomatoes and oregano and simmer for 15 minutes.
  • Season the sauce with salt and pepper.
  • Stir in the basil.
  • Set sauce aside.
  • Preheat oven to 500 degrees F.
  • Place pizza stone on bottom rack of oven when oven begins to preheat.
  • Using your hands, stretch and pull one dough ball into a 12-inch round.
  • Sprinkle some cornmeal onto a pizza paddle (if you don't have a paddle, you can sprinkle cornmeal on a baking sheet).
  • Place the pizza dough onto the paddle or baking sheet.
  • Spoon over tomato sauce and add toppings.
  • Transfer the pizza to the stone and bake for about 8 minutes or until topping is bubbly.
  • Repeat with other balls of dough.
