HEALTHY LOW CALORIE BROWNIES
Steps:
- In a microwavable safe bowl add the honey
- Microwave 30-45 sec (or until liquid-y)
- Now add in the unsweetened cocoa powder and mix until combined
- Set that bowl aside and get out a larger bowl for your dry ingredients
- Add all dry ingredients to the bowl and combine well
- Set that bowl aside and bring back your honey mixture
- Add the rest of your wet ingredients to the honey mixture and mix until smooth and chocolatey
- Now pour the wet ingredients into the dry and combine all of the ingredients until smooth
- In an 8x8 baking tray add your batter and bake at 350 degrees | 177 Celsius for around 25 minutes
- Cool in the tray for about 5 minutes and then transfer to a wire rack to finish cooling

RICH AND CHEWY LOW FAT BROWNIES
Amazingly rich and chewy, you would never know these are low fat. I have people asking me for this recipe whenever I make it. The applesauce is the secret ingredient in these delicious brownies! One suggestion I have to make them fudgier is to use a very high quality cocoa. I usually use Watkins or Epicure Selections and found a big difference from that and the kind you can buy in the store. It makes them a real dark chocolate in the middle and they are rich and chewy! This recipe also doubles well and will fit into a 9x13 pan.

Steps:
- Cream butter and sugar in a large bowl using a hand mixer. Add egg whites, applesauce and vanilla.
- Mix all other ingredients in a separate smaller bowl and add to the wet ingredients in the large bowl. Do NOT overmix!
- Spray 8x8 dish with PAM and bake at 350 degrees for 30-35 minutes. ENJOY!

Steps:
- Soak all of the grains for 30 minutes in enough water to cover them.
- Drain excess water off before using.
- Run the soaked garbanzo beans through the grater on your food processor.
- Remove to separate bowl.
- Saute onions until lightly browned and soft.
- Chop everything else in the food processor with the regular blade until pretty fine.
- Add spices, salt, flour, baking powder and pulse to mix.
- Dump ground garbanzo beans in and pulse until combined. You want this mixture fine, but not a mush.
- Stir in the finely shredded cheese and either form into patties or roll out between two pieces of wax paper.
- Cut rounds with a round cookie cutter (3- 3.5" diameter).
- Heat a (high sided) fry pan with 1/2 " of oil and gently slide 3-4 garden burgers in at a time. Brown quickly on both sides and drain on paper towels.
- Eat . . . or cool and freeze. Makes one dozen 2.5 oz garden burgers.

- Preheat oven to 350°F.
- Spray an 8 inch square baking dish with nonstick cooking spray.
- Dust with cocoa, shaking out excess.
- In a small saucepan, melt margarine on low heat.

LOW FAT Z TRIM BROWNIES
Lower fat, nondairy brownies that still taste good. I've been experimenting with Z trim. Some recipes work better than others, but this came out great. The kids ate it and didn't even notice. UPDATE - Z trim is no longer available to the public - only to food manufacturers. I have changed the recipe to use chia seed gel instead, but I can't change the name without messing up the entry.

Steps:
- Make chia gel by mixing the seeds into 1/2 cup water. Let sit at least 15 min, mixing occasionally. You can also make this in advance and refrigerate.
- Preheat oven to 375.
- Spray an 8 inch square pan with Pam.
- Melt chocolate and margarine in microwave in small bowl.
- Beat together the eggs, chia gel, sugar and vanilla until smooth.
- Add melted chocolate and stir.
- Add flour and stir just until blended.
- Pour into pan and bake for 35 minute.
- Cool and cut into squares.
