Low FODMAP Baked Creamy Parmesan Chicken image

Chicken breasts are topped with a mixture of mayonnaise, Parmesan cheese, and garlic-infused oil and baked in this Low FODMAP Creamy Parmesan Chicken.

4 boneless, skinless chicken breasts, pounded to an even thickness
1/3 cup light mayonnaise ((I use Hellmann's))
1/4 cup grated Parmesan cheese
1 teaspoon FODY Garlic Infused Oil
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Lightly grease a 13x9-inch baking pan.
  • Place chicken breasts in the prepared pan.
  • In a small bowl, stir together the mayonnaise, Parmesan cheese, garlic oil and pepper. Spread evenly over each chicken breast.
  • Bake for 35 to 40 minutes, or until golden brown and chicken is done.

1 teaspoon Oven Roasted Garlic Oil (optional, if tolerated)
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Lightly grease a 13x9-inch baking pan. Place chicken breasts in the prepared pan. In a small bowl, stir together the mayonnaise, Parmesan cheese, garlic oil and pepper. Spread evenly over each chicken breast. Bake for 35 to 40 minutes, or until golden brown and chicken is done.

  • Heat oven to 450 degrees. Place one chicken breast between two sheets of plastic wrap (or in a Ziploc bag) and pound them until they're 1/2" thick. Cut the chicken breast into two portions. Repeat with the second chicken breast.
  • Dredge each chicken breast in the flour, then the egg, and then the breadcrumbs. Make sure to pat down the breadcrumbs so they stick firmly.
  • Warm up the oil in a frying pan over medium heat. Fry each chicken breast until crispy (about 2 minutes per side), then transfer to a baking sheet lined with parchment paper. Top each chicken breast with half of the marinara sauce and a slice of mozzarella cheese. Bake for 15-20 minutes (until the chicken is 165 degrees at the center).
  • Toss your pasta with the remaining marinara sauce and place your chicken parmesan either on the pasta or to the side. Serve immediately.
